Social Determinants of the Transition in Food Consumption in Paraíba, Brazil, Between 2008 and 2018

Background/Objectives: Dietary patterns have changed over time, characterising a process of nutritional transition that reflects socioeconomic and demographic inequalities among different populations. This study assessed changes in dietary consumption patterns and the associated social determinants, comparing two time periods in a sample of individuals from a state in the Northeast Region of Brazil. Methods: Data from the 2008–2009 and 2017–2018 Household Budget Survey for the state of Paraíba were analysed, totalling 951 and 1456 individuals, respectively. Foods were categorised according to the NOVA classification and compared based on sociodemographic and economic variables. To determine the factors that most strongly explain the contribution of each NOVA food group to the diet, beta regression analysis was conducted. Results: Differences were observed between the two periods regarding the dietary contribution of the NOVA food groups, with a decrease in consumption of unprocessed foods and an increase in ultra-processed foods. Living in urban areas, being an adolescent, and having an income above the minimum wage were associated with reduced intake of unprocessed foods in both periods. Additionally, being an adolescent and having more than eight years of schooling were associated with higher consumption of ultra-processed foods. Conclusions: The population under study showed changes in food consumption, reflecting a transition process that is occurring unevenly across socioeconomic and demographic groups, thereby reinforcing social inequalities. These findings can guide priorities in food and nutrition policies, highlighting the need for intervention studies to evaluate the effectiveness of such actions. Full article

Environmental risk assessment (ERA) for pesticide approval in the context of predatory insects remains inadequate as it often overlooks the influence of agricultural practices. An increasing number of studies have shown that prolonged and synergistic pesticide exposure can elevate insect mortality. However, such effects remain largely unstudied in non-target predatory carabid beetles. The carabid beetle Platynus assimilis was subjected to repeated oral and continuous contact exposure to low doses of prothioconazole (20 g ha−1), lambda-cyhalothrin (0.4 g ha−1), or their combination over a 64-day period. The food consumption rate, body mass, locomotor activity, and mortality were monitored throughout the experiment. All pesticide-treated groups showed significantly increased final mortality, with median lethal times (LT50) of 51.6 days for prothioconazole, 60.3 days for lambda-cyhalothrin, and 12.2 days for their combination. A significant synergistic effect on mortality was observed in the combined treatment group, with the highest synergistic ratio detected 20 days after the first exposure. Pesticide-treated beetles exhibited significant abnormalities in locomotor activity and body mass compared to the untreated group. These findings demonstrate that both time-cumulative mortality and potential synergistic interactions, reflecting field-realistic conditions, must be considered in ERA. Failure to do so may lead to an underestimation of pesticide toxicity to predatory carabids. Full article

Background/Objectives: Excessive sugar intake through sugar-sweetened beverages (SSBs) has raised global concerns due to its association with various health risks. This study evaluates the effectiveness of nudges—in the form of order placement, variety expansion, and a combination of both—in promoting non-SSB purchases at self-service kiosks, a key environment for SSB consumption. Methods: This study was conducted using a real-world kiosk at food and beverage outlets in South Korea from 28 May to 12 July, 2024. A total of 183 consumers aged 19 to 29 participated in this study. A single kiosk device was used with four screen layouts, each reflecting a different nudge strategy. Participants were unaware of these manipulations when making their purchases. After their purchases, participants completed a survey. All data were analyzed using IBM SPSS Statistics for Windows, Version 29.0. Results: Females reported significantly higher positive attitudes, preferences, and perceived necessity regarding nudges compared to males. In particular, both the single (variety) and combination (order and variety) nudges received positive responses from females (p < 0.001). The combination nudge significantly increased non-SSB purchases compared to the control (p < 0.05) and single (order) nudge groups (p < 0.01), which suggests that combination nudge is effective in promoting healthier beverage choices. Females were also more likely to purchase non-SSBs than males (p < 0.05). Conclusions: The findings suggest that the combination nudge strategy effectively promotes healthier beverage choices in real kiosk settings. Notably, females demonstrate significantly higher positive attitudes, preferences, and perceived necessity regarding nudges compared to males, and are also more likely to purchase non-SSBs. These findings offer valuable insights for real-world applications aimed at encouraging healthier consumption behaviors. Full article

On-farm emergency slaughter (OFES) is employed when cattle are unfit for transport but still suitable for human consumption, thereby ensuring animal welfare and reducing food waste. This study analysed OFES patterns in Northern Italy, where a large cattle population is housed but information on the practice is rarely analysed. A total of 12,052 OFES cases from 2021 to 2023 were analysed. Most involved female cattle (94%) from dairy farms (79%). Locomotor disorders were the leading reason (70%), particularly trauma and fractures, followed by recumbency (13%) and calving-related issues (10%). Post-mortem findings showed limbs and joints as the most frequent condemnation sites (36%), often linked to trauma. A significant reduction in OFES cases occurred over time, mainly due to fewer recumbency and calving issues, likely reflecting stricter eligibility criteria introduced in 2022. Weekly variations, with peaks on Mondays and lows on Saturdays, suggest that logistical constraints may sometimes influence OFES promptness. These findings suggest that on-farm management and animal handling could be improved further to reduce welfare risks and carcass waste. Due to the lack of standardised data collection and regulatory harmonisation, a multi-country investigation could improve our understanding of this topic and inform best practice. Full article

Dietary choices and patterns have enormous consequences along the lines of individual, community, and planetary health. Excess meat consumption has been linked to chronic disease risk, and at large scales, the underlying industries maintain a massive environmental footprint. For these reasons, public and planetary health experts are unified in emphasizing a whole or minimally processed plant-based diet. In response, the purveyors of ultra-processed foods have added “meat alternatives” to their ultra-processed commercial portfolios; multinational corporations have been joined by “start-ups” with new ultra-processed meat analogues. Here, in our Viewpoint, we revisit the 1990s food industry rhetoric and product innovation, a time in which multinational corporations pushed a great “low-fat transition.” We focus on the McLean Deluxe burger, a carrageenan-rich product introduced by the McDonald’s Corporation in 1991. Propelled by a marketing and media-driven fear of dietary fats, the lower-fat burger was presented with great fanfare. We reflect this history off the current “great protein transition,” a period once again rich in rhetoric, with similar displays of industry detachment from concerns about the health consequences of innovation. We scrutinize the safety of carrageenan and argue that the McLean burger should serve as a cautionary tale for planetary health and 21st century food innovation. Full article

Purpose—This research paper examines the critical factors in customer satisfaction while purchasing fruits and vegetables at farmers’ markets. Design/methodology/approach—This study was conducted using a prepared questionnaire to collect data on a random sample of 235 customers of farmers’ markets in the state of Maharashtra, India. The research was carried out in the year 2023. Seven hypotheses were tested concerning the relationships between the variables of interest. The variables of convenience, variety, quality, price, health and hygiene, and service conditions were used as independent constructs and were proxied by reflective indicators. Customer satisfaction and customer loyalty were treated as an exogenous variable and an endogenous variable, respectively. Structural equation modeling was used to investigate the model relationships and confirm the theoretical model. Findings—The findings validate all the reflective indicators used in the study. The latent variables of convenience, variety, quality, price, health and hygiene, and service conditions positively and significantly affect customer satisfaction, and customer satisfaction positively and significantly affects customer loyalty toward farmers’ markets. The structural equation explains approximately 55% of the variation in customer satisfaction related to convenience, variety, price, quality, health and hygiene, and service conditions. Significance—The study results provide insights into the factors that influence consumer behavior and attitudes toward farmers’ markets. By identifying these predictors, this study can help farmers’ markets and other stakeholders develop effective marketing strategies to attract and retain customers, ultimately promoting sustainable food production and consumption. Additionally, the results can inform policymakers on how to support and promote farmers’ markets as healthy and sustainable food sources. Practical implication—By implementing the practical suggestions derived from the implications of this research, farmers’ markets can optimize customer satisfaction, boost customer loyalty, and reinforce their position as valuable contributors to local communities’ well-being and sustainability. Originality/value—The acceptance of farmers’ markets in India as an alternative shopping destination for fruits and vegetables is gradually increasing. This exploratory study conducted on farmers’ markets examined several factors, including price, in assessing customer satisfaction and farmers’ markets’ effectiveness at positioning themselves as shopping destinations for consumers in India. Global Drinking Water Standards Lack Clear Health-Based Limits for Sodium

Background/Objectives: High sodium consumption increases the risk of hypertension and cardiovascular disease. Although food remains the primary source of intake, elevated sodium levels in drinking water can further contribute to excessive intake, particularly in populations already exceeding recommendations. This review examines the extent to which national drinking water standards account for sodium-related health risks and aims to inform discussion on the need for enforceable, health-based sodium limits. Methods: National standards for unbottled drinking water in 197 countries were searched for using the WHO 2021 review of drinking water guidelines, the FAOLEX database, and targeted internet and AI searches. For each country, data were extracted for the document name, year, regulatory body, regulation type, sodium limit (if stated), and rationale. Socio-geographic data were sourced from World Bank Open Data. A descriptive analysis was conducted using Microsoft Excel. Results: Standards were identified for 164 countries. Of these, 20% (n = 32), representing 30% of the global population, had no sodium limit. Among the 132 countries with a sodium limit, 92% (n = 121) adopted the WHO’s palatability-based guideline of 200 mg/L. Upper limits ranged from 50 to 400 mg/L. Only twelve countries (9%) cited health as a rationale. Three countries—Australia, Canada, and the United States—provided a separate recommendation for at-risk populations to consume water with sodium levels below 20 mg/L. Conclusions: Globally, drinking water standards give inadequate attention to sodium’s health risks. Most either lack sodium limits or rely on palatability thresholds that are too high to protect health. Updating national and international standards to reflect current evidence is essential to support sodium reduction efforts. Health-based sodium limits would empower communities to better advocate for safe water. Amid rising water salinity, such reforms must be part of a broader global strategy to ensure universal and equitable access to safe, affordable drinking water as a basic human right. Full article

Background: The current food system is unsustainable, making it essential to address the issue globally through adequate policies and sustainable development goals. The European Union aims to dedicate 25% of farmland to organic farming by 2030 to promote sustainable practices. Warsaw is the first Polish city working on an urban sustainable food policy; however, there is limited data on the sustainable food system (SFS) and organic sector available. Objectives: This research examines whether consumers in Warsaw who prefer organic food also display other sustainable characteristics and awareness, reflected in their food choices, dietary habits, and other food-related behaviors. Methods: A household survey (HHS) was conducted as part of the SysOrg project, focusing on evaluating the sustainability of food systems in Warsaw in the areas of diet and organic food. The clusters of respondents, grouped by the self-declared proportion of organic foods in their diets, were analyzed and compared, and in addition, correlation analyses of the share of organic food in diets and other sustainability parameters were performed. Results: The study of 449 respondents indicates that Warsaw is at an early stage of the organic transformation, with the largest group of respondents declaring a 1–10% share of organic products in their diet. There were significant differences in dietary choices, sustainability awareness, and food selection habits and motivations among various consumer groups depending on their organic food share. Conclusions: Overall, this study’s findings highlight a link between organic food consumption and certain sustainable behaviors, suggesting potential for organic consumers’ contribution to a sustainable transformation. The study offers valuable insights into the existing knowledge gap regarding the behaviors of organic and sustainable consumers in Warsaw. Furthermore, despite the non-random nature of the sample limiting the generalizability of findings, it serves as a preliminary resource for other European cities that are formulating food policies and incorporating Green Public Procurement (GPP) into their procurement processes, especially for municipalities within the Visegrad Group. Ultraprocessed foods (UPFs), now dominant in global diets, pose health risks that go beyond poor nutrition due to the synergistic effects of compounds in their ultracomplex industrial formulations. This narrative review aims to provide researchers and health professionals in the field of cancer with updated and critical information, as they are often unaware of the complex and evolving evidence linking UPFs to carcinogenesis. The review discusses potential mechanisms through which UPFs may contribute to cancer development, including harmful additives, neo-formed contaminants, and packaging-derived substances, as well as the displacement of protective nutrients found in whole foods. Despite limitations in establishing direct causality, epidemiological studies consistently associate high UPF intake with increased incidence of various cancers, notably colorectal, breast, and pancreatic cancers. These findings reflect a broader paradigm shift in nutritional epidemiology, recognizing that food processing is an essential dimension of diet-related health risks. To mitigate the impact of UPFs, the review emphasizes the need for preventive strategies that integrate clear dietary guidelines, regulatory measures on food labeling and additives, and public education campaigns. Successful international experiences in regulating marketing and improving transparency serve as important references. Moreover, eliminating corporate influence and conflicts of interest is crucial to ensure that public health, rather than industry agendas, guides nutrition policy. As scientific research advances to clarify the mechanisms of action and synergistic effects of harmful compounds in UPFs, coordinated efforts are needed to reduce their consumption and ultimately alleviate the global cancer burden. Italian Riesling is a grapevine (Vitis vinifera) cultivar widely grown in Transylvania vineyards. During the winemaking process, grape pomace (GP) is generated. This study aimed to exploit the potential of the Italian Riesling GP through its composition in polyphenols and fatty acids, as well as its antioxidant activity. Thus, two Italian Riesling GPs from two distinct Transylvanian microclimates (Crăciunelu de Jos and Ciumbrud) were analysed in terms of their phenolic and fatty acid composition and antioxidant activity while considering the influence of their respective microclimates. Every vineyard has unique geographical and meteorological characteristics that significantly influence grape production and consequently the structure of the resultant pomace. For example, Ciumbrud has a warmer, drier microclimate, whereas Crăciunelu de Jos has a colder, more humid environment. Biochemically, GP from Ciumbrud Italian Riesling grapes (RICI) contained greater amounts of gallic acid, total phenolic acids, and procyanidins and presented improved antioxidant activities, as reflected by DPPH˙, ABTS˙+, CUPRAC, and FRAP assays. RICI pomace also possessed a better fatty acid profile with higher oleic and linolenic acid levels, leading to a lower thrombogenicity index (TI) and a better PUFAω-6/PUFA ω-3 ratio. However, GP produced from Crăciunelu de Jos Italian Riesling grapes (RICR) possessed more catechin, epicatechin, epicatechin gallate, total flavanols, and higher COX values. The findings demonstrate that the two GPs have significant and distinct nutritional content, highlighting them as valuable resources for food consumption, providing benefits to consumers’ health. Background/Objectives: Addressing the global syndemic of obesity, undernutrition, and climate change requires a shift toward healthy and sustainable diets. This study examines the feasibility and cost implications of implementing a Healthy and Sustainable Basic Food Basket in Chile that aligns with the EAT–Lancet diet recommendations, through its comparison with the current Basic Food Basket used for the poverty line definition. Methods: The Healthy and Sustainable Basic Food Basket was constructed based on the EAT–Lancet dietary model and was uniquely adapted to reflect the observed consumption patterns of Chile’s lowest income quintile, allowing for a more realistic affordability assessment for vulnerable populations. Food prices from the National Institute of Statistics were analyzed over a 10-year period (2014–2023). Results: This study found that the Healthy and Sustainable Basic Food Basket provides 2001 kcal per day with a balanced macronutrient distribution. However, its average cost was 13.9% higher than the Basic Food Basket, posing a significant economic barrier for low-income populations. The cost gap varied seasonally, peaking in October (21.1% higher) and narrowing in December (4.6% higher). Long-term trends showed increasing costs for both baskets, with the Healthy and Sustainable Basic Food Basket reaching its highest price in 2023, further limiting affordability. Conclusions: These findings highlight the limitations of current poverty measurement frameworks in Chile, which prioritize caloric sufficiency over nutritional quality and sustainability. This suggests a need for policy revisions to incorporate the cost of healthy and sustainable diets into poverty assessments and social protection programs. Key policy recommendations include promoting healthier diets and improved food nutrition, supporting low-carbon foods, regulating local food production and supply systems, and encouraging seasonal, local consumption. This study underscores the need for structural interventions to ensure equitable access to sustainable diets, addressing both public health and environmental concerns. Full article

Introduction: Childhood emotional maltreatment, which includes emotional abuse and neglect, has been identified as a significant risk factor for the development of disordered eating behaviors related to overeating and reduced dietary control. At the same time, the literature suggests that childhood emotional maltreatment appears to be linked to deficits in reflective functioning which, in turn, may increase vulnerability to dysregulated, impulsive, and addictive behaviors. However, to date, the role of a key factor, such as food addiction (FA), within this model has not yet been investigated. Therefore, the aim of this study was to test a mediation model in which emotional abuse and neglect predict overeating and reduced dietary control through deficits in reflective functioning and FA symptoms. Method: Using a cross-sectional design, a conventional non-clinical sample of 543 participants was recruited and completed a set of standardized questionnaires. A multiple mediation model with observed variables was specified (10,000 bootstrap resampling). Results: The multiple mediation model showed good results, confirming the initial hypotheses. Specifically, emotional abuse and neglect were associated with FA symptoms through deficits in reflective functioning. In turn, FA symptoms predicted overeating behaviors and poor dietary control. Discussion: These findings highlight the central role of FA in linking reflective functioning deficits to disordered eating patterns associated with excessive food consumption. This study advances our understanding of the psychological mechanisms underlying disordered eating behaviors and underscores the need for targeted interventions addressing reflective functioning deficits and food addiction in individuals with a history of childhood emotional maltreatment. Background: The growth patterns of children and adolescents are influenced by multiple factors. This study employed structural equation modeling (SEM) to determine the primary factors influencing the growth of Palestinian children and adolescents in the West Bank (WB). Methods: A cross-sectional survey conducted in 2022 in the WB collected data from 1400 households, of which 500 with children aged 5–17 years and were selected for analysis. The survey assessed household food insecurity, socioeconomic status (SES), parental health history, nutritional awareness, food consumption patterns, and nutrient intake. The latent construct “Child Growth” was measured using Body Mass Index-for-age Z-score (BAZ), height-for-age Z-score (HAZ), and Mean Adequacy Ratio (MAR). SEM was employed to examine the interrelations among latent variables and their observed indicators. Results: Mineral intake showed the strongest direct effect on child growth (β = 0.812, p < 0.001), followed by food availability (β = 0.492), vitamin intake (β = 0.481), SES (β = 0.439), and macronutrient intake (β = 0.383). MAR exhibited the highest factor loading as a growth indicator, while HAZ had limited significance, suggesting its chronic nature. SES influenced growth both directly and indirectly through its effects on food availability and dietary intake pathways. Strong correlations between nutritional knowledge and nutrient classes reflect the interrelationship between behavioral and biological determinants. Conclusions: Both structural and immediate nutritional factors influence child growth. In Palestinian youth, mineral intake, food security, and SES have the greatest influence. These findings offer a framework for understanding the growth determinants of Palestinian youth in the WB and support the development of targeted interventions to improve dietary quality and overall nutritional status. Cooking food is a factor that contributes to global energy consumption and greenhouse gas emissions. This research proposes the design, simulation using thermal resistances with MATLAB Simulink, and experimental evaluation of an automated double-concentrated solar cooking system operable from inside a home. Water was used as a cooking load. Each test for 25 min was entered into a system integrated by a programmable elevator to transport the food to the roof, a configurable temperature display, a photovoltaic power source, and double solar collection (direct through a modified box oven and reflected by a parabolic dish collector). When both solar components operated simultaneously, the system reached a temperature of 79 °C, representing a 57.34 °C increase. On average, the solar concentrator provided 78.02% more energy than the oven alone. This approach is expected to reduce cooking time and contribute to sustainable home design aimed at mitigating greenhouse gas emissions. Full article

The global transition to a digital era is crucial for society, as most daily activities are driven by digital technologies aimed at enhancing productivity and efficiency in the production of food, fibers, and bioenergy. However, the segregation of digital techniques and equipment in both rural and urban areas poses significant obstacles to technological efforts aimed at combating hunger, ensuring sustainable agriculture, and fostering innovations aligned with the United Nations Sustainable Development Goals (SDGs 02 and 09). Rural regions, which are often less connected to technological advancements, require digital transformation to shift from subsistence farming to market-integrated production. Recent efforts to expand digitalization in these areas have shown promising results. Digital agriculture encompasses terms such as artificial intelligence (AI), the Internet of Things (IoT), big data, and precision agriculture integrating information and communication with geospatial and satellite technologies to manage and visualize natural resources and agricultural production. This digitalization involves both internal and external property management through data analysis related to location, climate, phytosanitary status, and consumption. By utilizing sensors integrated into unmanned aerial vehicles (UAVs) and connected to mobile devices and machinery, farmers can monitor animals, soil, water, and plants, facilitating informed decision-making. An important limitation in studies on nutritional diagnostics is the lack of accuracy validation based on plant responses, particularly in terms of yield. This issue is observed even in conventional leaf tissue analysis methods. The absence of such validation raises concerns about the reliability of digital tools under real field conditions. To ensure the effectiveness of spectral reflectance-based diagnostics, it is essential to conduct additional studies in commercial fields across different regions. These studies are crucial to confirm the accuracy of these methods and to strengthen the development of digital and precision agriculture. Full article
