Background/Objectives: Conventional ketogenic diets, although effective for weight loss, often contain high total and saturated fat intake, which leads to increased low-density lipoprotein cholesterol (LDL-C). Thus, the Healthy Ketogenic Diet (HKD) was developed to address these concerns. It emphasizes calorie restriction, limiting net carbohydrate intake to 50 g per day, prioritizing unsaturated fats, and reducing saturated fat intake. However, adherence to the HKD remains a challenge in urban, time-constrained environments. Therefore, this pilot randomized controlled trial aimed to investigate the effects of Healthy Ketogenic Diet Ready-To-Eat (HKD-RTE) meals (provided for the first month only) versus HKD alone on weight loss and metabolic parameters among overweight adults. Methods: Multi-ethnic Asian adults (n = 50) with a body mass index (BMI) ≥ 27.5 kg/m2 were randomized into the HKD-RTE group (n = 24) and the HKD group (n = 26). Both groups followed the HKD for six months, with the HKD-RTE group receiving HKD-RTE meals during the first month. Five in-person workshops and mobile health coaching through the Nutritionist Buddy Keto app helped to facilitate dietary adherence. The primary outcome was the change in body weight at 6 months. Linear regression was performed on the change from baseline for each continuous outcome, adjusting for demographics and relevant covariates. Logistic regression was performed on binary weight loss ≥ 5%, adjusting for demographics and relevant covariates. Results: In the HKD group, participants’ adherence to the 50 g net carbohydrate target was 15 days, while that in the HKD-RTE group was 19 days over a period of 30 days. Participants’ adherence to calorie targets was 21 days in the HKD group and 23 days in the HKD-RTE. The average compliance with the HKD-RTE meals provided in the HKD-RTE group was 55%. The HKD-RTE group experienced a greater percentage weight loss at 1 month (−4.8 ± 3.0% vs. −1.8 ± 6.2%), although this was not statistically significant. This trend continued up to 6 months, with the HKD-RTE group showing a greater percentage weight reduction (−8.6 ± 6.8% vs. −3.9 ± 8.6%; p = 0.092). At 6 months, the HKD-RTE group had a greater reduction in total cholesterol (−0.54 ± 0.76 mmol/L vs. −0.05 ± 0.56 mmol/L; p = 0.283) and LDL-C (−0.43 ± 0.67 mmol/L vs. −0.03 ± 0.52 mmol/L; p = 0.374) compared to the HKD group. Additionally, the HKD-RTE group exhibited greater reductions in systolic blood pressure (−8.3 ± 9.7 mmHg vs. −5.3 ± 11.0 mmHg), diastolic blood pressure (−7.7 ± 8.8 mmHg vs. −2.0 ± 7.0 mmHg), and HbA1c (−0.3 ± 0.5% vs. −0.1 ± 0.4%) than the HKD group (not statistically significant for any). Conclusions: Both HKD-RTE and HKD led to weight loss and improved metabolic profiles. The HKD-RTE group tended to show more favorable outcomes. Short-term HKD-RTE meal provision may enhance initial weight loss, with sustained long-term effects. Full article

This study aimed to optimize the inoculation dosage and fermentation duration to enhance the protein content and reduce soluble oligosaccharides in soybean meal using Aspergillus oryzae and assessed its performance in dog food extrusion. A 3 × 5 factorial design was used to determine the optimal fermentation conditions. These conditions were applied to ferment soybean meal in bulk for nutritional analysis. Finally, the impact of fermentation on extrusion processing was assessed by formulating and extruding four diets: SBM (30% soybean meal), AMF (30% soybean meal with 1% Amaferm®A. oryzae biomass), FSBM (30% fermented soybean meal), and SPI (18% soy protein isolate). Diets were extruded with a single-screw extruder, and physical characteristics of kibbles, particle size distribution, and viscosity of raw mixes were analyzed. The optimal fermentation conditions were 1 × 104 spore/g substrate for 36 h, which increased the crude protein content by 4.63% DM, methionine and cysteine total content by 0.15% DM, and eliminated sucrose, while significantly reducing stachyose, raffinose, and verbascose (95.22, 87.37, and 41.82%, respectively). The extrusion results showed that FSBM had intermediate specific mechanical energy (SME), in-barrel moisture requirements, and sectional expansion index (198.7 kJ/kg, 28.2%, and 1.80, respectively) compared with SBM (83.7 kJ/kg, 34.5%, and 1.30, respectively) and SPI (305.3 kJ/kg, 33.5%, and 2.55, respectively). The FSBM also exhibited intermediate particle size distribution and the least raw mix viscosity. These findings demonstrate that A. oryzae fermentation enhances the nutrient profile of soybean meal while improving extrusion efficiency and kibble quality, supporting its potential use as a sustainable pet food ingredient. IMF (intramuscular fat, IMF), as a key index for evaluating meat quality traits (shear force and cooking loss, etc.), and its deposition process are jointly regulated by nutritional and genetic factors. In this study, we analyzed the molecular regulation mechanism of IMF deposition in the LD (longissimus dorsal muscle, LD) by dietary energy level in Pamir yaks. Meat quality assessment showed that the meat quality of the High-energy diet group (1.53 MJ/Kg, G) and the Medium-energy diet group (1.38 MJ/Kg, Z) were significantly improved compared with that of the Low-energy diet group (0.75 MJ/Kg, C), in which IMF content in the LD of yaks in G group was significantly higher (p < 0.05) compared with Z and C groups. Further analysis by combined transcriptomics and lipid metabolomics revealed that the differences in IMF deposition mainly originated from the metabolism of lipids, such as TG (triglycerides, TG), PS (phosphatidylserine, PS), and LPC (lysophosphatidylcholine, LPC), and were influenced by SFRP4, FABP4, GADD45A, PDGFRA, RBP4, and DGAT2 genes, further confirming the importance of lipid–gene interactions in IMF deposition. This study reveals the energy-dependent epigenetic regulatory mechanism of IMF deposition in plateau ruminants, which provides molecular targets for optimizing yak nutritional strategies and quality meat production, while having important theoretical and practical value for the sustainable development of livestock husbandry on the Tibetan Plateau. Watermeal (Wolffia globosa) is an emerging sustainable feed ingredient, valued for its rapid growth, high protein content, and rich nutrient profile, offering great potential to improve the efficiency and sustainability of edible cricket production systems through efficient resource use and reduced environmental impact. This study aimed to evaluate the effects of replacing commercial cricket feed with dried watermeal and to determine the optimal substitution level for the production performance of two-spotted crickets (Gryllus bimaculatus). Seven dietary treatments were tested, namely 0% (control; T1), 10% (T2), 25% (T3), 50% (T4), 75% (T5), 90% (T6), and 100% (T7). Crickets were reared for four weeks in an open system with 6 replicates per treatment, with each containing 120 nymphs. Body weight, feed intake, and survival rate were recorded weekly, and a production index was calculated at the end of the trial. Results showed average growth rates ranging from 7.40 to 28.20 mg/day, feed conversion ratios (FCR) between 1.03 and 1.68, survival rates of 29.28% to 69.73%, and production index values from 24.00 to 128.30. A significant decline in production efficiency (p < 0.05) was observed at substitution levels of 75% and above, with the 100% watermeal group showing the lowest production efficiency (p < 0.05), likely due to nutrient imbalances and indigestible compounds. Segmented regression analysis identified 36.7% as the optimal level of watermeal supplementation. In terms of body composition, crickets fed diets containing up to 50% watermeal (10%, 25%, and 50%) showed crude protein, crude fat, crude fiber, and ash contents comparable to those fed the commercial diet. This finding suggests that dried watermeal can replace up to 50% of the commercial cricket feed without negatively affecting growth performance, survival, or nutritional quality, with 36.7% identified as the optimal replacement level for maximizing production efficiency. The Effect of Ergothioneine Supplementation on Cognitive Function, Memory, and Sleep in Older Adults with Subjective Memory Complaints: A Randomized Placebo-Controlled Trial

Ergothioneine is a diet-derived antioxidant with emerging evidence of neuroprotective benefits, but no dose-ranging study has evaluated its effects in healthy older adults. In this 16-week randomized, double-blind, placebo-controlled trial, 147 adults aged 55–79 with subjective memory complaints received ergothioneine (10 mg or 25 mg/day ErgoActive®) or placebo. The primary outcome was the change in composite memory (CNS Vital Signs). Secondary outcomes included other cognitive domains, subjective memory and sleep quality, and blood biomarkers. At baseline, participants showed slightly above-average cognitive function (neurocognitive index median = 105), with plasma ergothioneine levels of median = 1154 nM (interquartile range = 889.9). Plasma ergothioneine increased by ~3- and ~6-fold for 10 mg, and ~6- and ~16-fold for 25 mg, at weeks 4 and 16, respectively (p < 0.001). 25 mg ergothioneine showed a within-group improvement in composite memory at week 4 (p < 0.05), although this was not sustained. Reaction time improved in both groups, dependent on time. Other domains showed null or limited effects. Subjective prospective memory and sleep initiation improved dose-dependently, with significant effects at 25 mg (p < 0.05). Liver function improved and a within-group increase in telomere length was noted. In conclusion, ergothioneine supplementation was safe and well tolerated, with evidence suggesting some benefits in this cohort of healthy older adults. Longer trials in individuals with lower baseline ergothioneine or cognitive function are warranted. Full article

Background/Objectives: The EAT-Lancet Commission proposed a healthy and sustainable ‘planetary health diet’ (PHD) based on the nutritional needs of adults, but recommended for all population groups over the age of two years. This study investigated the extent to which UK adolescent diets meet these recommendations, and the association between meeting recommendations and nutritional intake. Methods: Dietary intake data collected from students aged 11–15 years between 2019 and 2022 as part of the Food provision, cUlture and Environment in secondary schooLs (FUEL) study was used. Specifically, 24 h intakes of food groups and key nutrients were summarised for each participant, and micronutrient intake was expressed as a percentage of the reference nutrient intake (RNI). The proportion of participants meeting each PHD recommendation was calculated. A PHD index score was developed to measure the overall adherence to recommendations. Multilevel linear regression models were fitted to explore the association between the PHD score and intake of each nutrient. Results: No participants fully met the recommendations. The mean PHD score was 14.2 (3.3) out of 39. Adherence was low for the emphasised foods, and lowest for nuts (1.3%) and unsaturated oils (0.2%). Higher PHD index scores were associated with lower intakes of all micronutrients, with the largest association for vitamin B12 [regression coefficient: −12.9% (95% CI: −16.3, −9.4) of RNI] and the smallest for vitamin D [regression coefficient: −0.4 (95% CI: −0.7, −0.2) of RNI]. Conclusions: Substantial dietary changes are needed for this population group to meet the PHD guidelines. Further research should focus on why these recommendations may lead to the inadequate intake of some nutrients in this age group. We propose that the PHD guidance needs to be reviewed and potentially adapted for this specific population, with consideration of the typical dietary behaviours of this age group. Full article

Introduction: This article aims to provide an updated overview of the scientific knowledge regarding the interplay between the Mediterranean diet (MedD), sustainability, and cardiovascular and metabolic health. Methodology: A systematic review was conducted following the PRISMA guidelines, succeeded by a narrative synthesis of data extracted from original research articles in English and Spanish. These articles, indexed in the Scopus and PubMed databases from inception to 31 December 2024, addressed the relationship between MedD, sustainability, and cardiovascular and metabolic health. The methodological quality of the included studies was assessed for bias using the JBI critical appraisal tools. This review was registered in PROSPERO (ID CRD42024476408). Results: The search identified 11 relevant articles. A primary focus on obesity was evident (nine articles), followed by chronic inflammation and metabolic syndrome (two articles each), and cardiovascular health (one article). Regarding sustainability, climate change was the most frequently addressed concern (eight articles). Discussion: A clear trend emerged, indicating a direct association between environmental sustainability, positive health outcomes, and adherence to the MedD. These findings underscore the benefits of the MedD, demonstrating its potential not only to reduce the environmental impact but also to improve health markers such as BMI, metabolic syndrome risk, and chronic inflammation levels. Background/Objectives: Recent decades have seen a remarkable westernization of diets and a decline in adherence to the Mediterranean diet (MD). This study examined the eating habits of a representative sample of Italian university students to identify the determinants of adherence to the MD and the most relevant actions to improve their well-being. Methods: The Mediterranean Diet Quality Index for Children and Adolescents (KIDMED) and Sustainable Healthy Diet (SHED) index questionnaires were used to explore MD adherence as the primary outcome, and dietary behavior sustainability, respectively. Sociodemographic, anthropometric, and lifestyle information was also collected. Results: The final sample included 1434 subjects (18–24; 60% female). The median (IQR) KIDMED score was 6.0 (4.0–8.0) and 33% showed a high adherence to the MD. Having breakfast, eating fruit and vegetables at least once a day, consuming pasta or other grains almost daily, and using olive oil at home were among the most common positive aspects of students’ diets. However, regular consumption of fish, nuts, legumes, dairy products, and a second serving of fruit and vegetables was less prevalent. Having an active lifestyle, eating more plant products, and having more sustainable dietary behaviors in terms of the SHED index, were the main determinants of a high KIDMED score. Likewise, graduate students, daily consumers of plant-based meat alternatives, and students attending university canteens daily were more likely to adopt healthier diets. Conclusions: Future actions are crucial to create a food environment that facilitates healthy and sustainable dietary choices among young adults, such as improving the nutritional quality of processed products and regulating their promotion, as well as implementing initiatives to improve university food services and encourage the use of campus dining facilities. Food systems interact through multiple dimensions including food security, nutrition, and planetary health. This study aims to associate different dietary patterns with sustainable lifestyles in Latin America and Spain. This was an observational, analytical, multicenter, cross-sectional survey study, with a total of 6412 participants. A self-administered questionnaire was developed in an online format in the Google Docs interface. The questionnaire was divided into sections: (1) sociodemographic background: country of residence, age, sex, educational level, socioeconomic aspects, and place of residence; (2) body mass index classification; (3) dietary patterns (Western, vegetarian, vegan, ketogenic, Mediterranean, prudent, or paleolithic diets); and (4) the Sustainable Lifestyles Survey. Multivariate models were applied to adjust for potential confounding factors. The mean age of the participants was 35.2 years (SD 12.7). The majority of participants identified their dietary pattern as omnivorous (41.5%), followed by the Western diet (21.7%) and the Mediterranean diet (12.7%). Plant-based, vegan (β: 14.90; 95% CI: 9.75–20.05), and lacto egg (β: 12.08; 95% CI: 8.57–15.58) diets are significantly associated with a higher sustainability score compared to an omnivorous diet. In contrast, a Western diet is inversely associated (β: −5.63; 95% CI: −7.20 to −4.06). Finally, a vegan (Sub-score 1: β: 6.19; 95% CI: 4.43–7.96) diet is consistently associated with higher levels of sustainability in all areas assessed. In contrast, the Western diet shows a significant negative association with sustainability in all subcomponents assessed. Conclusions: Plant-based dietary patterns were shown to be associated with sustainable lifestyles, with the vegan diet having the greatest association, while the Western dietary pattern was inversely associated. This study aimed to assess the sustainability and environmental impacts of university students’ dietary patterns at the University of Rijeka using the Planetary Health Diet Index (PHDI) and to explore the associations with demographic, lifestyle, nutritional, and environmental variables. Methods: A cross-sectional study was conducted from October 2023 to March 2024 among 224 students (54% male, mean age 22.7 ± 2.2 years). Data collection included sociodemographic information, physical activity, and dietary intake (semi-quantitative FFQ). Diet quality was assessed using the PHDI, Mediterranean Diet Score (MDS), and Dietary Inflammatory Index. Environmental impact indicators (carbon, water, and ecological footprints) were calculated using energy-adjusted intake data and standardized life cycle assessment data. Results: Students exhibited moderate adherence to the Planetary Health Diet (mean PHDI: 55.5). Higher PHDI scores were significantly associated with vigorous physical activity, higher MDS, and anti-inflammatory dietary patterns (all p < 0.001). Despite male students showing slightly higher PHDI scores, their diets had significantly greater environmental impacts. A one-point increase in the PHDI correlated with smaller environmental footprints (carbon: β = −7.94; water: β = −13.88; ecological: β = −3.15; all p < 0.001), with a significant decrease observed particularly in the lowest- and highest-adherence groups, while no consistent or significant effects were found in the intermediate groups. The nutrient and food group analysis supported the health-promoting profile of diets aligned with the PHDI. Conclusions: This study highlights the moderate sustainability of students’ diets, with significant associations between diet quality and environmental impacts. University settings present key opportunities for the promotion of sustainable, health-oriented eating behaviors among young adults. Full article

Millets, often known as “nutri-cereals”, have garnered renewed global interest due to their numerous health benefits, rich nutritional composition, resilience to extreme climatic conditions, and minimal environmental footprint. The advent of rice and wheat as staple foods in the 1960s led to drastic decline in millet cultivation worldwide. Recognizing the importance of millet, the United Nations (UN) declared 2023 as the International Year of Millets in an effort to accomplish Sustainable Development Goal 2 (SDG-2), i.e., zero hunger, by increasing millet production and fostering research and development to improve the integration of these grains into mainstream food systems. In recent years, global production of millets has surged, with India leading as the top producer. Millets are nutritionally advantageous, consisting of carbohydrates, antioxidants, and biologically active compounds such as flavonoids, carotenoids, phenolic acids, minerals, and vitamins. Incorporating millets into a balanced diet can help control and prevent diseases such as cardiovascular disease, diabetes, inflammation, and malnutrition due to their enriched vital nutrients, low glycemic index, and gluten-free nature. This indicates a transition of millets from an “orphan crop” to being used as ingredients for products (with or without fermentation) that are nutrient-rich, climate-resilient, sustainable, and health-promoting. Interest in indigenous and dual-purpose chicken breeds for sustainable poultry farming is growing. Additionally, incorporating local feed resources into their diets may enhance the nutritional value of their products while reducing environmental impact. This study investigated the ability of Echium oil (EO), rich in stearidonic acid (SDA, 18:4n-3) compared to linseed oil (LO) and high in alpha-linolenic acid (ALA, 18:3n-3), to increase long-chain n-3 polyunsaturated fatty acids (LC-PUFAs) in breast meat. Sixty Canarian cockerels were fed for six weeks with diets supplemented with 1.5% soybean oil (SO), 1.5% LO, or 2% EO. Final body weight and carcass traits showed no significant differences among groups (p > 0.05). However, EO-fed birds exhibited slightly higher breast meat lightness (L*) than LO-fed ones (p < 0.05). Total lipid content and lipid class composition remained unchanged (p > 0.05). Both LO and EO increased eicosapentaenoic acid (EPA, 20:5n-3) compared to SO, with EO further enhancing SDA, 20:3n-3, 20:4n-3, docosapentaenoic acid (DPA, 22:5n-3), and docosahexaenoic acid (DHA, 22:6n-3), resulting in meat with a healthier thrombogenic index (TI). Importantly, EO inclusion up to 2% did not negatively impact meat sensory qualities. These findings suggest that EO outperforms LO in enriching poultry meat with beneficial n-3 LC-PUFAs and holds great potential for poultry production. Full article

Aquaculture plays a crucial role in China’s agricultural sector, with improved growth performance and feed efficiency in cultured species representing key industry challenges. Among nutritional strategies, feed attractants have received increasing attention for their ability to stimulate feeding behavior and enhance feed utilization. This study hypothesized that dietary supplementation with a formulated feed attractant would enhance feeding activity, improve physiological condition, and modulate antioxidant and immune responses in juvenile largemouth bass (Micropterus salmoides). A total of 270 fish (initial weight: 12.5 ± 2.5 g) were randomly assigned to three groups: CON (basal diet), YXX0.05 (basal diet + 0.05% attractant), and YXX0.1 (basal diet + 0.10% attractant). After 56 days of feeding, no significant differences were observed in final body weight (FBW) or whole-body composition (p > 0.05). However, feed intake (FI) increased by 5.1%, and the condition factor (CF) improved significantly by 7.6% (p < 0.05) in the YXX0.05 group, while the viscerosomatic index (VSI) was reduced by 3.6% (p < 0.05), suggesting enhanced feeding motivation and improved body compactness. In terms of physiological responses, compared to the control group, the YXX0.05 group exhibited a significant increase in liver total antioxidant capacity (T-AOC) (p < 0.05), a significant decrease in malondialdehyde (MDA) content (p < 0.05), an increase in serum lysozyme (LZM) activity (p < 0.05), and a significant decrease in aspartate aminotransferase (AST) activity (p < 0.05), reflecting enhanced immune status and potential liver protection. In conclusion, although growth performance metrics such as FBW and specific growth rate (SGR) remained unchanged, the feed attractant at 0.05% inclusion significantly improved feed intake, body condition, and physiological health markers. These results suggest the attractant has practical value in improving fish welfare and nutrient utilization efficiency, providing a functional dietary strategy for sustainable largemouth bass farming. This study evaluates the effects of dietary selenium (Se) sources—sodium selenite (SS), nano-selenium (Nano-Se), selenocysteine (Se-C), and selenomethionine (Se-Met)—on production performance, egg quality, preservation characteristics, yolk Se content, and antioxidant capacity in Hy-Line Grey laying hens. A total of 450 healthy 18-week-old Hy-Line Grey laying hens were allocated to five groups (basal diet without Se, 0.30 mg/kg SS, Nano-Se, Se-C, or Se-Met) for an 8-week trial after a 4-week Se-depletion phase. The key results demonstrate that while no significant differences were observed in the feed intake, egg production rate, or egg weight among the groups (p > 0.05), organic Se (Se-C, Se-Met) and Nano-Se significantly improved the yolk color (p < 0.05) and yolk index (p < 0.05) and mitigated declines in the albumen height and Haugh unit during storage. Notably, Nano-Se exhibited superior efficacy in enhancing yolk color and antioxidant enzyme activity (p < 0.05). Furthermore, organic Se and Nano-Se increased yolk Se deposition (p < 0.05), increased yolk antioxidant enzyme activity (p < 0.05), and reduced lipid peroxidation (p < 0.05). These findings indicate that supplementing 0.3 mg/kg organic Se or Nano-Se enhances egg quality, extends shelf life, and improves antioxidant capacity, offering a sustainable strategy for selenium-enriched egg production. This study assessed the performance of black soldier fly larvae (BSFL) fed different tomato plant residues (fruit, leaves, and stems) at doses ranging from 100 to 350 mg/larva/day over ten days. Most doses resulted in 100% survival, except for the leaf residue at the highest dose (300 mg/larva/day), which had an 88% survival rate. Growth varied by substrate, with the highest increase observed in larvae-fed tomato fruit, followed by stems and leaves. However, no doses exceeded the control diet regarding biomass accumulation, although fruit tomatoes produced the highest wet biomass (13.71 g). Larvae-fed fruit tomatoes also showed the best performance in waste reduction index (WRI) with 7.56, substrate reduction (SR) of 75%, and a feed conversion rate (FCR) of 3.29. Furthermore, the fruit tomato was the most efficient at converting organic waste into larval biomass. This study demonstrates the potential of using tomato plant residues as a sustainable substrate for BSFL, offering an effective way to manage agricultural waste and produce valuable larval biomass.
