Restoring a Healthy Relationship with Food by Decoupling Stress and Eating: A Translational Review of Nutrition and Mental Health

Psychological stress and dietary behavior are interdependent forces that greatly influence mental and physical health. Thus, both what and how we eat impact our well-being. Maladaptive eating patterns, such as eating in response to emotional cues rather than physiological hunger, have become increasingly common amid modern stressors and an ultra-processed food environment. This narrative review synthesizes interdisciplinary findings from nutritional psychiatry, microbiome science, and behavioral nutrition to explore how stress physiology, gut–brain interactions, and dietary quality shape emotional regulation and eating behavior. It highlights mechanisms (e.g., HPA-axis dysregulation, blunted interoception, and inflammatory and epigenetic pathways) and examines the evidence for mindful and intuitive eating; phytochemical-rich, whole-food dietary patterns; and the emerging role of precision nutrition. Trauma-informed approaches, cultural foodways, structural barriers to healthy eating, and clinical implementation strategies (e.g., interprofessional collaboration) are considered in the context of public health equity to support sustainable mental wellness through dietary interventions. Ultimately, restoring a healthy relationship with food positions nutrition not only as sustenance but as a modifiable regulator of affect, cognition, and stress resilience, central to mental and physical well-being. People in multilingual societies develop complex and interconnected food-making and food-discussing networks. On the basis of an experimental course titled “Food at Home, Food on the Move: Globalization and Regionalism in Modern Food Culture” taught at the University of Helsinki, we will show how the acquisition of culinary terminology puts forward the interconnectedness of languages and the dynamics between them in several sociolinguistic contexts. The lectures were grouped geographically: Eating with the Neighbors (Finnish cuisine and Swedish, Russian, Karelian and other influences); From the Baltic to Central Europe (Latvian, Lithuanian, Polish, German, and Hungarian food cultures); Formative Cuisines of the Mediterranean (French, Italian, Greek, Middle Eastern cuisine, etc.); and Eating Outside Europe (food culture influences from the US, Mexico, China, Japan, and India). The assignments included a critical lecture diary, an essay about eating experiences, or additional reading, a conversational analysis of a culinary show, or fieldwork in an ethnic restaurant. Raising awareness of linguistic and cultural diversity, motivating course participants to discuss the role and interaction of languages in their repertoire, makes them reflect on their multilingual identities. It allows educators to explore individuals’ DLCs in different contexts while navigating diverse global and local environments based on the principles of fairness and equality in education. Background: Community gardens are increasingly popular in Canadian cities, serving as transformative spaces where immigrants can develop self-reliant strategies for accessing culturally familiar and healthy nutritious foods. However, numerous facilitators and barriers exist that limit the engagement of racialized groups such as Black-identifying immigrants. Using a socio-ecological framework, this research explores barriers and facilitators of engagement of Black African immigrants in collective community gardening in Alberta, Canada. Methods: The study adopted a community-based participatory research (CBPR) approach using mixed methods. Data collection included structured surveys (n = 119) to assess general engagement, facilitators, and barriers; in-depth interviews (n = 10) to explore lived experiences; and Afrocentric sharing circles (n = 2) to probe collective perspectives in relation to engagement in collective gardening. Participants were purposefully recruited through community networks within African immigrant-serving community organizations. Results: Our findings revealed how barriers at various levels of the socio-ecological model (SEM) interact to shape the interest and engagement of African immigrants in collective community gardening. Access to collective gardens was associated with significant benefits, including maintaining healthy foodways, knowledge exchange, growing social capital, and community connections that support overall wellbeing. Conclusions: This study contributes an accessible framework for understanding and addressing the complex barriers that limit engagement in community gardens for vulnerable communities, while highlighting opportunities for creating more inclusive and culturally responsive urban agriculture initiatives. The anthropology of food is a sub-field of cultural anthropology interested in studying food and foodways. This article provides a concise overview of the anthropology of food, tracing its development from the early twentieth century to contemporary debates and emerging research trajectories. Drawing on foundational work by figures such as Boas and Malinowski, it shows how early anthropologists approached food as integral to understanding social organization, kinship, and cultural meaning. As the field evolved, structuralist, materialist, feminist, and political-economic perspectives broadened its scope, highlighting the symbolic significance of cuisine, the interplay between environment and subsistence, and the pivotal role of gender and class in shaping food practices. In recent decades, the anthropology of food has engaged intensively with globalization, investigating how transnational flows reshape culinary identities, local economies, and cultural heritage, as well as other significant topics. At the same time, emerging themes—such as multispecies perspectives, sensory studies, and the application of innovative methodologies—offer new lenses for understanding how food mediates relationships between humans, non-human beings, and environments. By examining case studies spanning regions from Africa and Asia to Europe and the Americas, this article illustrates how contemporary anthropologists use food as a prism to investigate cultural identity, social change, ethical relations, and the complex entanglements of local and global food systems. Foraging, the gathering of wild edibles for food and medicinal use, opens opportunities to connect with local environments and pursue sustainability and food sovereignty. We engage with insights from semi-structured qualitative interviews, participant observation, and site visits with individuals identifying as foragers and wildcrafters across Oklahoma to better understand foragers’ interactions with local wild food and foodscapes. We ask: Why do individuals in Oklahoma forage and/or wildcraft? How do foraging practices provide a pathway to support the creation of imagined foodways and foodscapes? We review the literature on foraging and foodways to situate foraging within alternative food systems and consider dimensions of sustainability and sovereignty within foodscapes. Foragers and wildcrafters reveal that their practices foster both tangible and non-tangible benefits, including deep connections with place and nature in the process of procuring wild edibles. While participants come to foraging in various ways, their strategies include engagement with sustainable practices and greater control and agency in food access. Building on the concept of ‘imagined foodways,’ we introduce ‘imagined foodscapes’ to illustrate foragers’ ability to create food practices and spaces based on their ideal methods of procuring and connecting with food. In this article, I explore the ways that women of the Korean diaspora engage in cultural meaning-making through material culture in efforts to redefine what it means for people, things, and ideas to be considered “authentically Korean”. Using the case study of famous internet chef Maangchi, I examine one of her best-selling cookbooks and her digital presence to identify the tactics she uses to exert agency in the meaning-making and community-building process, using Korean food and her role as a maternal figure as vehicles for analysis. Due to her roles as a mother and her positioning as a quintessential immigrant subject in the US context, I argue that Maangchi challenges colonial and Eurocentric models of cultural authenticity as part of a long history of women of color that actively disrupt social perceptions of value, expertise, and knowledge production. By exploring her business ventures, I consider how embedded pieces of knowledge, racialization, perceived expertise, and cultural assumptions are all connected to challenge the historical concepts and applications of authenticity in favor of a more inclusive, radical, and politically potent understanding of what truly makes something “Korean”. Pastoral nomadic regional confederations, states, and empires have assumed a prominent place in the histories of the Eurasian steppe zone; however, anthropological theory devoted to understanding these political systems is still debated and relatively inchoate. A major question concerns the techniques of political integration that might have brought together dispersed mobile herders under the aegis of these complex, large-scale steppe polities. The first such polity in East Asia, the Xiongnu state (c. 250 BC–150 AD) of Mongolia, has been characterized as a polity built by mobile herders, but in fact the steppe populations of this period followed quite diverse lifeways. Most notably, the establishment of more permanent settlements for craft and agricultural production has complicated the typical narrative of the pastoral nomadic eastern steppe. This study considers ways to conceptualize these interesting variations in lifeway during the Xiongnu period and raises the question of how they might have promoted a novel Xiongnu political order. We analyze transformations within the Egiin Gol valley of northern Mongolia to better understand the organizational, productive, and settlement dynamics and present the first regional landscape perspective on the local transformations incurred by the creation of a Xiongnu agricultural hub. To understand these radical changes with respect to the long-term pastoral nomadic and hunting-gathering traditions of the valley’s inhabitants, Salzman’s flexibility-based model of multiresource pastoralism is of great use. Egiin Gol valley transformations indeed attest to a scale of political economy far beyond the bounds of this local area and suggest an innovative role for indigenous farming in Eurasian steppe polity building. This article discusses the use of personal narratives in food media and journalism with a particular focus on podcasting. It situates the research amongst the abundance of lived experiences both in food content and in podcasting, two spaces that have been regarded as providers of the intimacy required to challenge impartiality practices in journalism. Given that the growth of podcasting has arguably failedto include enough non-mainstream voices, our primary research is based on four series of the Whetstone Radio Collective, a media organisation that aims to tell the stories of marginalised communities. Using content and thematic analysis, it establishes that the innovative use of first-person narratives of the hosts—who are overwhelming people of colour and embody stories of migration and displacement that mirror the food stories—is accompanied by conventional journalistic sourcing of experts who are already established voices based in the Global North. A recentring agenda is most obvious when it reclaims histories such as that of black farmers in the US, when it situates the consumption of foods as part of the global trade that drove the colonial project, or when it delves into and criticises foodways such as the social architecture of kitchens. Recent policy and scholarly attention to traditional food has highlighted its importance for developing culturally-appropriate sustainable diet interventions. Yet most approaches to traditional food maintain an unhelpful dichotomy between traditional and modern foodways. Ethnographic research into the ways people experience and articulate the substitution of previously homegrown foods with modern industrial foods can uncover aspects of local food heritage that have been previously hidden or undermined. The central aim of this paper is to demonstrate the usefulness of ethnographic approaches for recent policy debates around the importance of tradition for sustainable diets. An ethnographic ontology, which takes cultural meanings and values of ultra-processed foods as well as so-called traditional foods seriously, can provide a more nuanced picture of food system transitions that can inform sustainable dietary interventions. A combination of ethnographic methods was used for this paper, including participant observation, photo elicitation, questionnaires and go-along/shop-along interviews with N = 200 research participants. Subsequent ‘armchair’ research revealed important insights about Afrodescendant and Indigenous food heritage in Trinidad and Tobago, indicating the need for future research in this area. In particular, the findings suggest that cultural values of ‘colour’ and ‘(local) flavour’ connect old and new foodways in Trinidad and Tobago. Values of colour and flavour, along with shared feelings elicited through the ethnographic research such as concerns about agrochemical use and nostalgia for household food production, can inform the development of culturally-appropriate sustainable diet interventions. The 78 faunal remains recovered from the Ribadeo I shipwreck, identified as the San Giacomo di Galizia galleon found at the Ribadeo estuary of north-west Spain, represent a very small part of the meaty provisions that this 16th-century warship would have originally carried on board. Cattle, sheep, pig, goose and hake are the species identified in the three samples analysed. The number of cattle bulk-meat cuts from the axial skeleton and fore/hind leg quarters suggest beef was an important source of protein for the crew, with mutton and pork occupying a secondary position. Aging data demonstrate the consumption of meat from sub-adult and young individuals while the frequency and location of butchery marks indicate extensive processing of the carcasses into small manageable portions, particularly in the case of cattle. Recovery of a goose tarsometatarsus (low-yield meat bone) may point to live poultry on board, while a hake vertebra evidences the likely provision of stockfish. In sum, the archaeozoological analysis provides interesting information to gain some knowledge on foodways and the types of meat available on board this Spanish galleon. Full article

A pre-Columbian staple, Bactris gasipaes Kunth. is a palm tree domesticated around 4000 years ago, so appreciated that a Spanish chronicler wrote in 1545, “only their wives and children were held in higher regard” by the Mesoamerican natives. The peach palm is an integral part of the foodways and gastronomy of Ecuador, Colombia, Bolivia, Peru, Brazil, and other tropical American countries; meanwhile, it is almost unknown in the rest of the world, except for hearts of palm. Although abundant, the species faces anthropogenic threats. The purpose of this study is to describe and summarize the physicochemical, nutritional, and bioactive characteristics of the peach palm and its two main alimentary products: hearts of palm and fruits, highlighting the functional and antioxidant potential of the latter, showing both ancestral and modern uses. There is active research on peach palm products and coproducts that aim for better, more sustainable uses of its traditional and recently found properties. The review and presentation of studies on this strategically relevant species can motivate the protection of endangered populations and stimulate new lines of research to advance development in the food, pharmaceutical, and cosmetic industries, with fair trade, sustainable development goals, and adaptation to climate change in mind. There are collective movements of Indigenous food sovereignty (IFS) initiatives taking up place and space within urban environments across the Grand River Territory, within southern Ontario, Canada. Indigenous Peoples living within urban centres are often displaced from their home territories and are seeking opportunities to reconnect with culture and identity through Land and food. This research was guided by Indigenous research methodologies and applied community-based participatory research to highlight experiences from seven Indigenous community members engaged in IFS programming and practice. Thematic analysis revealed four inter-related themes illustrated by a conceptual model: Land-based knowledge and relationships; Land and food-based practices; relational principles; and place. Participants engaged in five Land and food-based practices (seed saving; growing and gathering food; hunting and fishing; processing and preserving food; and sharing and distributing), guided by three relational principles (responsibility, relationality, and reciprocity), framed by the social and physical environments of the place. Key findings revealed that employing self-determined processes to grow, harvest, and share food among the Indigenous community provide pathways towards IFS. This study is the first to explore urban IFS initiatives within this region, offering a novel understanding of how these initiatives are taking shape within urban environments. Full article

Over the last two decades, scholars and organizations across the world have carried out research projects and promoted dissemination tools aimed at promoting food and food-related elements embedded in local and traditional foodways. In this regard, the documentation of food and biocultural heritage has been seen as the starting point of processes directed toward their safeguarding and promotion. Drawing from this premise, the paper presents an original methodological approach, designed within the framework of the Ark of Taste project, to map, inventory, and document food and food-related resources to produce a comprehensive dissemination tool for the promotion of local food and biocultural heritage. To this end, the paper discusses the case study of the Atlas of the Ark of Taste in Tanzania, looking at the approach used, and the challenges faced, in undertaking field and desk activities aimed at inventorying Tanzanian food products and in the creating of the gastronomic atlas of this country. Drawing from this experience, the paper highlights the potentially crucial role that food and gastronomic inventories may have in achieving UN Sustainable Development Goals from a grassroots perspective. Acknowledging the limitations and possible unintended effects of these initiatives on the protection of food and biocultural resources, the authors recognize the promising role that these tools could have in fostering the achievement of environmental (SDGs 13, 14, 15) and social sustainability (SDGs 1, 2, 3, 10) objectives. The current food system is unsustainable and no longer able to cope with the challenges caused by climate change and consumer behaviours. In this context, agroecology, with its commitment to crossing disciplinary boundaries, has been endorsed as one of the main approaches to the creation of a sustainable food system. Despite this, the integration of the social research on food has not been evident enough in agroecology as a discipline. To be sure, studies related to foodways, food traditions, and, more recently, food heritage have long been present, and have provided important insights into the social and cultural aspects of food. However, there appears to be little convergence between this body of research and the mainstream agroecology literature. This paper aims to address this disconnection between the sociocultural and environmental aspects of the food system, and to propose ways of moving forward. We argue that knowledge about food heritage can be a catalyst for the achievement of agroecology’s vision for whole-system transformative change, and a moving towards global food security and nutrition. Using the agroecology framework of the United Nation’s Food and Agriculture Organization (FAO) and looking at the examples of the subak system in Indonesia and the EU-funded BigPicnic project, we employ the elements of ‘co-creation and sharing of knowledge’, ‘culture and food traditions’ and ‘human and social values’ as entry points for the creation of sustainable transitions of the food and agricultural systems. Community orchards could play a valuable role as nature-based solutions to complex challenges we face today. In these unique plantings, a variety of nut- and fruit-producing trees and berry shrubs are often established together on public spaces to provide the community with healthy, fresh food. Interest in these plantings has been increasing in the United States, even more so since the COVID-19 pandemic highlighted vulnerabilities in our food systems. However, the roots of community orchards can be traced back to Indigenous foodways which have persisted for millennia. Then and now, community orchards support an array of functions, positioning them to contribute to solutions to major challenges related to food security, human health, and climate resilience. In this paper, contemporary applications are considered for Indigenous communities in the US that seek to care for their communities and the environment. A case study of the Osage Orchard project in Pawhuska, OK, USA, highlights the value of reconnecting with cultural foods and practices of Osage ancestors, to meet the needs and preferences of a contemporary Indigenous community.
