Influence of Loading Density and Gender on the Welfare and Meat Quality of Horses During Transport for Slaughter

The aim of this study was to determine the effects of loading density and gender on blood welfare indicators, carcass bruises and horsemeat quality. Data were collected from twelve transports of 89 slaughter horses originating from the same collection centre. The transportation of slaughter horses at high loading densities (>200 kg/m2), especially stallions, resulted in increased levels of lactate (p = 0.021), glucose (p < 0.0001), ceruloplasmin (p < 0.0001) and AOPP (p < 0.0001), but lower GSH levels (p < 0.0001). Compared to stallions and mares, geldings subjected to high loading density (>200 kg/m2) during transport had lower levels of the aforementioned blood metabolites. In addition, stallions exposed to a high load density (>200 kg/m2) had the highest frequency of severe (p = 0.0002), large (p < 0.0001) and circular (p = 0.0001) carcass bruises, which were predominantly located on the abdominal (p = 0.0056) and thoracic (p = 0.0004) wall. In contrast, a higher percentage (p < 0.0001) of undamaged carcasses was found in slaughter horses exposed to a low loading density (≤200 kg/m2) during transport. Stallions exposed to high loading densities (>200 kg/m2) during transport had the highest initial pH (p < 0.0001) and ultimate pH (p = 0.005) in terms of m. longissimus lumborum and redness (p = 0.017), but the lowest drip loss (p = 0.050) and lightness (p < 0.0001), which, consequently, led to the highest (p = 0.0045) proportion of DFD-like defects in the meat quality. In conclusion, the results of this study showed that high loading densities (>200 kg/m2), regardless of gender, negatively affect horse welfare during transport. In addition, stallions were more sensitive to poor pre-slaughter conditions and produced the lowest meat quality, while geldings were the most resistant. To determine the optimal transport density, further research is needed to determine the effects of different loading densities on the behaviour, physiology, carcass and meat quality of slaughter horses. The assessment of bruises on carcasses at the slaughterhouse has been lately indicated as a valid method to evaluate cattle welfare. However, little is known about the prevalence and the causes of bruises of cattle slaughtered in Italy. The aim of this study was to collect information concerning the prevalence of bruises on the carcasses of beef cattle slaughtered in an Italian abattoir and to determine a relationship between fresh bruises and transport-related factors. In total, 1265 animals were included in this study, with 21.6% of them being positive for at least one bruise, either fresh or old. In most cases, the bruising was mild, with lesions exclusively located in one area of the carcass. Most of the bruised animals (63%) showed at least one red lesion. Occurrence of such red, fresh bruises varied significantly depending on the body parts (p < 0.0001), with the flank being the most affected area (39.5%), followed by the butt (36.0%) and the front (23.8%). The probability of fresh bruising varied significantly depending on the category of each animal (p < 0.0001), with steers showing fewer red bruises than both heifers and veal. Finally, animals transported in conditions of a high density had a lower probability of bruising (p = 0.0003). These findings support the use of a monitoring scheme based on the presence of bruises to assess cattle welfare at the abattoir level in order to provide feedback to farmers and to implement procedures carried out during transport. Pre-slaughter conditions and their effects on carcass quality have been largely addressed for pigs of 90–100 kg live weight, while few studies consider the effects of pre-slaughter conditions on the quality of the carcasses obtained from heavy pigs intended for Protected Designation of Origin (PDO) production. A total of 1680 heavy pigs were transported in 72 batches from a farm to a commercial abattoir on 16 different days, avoiding mixing unfamiliar animals. Slaughterhouse conditions, animal behaviors, and human–animal interactions were annotated at unloading and during the race toward the stunning cage. Carcass lesions on the rear, middle, and shoulder parts of the carcasses were scored. The prevalence of carcasses with severe lesions was 6.92%, 11.87%, and 6.83%, for the rear, middle, and shoulder parts, respectively. Among the pre-slaughter events, waiting before unloading and improper handling practices at the abattoir were the major factors affecting carcass lesion severity. Lairage pen space allowance was also found to affect severe rear and shoulder lesions, and the batches that were transported in the trailer had an increased prevalence of severe shoulder lesions. Our results suggest waiting time before unloading should be shortened as much as possible, and educational programs to train operators for more careful management of animals in the abattoir are greatly required to avoid improper animal handling practices. The objective of this experiment was to evaluate the effect of two different pasture-based finishing strategies and lairage time on steers welfare in Uruguayan conditions. Sixty Hereford (H) and Braford (B) steers were assigned to two different diets for finishing purposes: (D1) native pasture plus corn grain (1% of live weight) (H n = 15, B n = 15) and (D2) high-quality pasture (H n = 15, B n = 15). The average daily gain was registered every 14 days, and temperaments were individually assessed one week before slaughter by three individual tests: crush score, flight time and exit speed, building a multicriterial temperament index (TIndex). Animals were slaughtered the same day in two groups (50% from D1 and 50% from D2 in each group) after traveling for 3.5 h and staying 15 (long lairage) and 3 h (short lairage) in the lairage pens, respectively. The behaviors were observed during lairage, and physiological indicators were used to assess stress at the farm after transport, after lairage and at slaughter. Bruises incidence and final pH were registered at the abattoir as a means of assessing the overall animal welfare. Calmer animals had higher average daily gains with no differences either between diets or between breeds. Calmer animals also had a lower stress response during all preslaughter stages, regardless of the time in lairage. Transport did not imply psychological stress (cortisol) for any slaughter group, but physical stress was evident after transport in both groups through NEFA and CPK increases. Bruise incidences did not differ between lairage groups. The short lairage group did not have enough time to cope with the environment before slaughter, with the consequent deleterious effects on the carcass pH. Animals from the long lairage group had a higher metabolic response shown through NEFA values, but they had enough time to rest and recover overnight, reaching final pH values lower than 5.8, considered the upper limit of the normal range. According to this experiment, with pasture-based animals without fasting on the farm and after 3.5 h of transportation, a resting period of 15 h in lairage should be better than a 3-h one. Culling is the departure of cows from the herd as a result of sale, slaughter, health, national regulations, salvage, or death. Cull cows are removed from farms with poor health, production, behavior, or other problems, and during pre-slaughter they are sometimes kept without food and water, which compromises their well-being. The objective of the present study was to evaluate the welfare state of culled dairy cows during pre-slaughter using some animal-based measurements and to identify possible associations between them. Data were recorded for 62 different dairy production farms referring to 137 cull cows (n = 60 Holstein and n = 77 Normandy crosses) slaughtered in an abattoir in Colombia (South America). In this study, we evaluated and recorded land transport conditions, the health of animals on arrival to the abattoir, human–animal interaction, stress physiological variables and the association of these variables with characteristic bruises on the carcass, the lairage time, the presence of diseases, and the stage of pregnancy. In total, 98.5% of the cows were very thin, 35.7% were pregnant, and 84.7% had bruising on the carcass. In total, 74.5% had clinical conditions; these included skin lesions (32.4%), mastitis (27.5%), lameness (21.6%), vulvar secretions (8.8%), diarrhea (6.8%), and eye carcinoma (2.9%). The total number of cull cows with bruises during pre-slaughter was associated with lot size, transport time, presence of pregnancy, body score condition, and creatine kinase levels. The results suggest that the cows were not fit for transport because their health was severely affected before they left the farms. The animal-based indicators used in this study are useful for evaluating the welfare of cull dairy cows at abattoirs. Full article

There is increasing interest in utilizing meat inspection data to help inform farmers of the health and welfare of their herds. The aim of this study was to determine whether ante-mortem measures of welfare in beef and dairy cattle (N = 305) were associated with post-mortem measures at a United Kingdom (UK) abattoir. Multiple regression analysis was used to determine the ability of ante-mortem measures of lameness, cleanliness, skin lesions, hair loss and body condition in predicting hot carcass weight and the frequency of carcass bruising. For beef cattle, lameness score (p = 0.04), cleanliness score (p = 0.02) and age (p < 0.001), were predictors of carcass bruise score while lameness score (p = 0.03), body condition (p = 0.01) and sex (p < 0.001) were predictors of hot carcass weight. For dairy cattle, sex (p < 0.001) and slaughter day (p < 0.001) were predictors of carcass bruise score while skin lesion score (p = 0.01), body condition (p < 0.001), age (p < 0.001), slaughter day (p < 0.001) and number of moves (p = 0.01) were predictors of hot carcass weight. These results suggest that recording carcass weight and carcass bruising at meat inspection may have potential as a general indicator of health and welfare status in cattle. However, animal characteristics and variables, such as slaughter day and abattoir staffing, should be taken into account when interpreting the results. Full article

The objective of this study was to evaluate the welfare of cull cows in a slaughtering plant, using indicators of health on arrival and indicators of handling during the stunning process. These pre-slaughter indicators were associated with post-slaughter indicators of the same cows, such as carcass bruising and condemnations. Transport staff surveys showed that all drivers had been trained on animal welfare. All loads of cows came directly from farms and had an average transport duration of 5 h 22 min. Indicators were registered in 237 cows during unloading at the slaughterhouse and in the stunning box. Bruises and condemnations were recorded post-slaughter in the carcasses of the same cows. Results at arrival showed that 48% of the cows had low body condition, 50% had mammary problems, and 24% suffered from lameness. During stunning, 16% of cows needed a second shot, and 54% exceeded the 60 s established as a recommended interval between stunning and bleeding. During the post-slaughter evaluation, 50% of the carcasses had more than two bruises and 70.46% had a bruise severity score different from zero. Low body condition was a risk factor to increase the severity of bruises; low body condition and mammary problems increased carcass condemnations; the stunning process indicators were not statistically associated with the severity of the bruises. For cull cows the main animal welfare issue originates at farm level. Full article

Consumers have become increasingly demanding about the quality of products of animal origin, particularly regarding animal welfare during production, transport, and slaughter. The aim of the present study was to review the factors affecting the welfare of lambs for slaughter in Chile and show the implications on meat quality. Rounding up and driving the lambs from the fields in large extensive production systems and long distance transport through difficult geographical routes affect the blood variable indicators of stress and reduces muscle glycogen reserves, increasing the risk of high pH of meat. In small farmer sheep production conditions there is a lack of appropriate installations for loading/unloading and deficiencies in vehicle structure specific for lambs; this together with the work of untrained handlers results in a high percentage of mortality and bruised carcasses, compared to European studies. These problems are common for other South American countries and should be addressed firstly by educating and training all the people involved in the lamb meat chain regarding animal welfare. In Chile there is legislation, ongoing since 2013, regarding the protection of animals during production, transport, and slaughter, including compulsory training of animal handlers and livestock transporters, which should improve animal welfare and meat quality. In Uruguay, extensive, welfare-friendly beef production is a substantial part of the economy and culture. Transport of beef cattle to slaughterhouse compromises animal welfare. The objective of this study was to assess transport conditions related to carcass bruising. A total of 242 trucks with 8132 animals were assessed on loading, transport, unloading conditions, and carcass bruising. Average loading time was 26 min and 21 s and the perception of the truck drivers was correlated with the time took for loading and the use of devices. In 39.3% of the loadings only a flag was used. The average unloading time was 5 min and 54 s with a significant difference in time for the use of devices; only flag 3 min 51 s, cattle prod 6 min 43 s and sticks 8 min 09 s. Of the carcasses observed, 772 (9.5%) had no bruises, 873 (10.7%) had one bruise, 1312 (16.1%) two, 1231 (15.1%) three and 3944 (48.5%) had four or more bruises. Prevalence of bruises were highest on the Tuber-coxea (hip) (29.3%) following forequarter (22.4%), Tuber-ischiadicum (rear) (17.3%), ribs/flank (14.1%), rump/round (10.1%) and loin (6.8%). Bruises were 68.7% grade 1 and 31.3 % grade 2; there were no grade 3, the deepest ones, observed. It appeared that animal welfare training of truck drivers worked out well and the use of flags increased compared to a previous study in 2008. Full article

This study was conducted at the Kumasi Abattoir Company Limited (K.A.C.L) in Ghana to assess the effect of pre-slaughter handling on welfare and meat quality of cattle. Behaviour measurements were done on 200 cattle pre-slaughter and the methods by which the cattle were handled were recorded to evaluate the effect of pre-slaughter handling on their welfare. Ultimate pH24 and percent cooking loss were measured on 50 poorly-handled cattle pre-slaughter. The cattle were poorly-handled because they were beaten and, whipped. Based on pH24, meat quality was assessed as normal (pH from 5.5–5.8), moderate dark, firm and dry (DFD) (5.8 ≤ pH ≤ 6.2), and DFD (pH from 6.2–6.7). Five hundred carcasses were visually observed for bruising in them and the number of non-ambulatory cattle slaughtered in a week was recorded. The relationship between pH24 value and cooking loss in meat from the 50 poorly-handled cattle was investigated. Behaviours exhibited by poorly-handled cattle pre-slaughter included raising of their tail, kicking, lying down and refusing to move, jumping, vocalising, panting, and charging at handlers. Also lashes/whips, pulling of animals’ tails, stamping on their tails, and hitting them with sticks, stones and ropes were among the prominent methods by which the cattle were handled. Mean pH24 and mean percent cooking loss were significant (p < 0.05) at 6.22 ± 0.10 and 22.51 ± 3.25, respectively, for poorly-handled cattle. There was a strong negative correlation between pH24 and percent cooking loss in poorly-handled cattle (r = −0.77). Out of the 500 carcasses assessed for bruising, 18% had no bruises, 60% had slight bruises while 22% had severe bruises. Ninety (90) non-ambulatory cattle were slaughtered within seven (7) days, representing 7.1% of the total number of cattle slaughtered within that period. The results indicated that handling of cattle pre-slaughter have effects on their meat quality and welfare. Eighty-two percent of the bruised carcass and 7.1% of non-ambulatory animals indicated poor meat quality. Meat quality assessment indicated that most of the meat had dark, firm and dry (DFD) tendency. The water holding capacity of the meat sampled in this study (by means of cooking loss) indicated that the meat quality was compromised. Full article
