Reducing food losses in apple production is becoming increasingly important, as the effects of climate change constitute a challenge to food production. Improving methods for determining fruit maturity at harvest leading to the longest storability is crucial, thereby facing more unpredictable seasonal weather conditions. In addition, the increasing temperature is affecting common maturity indices differently; thus, present practice may not be valid. In this study, a non-destructive, time-efficient method was used, tentatively indicating maturity. This study was performed during three climate-diverse years, reflecting more irregular climate conditions. Mid- to late-season cultivars ‘Frida’, ‘Ingrid Marie’, ‘Rubinstar’, and ‘Elise’ were harvested at different pre-determined IAD (index of absorbance difference) intervals and stored for five months. Correlations between IAD values at harvest and total losses after storage were found for all cultivars and years, while only a few correlations related to firmness after storage were found. Although a strong effect of year was related to correlations between IAD and different quality parameters, no noticeably general differences could be found between the exceptionally warm year in comparison to the other investigated years. IAD, as a maturity index, thus, seems to be resilient to changing temperatures and can be used as a complementary maturity index. Full article

Small-scale biogas systems can play a pivotal role in sustainable energy provision, particularly in developing countries. However, their dependence on livestock manure as the only feedstock poses challenges to their adoption and long-term viability. This often leads to insufficient biogas production and plant abandonment. This study proposes co-digestion of livestock manure with other farm residues to enhance the technical sustainability of small-scale biogas systems by ensuring adequate and consistent biogas production throughout the plant’s lifespan, minimizing the risks associated with reliance on a single feedstock. A novel feedstock selection approach is developed using the Analytic Hierarchy Process (AHP), a multicriteria decision-making method, to prioritize feedstocks based on adequacy, supply consistency, and logistical ease. AHP is chosen due to its capability to handle both quantitative and qualitative evaluation criteria. This approach is applied to the Fès-Meknès region of Morocco, which offers abundant livestock and crop residues alongside product utilization pathways. The prioritization and ranking of the potential feedstocks identified in the region reveals cattle manure as the top-ranked feedstock due to its consistent supply and ease of collection, followed by straw, valued for its storability and nutrient stability. Sheep, horse, and chicken manure ranked third, fourth, and fifth, respectively, while household food waste and fruit and vegetable residues, limited by seasonality and perishability, were ranked lower. Based on these findings, co-digestion of cattle manure and straw is proposed as a sustainable strategy for small-scale biogas plants in Fès-Meknès, addressing feedstock shortages, enhancing biogas production, and reducing plant abandonment. This approach strengthens technical sustainability and promotes the broader adoption of biogas technologies in developing countries. Full article

This study assessed the technological potential and bioactive compounds present in purple yampee (Dioscorea trifida L.f.) lyophilized powder, peeled and whole flour, as well as the tuber peel, starch residual fiber, and wastewater mucilage. Although most values approached neutrality, flour showed a lower pH and high density, while greater acidity was observed in the mucilage. Color differed statistically and perceptibly between all samples, with similar values of °hue to purple flours from other sources, and the maximum chroma was found in lyophilized pulp and lightness in fiber. Average moisture levels around 7.2% and water activity levels of 0.303 (0.194 for whole flour) in fractions suggested favorable storability, while the interaction of the powders with water was similar to other root and tuber powdered derivatives. Yampee periderm had the highest swelling power, oil absorption capacity, water holding capacity, and absorption index and capacity. Mucilage had a higher solubility index and outstanding emulsion activity, greater than 90%. Twelve anthocyanins, with new reports of petunidin derivatives for the species, and more than 30 phytochemicals were identified through advanced liquid chromatography techniques. The greatest amounts of pinitol and myo-inositol were found in the mucilage, and sucrose, glucose, and fructose prevailed in the other powders. Successfully characterized yampee fractions showed high potential as functional food ingredients. Full article

The increasing global population has heightened the demand for food, leading to escalated food production and, consequently, the generation of significant food waste. Factors such as rapid ripening, susceptibility to physiological disorders, and vulnerability to microbial attacks have been implicated as contributing to the accelerated senescence associated with food waste generation. Fruits and vegetables, characterized by their high perishability, account for approximately half of all food waste produced, rendering them a major area of concern. Various postharvest technologies have thus been employed, including the application of phytohormone treatments, to safeguard and extend the storability of highly perishable food products. This review, therefore, explores the physicochemical properties and biological aspects of phytohormones that render them suitable for food preservation. Furthermore, this review examines the effects of externally applied phytohormones on the postharvest physiology and quality attributes of fresh produce. Finally, the review investigates the mechanisms by which exogenous phytohormones preserve food quality and discusses the associated limitations and safety considerations related to the use of these compounds in food applications. Fresh-cut fruits, renowned for their convenience and nutritional value, are susceptible to rapid deterioration, compromising their quality and shelf life. In this study, a sustainable and environmentally friendly edible coating was developed based on sodium alginate (SA; 1% w/v), cedar mucilage (CM; 4% w/v), and calcium chloride (2% w/v), applied using a layer-by-layer technique to preserve the quality and prolong the shelf life of fresh-cut melon. Fruits were cut into cubes coated or uncoated by dipping and subsequently packaged in a polyethylene terephthalate container and stored for 15 days at 4 °C. Physicochemical traits and qualitative features such as polyphenol, flavonoid, carotenoid, ascorbic acid content, as well as antioxidant activity, were assessed. Furthermore, the enzymatic antioxidant system and the ascorbate–glutathione cycle were investigated. The coating reduced weight loss and enhanced polyphenol, flavonoid, and ascorbic acid content and antioxidant activity during cold storage. Edible coating (SA + CM) represents a valid tool to extend the postharvest life, improve the storability, and enhance the physicochemical and qualitative traits of fresh-cut melon. Further research is required to optimize coating formulations and application techniques to maximize their effectiveness and commercial viability in the food industry. Full article

Water yam (Dioscorea alata), also known as winged yam, is one of the most economically significant yam species, serving as a staple food crop in tropical and subtropical regions. Its widespread cultivation is due to its favorable agronomic characteristics, including high yield, improved tuber storability, and significant nutritional and health benefits. Despite these advantages, water yam often remains underutilized due to consumer biases towards its traditional food product quality, particularly for pounded yam preparations. In this study, we evaluated fifty-eight improved genotypes of water yams grown across three locations to assess their potential to produce superior food qualities comparable to the widely consumed white yams (D. rotundata). Seven white yams, including popular landraces, were used to set thresholds for desirable food quality. Through standardized analysis, yam samples were assessed for their biochemical composition and culinary and sensory texture attributes. The results revealed varying ranges of dry matter (DM), starch, sugar, protein, crude fiber (CF), fat, and amylose, spanning from 20.35 to 35.95 g/100 g, 42.81 to 83.31 g/100 g, 4.76 to 6.95 g/100 g, 4.33 to 6.62 g/100 g, 1.55 to 3.89 g/100 g, 0.32 to 0.53 g/100 g, and 29.27 to 38.52 g/100 g, respectively. The mean values (±SD) were found to be 29.85 ± 4.0 g/100 g (DM), 67.90 ± 44g/100 g (starch), 5.82 ± 0.64 g/100 g (sugar), 6.31 ± 1.31 g/100 g (protein), 2.14 ± 0.57 g/100 g (crude fiber), 0.44 ± 0.08 (fat), and 33 ± 16.43 g/100 g (amylose). Significant effects (p < 0.001) of the planting environments and genotypes on the biochemical composition of the yam samples were observed, except for the sugar content. Furthermore, specific water yam genotypes, such as TDa 0900354, TDa 9801174, TDa 1401619, TDa 1400301, TDa 140091, TDa 0100029, TDa 1100793, TDa 1401249, TDa 1100242, and TDa 1401276, exhibited biochemical properties and culinary and sensory textural attributes akin to the improved white yam genotypes and their landrace counterparts. These findings underscore the potential for promoting selected water yam genotypes to diversify food options and reduce reliance on a limited array of crops, particularly in traditional food-insecure regions of tropical Africa. Seed deterioration during storage poses a significant challenge to rice production, leading to a drastic decline in both edible quality and viability, thereby impacting overall crop yield. This study aimed to address this issue by further investigating candidate genes associated with two previously identified QTLs for seed storability through genome association analysis. Among the screened genes, two superoxide dismutase (SOD) genes, OsCSD2 (Copper/zinc Superoxide Dismutase 2) and OsCSD3, were selected for further study. The generation of overexpression and CRISPR/Cas9 mutant transgenic lines revealed that OsCSD2 and OsCSD3 play a positive regulatory role in enhancing rice seed storability. Subsequent exploration of the physiological mechanisms demonstrated that overexpression lines exhibited lower relative electrical conductivity, indicative of reduced cell membrane damage, while knockout lines displayed the opposite trend. Furthermore, the overexpression lines of OsCSD2 and OsCSD3 showed significant increases not only in SOD but also in CAT and POD activities, highlighting an augmented antioxidant system in the transgenic seeds. Additionally, hormone profiling indicated that ABA contributed to the improved seed storability observed in these lines. In summary, these findings provide valuable insights into the regulatory mechanisms of OsCSDs in rice storability, with potential applications for mitigating grain loss and enhancing global food security. Pineapple fruit, which is cultivated in tropical and subtropical areas, is processed by the food industry, generating a large amount of waste. Using pineapple by-products in animal nutrition could reduce feeding costs and contribute to the containment of pollution. The chemical composition and the in vitro fermentation of five pineapple by-products (crown, bud end, peel, core, and pomace) from two West African pineapple varieties (Smooth Cayenne—SC and Sugarloaf—SL) were evaluated. Significant differences were observed between the varieties and by-products. The dry matter (DM) content was low and superimposable between varieties, averaging 17.7%. On a DM basis, pomace showed the highest protein content (SC 8.10% and SL 8.81%, p < 0.001), whereas the crown showed the highest (p < 0.001) NDF content (47.62% and 39.01% for SC and SL, respectively). Due the high sugar content, the core and pomace showed high in vitro organic matter degradability (SC: 85.09% and SL: 83.98%), estimated metabolizable energy (SC: 7.91 KJ/kg and SL: 7.66 KJ/kg), and volatile fatty acid production (96.86 mmol/g and 90.62 mmol/g). Based on chemical composition and in vitro digestibility results, this study suggests that pineapple by-products have the potential to be used in ruminants’ diets, considering the crown, bud end, and peel as fiber sources and the core and pomace as substitutes or supplements to concentrate feedstuffs. Further research should be conducted on the storability of these by-products through in vivo trials evaluating animals’ performances and the quality of their products. Full article

Biodegradable packaging materials generally comprise a solution to the environmental problem caused by the consecutive use of conventional packaging materials (petroleum-based materials) even though these have a high cost. The monomers resulting from the slow degradation of petroleum-based materials contribute to the pollution of the environment. Biodegradable packaging materials distinguished by high biodegradability and biocompatibility can successfully replace the aforementioned packaging materials and thus solve the environmental problems caused by their use or deposition. Although several of the biodegradable packaging materials present defective properties, mainly mechanical and barrier properties, these are reduced or even eliminated by the addition of various improving additives and by blending them with other biopolymers. Various natural preservatives such as essential oils or other phytochemical extracts can also be incorporated into the biopolymer network to increase its efficacy. This treatment is particularly beneficial since it contributes to the increasing of the shelf life and storability of packaged foods such as fruits, vegetables, dairy products, meat and its products, poultry, and fish. For all the above reasons, the preferences of consumers and the critical thinking/decisions of the food product manufacturing industries in favor of the potential use of biodegradable packaging materials in foods are increasing more and more. In this context, the present review article addresses the most recently used biodegradable packaging materials for foods preservation by presenting their sources, advantages, limitations, and future perspectives. This study investigated the trait preferences for cassava in the context of climate change and conflict stressors among value-chain actors in Nigeria to strengthen social inclusion and the community-resilience outcomes from breeding programs. Multi-stage sampling procedures were used to select and interview male and female value-chain participants in the Osun, Benue and Abia States. The results indicated that farmers preferred cassava traits such as drought tolerance, early bulking, multiple-product use and in-ground storability to strengthen resilience. Climate change and challenges related to social change shaped the response strategies from both genders, and influenced trait preferences, including the early re-emergence of cassava leaves, stems that had ratooning potential, and especially the root milking that was important among female respondents. The major response strategies employed by men included frequent farm visits to prevent theft and engaging in non-agricultural livelihoods. Those employed by women included backyard farming, early harvesting, having preferences for food with fewer processing steps, and depending on remittances. The resilience capacity was higher for men than for women due to their better access to assets, as well as their abilities to relocate their farms and out-migrate in search of other livelihoods. Considering gendered cassava traits, and enhancing their resilience and response strategies, can complement efforts to make breeding more socially inclusive, resilient, and anticipatory to future challenges created by climate and related social changes. Cookies made from wheat have become increasingly popular as a snack due to their various advantages, such as their convenience as a ready-to-eat and easily storable food item, wide availability in different types, and affordability. Especially in recent years, there has been a trend towards enriching food with fruit additives, which increase the health-promoting properties of the products. The aim of this study was to examine current trends in fortifying cookies with fruits and their byproducts, with a particular focus on the changes in chemical composition, antioxidant properties, and sensory attributes. As indicated by the results of studies, the incorporation of powdered fruits and fruit byproducts into cookies helps to increase their fiber and mineral content. Most importantly, it significantly enhances the nutraceutical potential of the products by adding phenolic compounds with high antioxidant capacity. Enriching shortbread cookies is a challenge for both researchers and producers because the type of fruit additive and level of substitution can diversely affect sensory attributes of cookies such as color, texture, flavor, and taste, which have an impact on consumer acceptability. The demand for ready-to-use functional foods is high, which encourages manufacturers to develop new, nutritionally valuable products. As an excellent source of biologically active compounds, beetroot (Beta vulgaris L.) is considered to have highly beneficial effects on health. This research aimed to evaluate the impact of replacing spelt flour (SF) with 15%, 20% and 25% beetroot powder (BP). The physicochemical and functional properties of biscuits baked at different temperatures (150 and 170 °C) were followed at the beginning, and after 3 and 6 months of storage as standard conditions. Moisture content and water activity (aw) gave insight into the biscuits’ shelf life. The value of aw from 0.35 to 0.56 indicated appropriate storability. Dietary fiber content in fresh biscuits ranged from 6.1% to 7.6%, protein from 9.2% to 8.9% and sugar from 30.6% to 35.9%. The content of betalain, total polyphenols and flavonoids, and antioxidant activity (DPPH, FRAP) increased with beetroot powder content incorporated. A slight decrease of all the mentioned parameters during the storage indicated satisfied retention of bioactive molecules. The content of prevalent phenolic compounds gallic and protocatechuic acid, identified by HPLC, decreased from 22.2–32.0 and 21.1–24.9 in fresh biscuits to 18.3–23.4 and 17.3–20.3 mg/100 g upon six months of storage, respectively. An increase of the L* and a* and a decrease of the b* coordinate values, compared with the control sample without beetroot values, was noticed as well as the expected level of their change during the storage. The obtained results indicated that biscuits enriched with beetroot powder showed a significantly improved functional, nutritional and antioxidant potential during storage. Full article

Regionally Adapted Model of an Ideal Malus×domestica Borkh Apple Variety for Industrial-Scale Cultivation in European Russia

Apple is one of the most common fruit crops in the Russian fruit-growing industry, with huge varietal diversity and a vast cultivation area. The key regions for industrial-scale apple cultivation are the Central, Central Chernozem, and North Caucasian Districts. The main disadvantage of the relevant apple cultivars, especially the ones intended for intensified horticultural practices, is their low resistance against abiotic stresses and the fruit’s low quality and poor marketable condition. In Russia, apple is a crop of strategic importance that is consistently included in the household food basket, so fruit producers hold new varieties to higher standards and expect them to outperform their predecessors in terms of yield per plant, resistance against abiotic and biotic stresses, and quality, as well as show strong competitiveness and a more rapid return on investment, while satisfying stricter requirements. The objective of the present study was to summarize the data on the phenotypic manifestations of economically valuable traits of the apple cultivars approved for use in the Russian Federation depending on the region of cultivation; to determine the parametric characteristics of the most valuable traits in the form of a model of an “ideal” regionally adapted industrial cultivar, and to identify the sources of the traits in the regions suitable for their production. A regionally adapted model of commercial apple cultivars, characterized by 28 features and properties divided into three groups and defining the cultivar’s resistance against abiotic and biotic stresses, yield per plant, product quality, and suitability for mechanized harvesting, is presented in this paper. In the European part of Russia, the optimal parameters of a commercial apple tree cultivar are as follows: plant height on a medium-sized rootstock under 3 m; potential yield per plant of at least 25–50 kg; high fruit uniformity above 80%; winter and late-winter harvest maturity period; high storability of over 210 days and good transportability; average fruit mass from 120 g to 220 g; juicy and shattering crisp pulp; small seed cavity; fragrant fruits with taste rating of at least 4.5 points; appearance rating of 5 points and attractive, mostly red, glossy color with natural wax bloom; regular, symmetric, but diverse shapes; content of sugar above 10%, ascorbic acid above 15 mg/100 g, organic acids up to 1% (for dessert varieties); content of soluble dry solids of at least 20%. The cultivars that come closest to the regionally adapted model of an ideal variety based on the set of features discussed are as follows: Feya, Soyuz, Orfej, Margo, Sirius, Noktyurn, Vasilisa Karmen, Florina, Dayton, Early Mac, Gala and Gala Schniga in the North Caucasian District; Svezhest’, Orlovskoe Poles’e, Aprel’skoe, Ven’yaminovskoe, Bolotovskoe, Vympel, Uspenskoe, Fregat, Bylina, Flagman, and Akademik Kazakov in the North Caucasian District; and varieties Imrus, Mayak Zagor’ya, and Bolotovskoe in the Central District. These cultivars are characterized by high resistance against weather anomalies, scab immunity, high yields, marketable quality, and storability. In addition, in southern regions, a prolonged bloom period acts as a protective adaptive response to low-temperature stress. Full article

On-Farm Multi-Environment Evaluation of Selected Cassava (Manihot esculenta Crantz) Cultivars in South Africa

Cassava is an important starchy root crop grown globally in tropical and subtropical regions. The ability of cassava to withstand difficult growing conditions and long-term storability underground makes it a resilient crop, contributing to food and nutrient security. This study was conducted to evaluate the performance and adaptability of exotic cassava cultivars across different environments in South Africa and to recommend genotypes for cultivation. A total of 11 cassava cultivars were evaluated at six on-farm sites, using a randomized complete block design with three replications. There were highly significant (p < 0.001) variations between genotypes, environments, and their interaction for all yield and yield-related traits studied. This indicates the need to test the genotypes in multiple environments before effective selection and commercialization can be undertaken. MSAF2 and UKF4 showed the overall best performances for most of the traits, whilst UKF9 (49.5%) and P1/19 (48.5%) had the highest dry matter yield. UKF4 (102.7 t ha−1) had the highest yield and greatest root yield stability across environments. MSAF2 did not perform consistently across environments because it was highly susceptible to cassava mosaic disease (CMD). MSAF2 could be used as a donor parent to generate novel clones with large numbers of marketable roots, and high fresh root yields, if the other parent can provide effective resistance to CMD. Based on genotype and environmental mean, Mabuyeni (KwaZulu-Natal), Mandlakazi (Limpopo), and Shatale (Mpumalanga) were found to be better environments for cassava cultivation and testing. This study is a pioneer in cassava research using multiple environments in South Africa. It provides baseline information on the performance of currently available cassava clones, their adaptation to multiple sites, the identification of suitable test sites, and information on current genetic resources for a future breeding program. The rice quality and starch functional properties, as well as the storability of three YY-IJHR cultivars, which included YY12 (biased japonica type YY-IJHR), YY1540 (intermedius type YY-IJHR) and YY15 (biased indica type YY-IJHR), were studied and compared to N84 (conventional japonica rice). The study results suggested that the three YY-IJHR varieties all had greater cooking and eating quality than N84, as they had lower amylose and protein content. The starch of YY-IJHR has a higher pasting viscosity and digestibility, and there was a significant difference among the three YY-IJHR cultivars. Rice aroma components were revealed by GC-IMS, which indicated that the content of alcohols vola-tile components of YY-IJHR were generally lower, whereas the content of some aldehydes and esters were higher than N84. In addition, YY-IJHR cultivars’ FFA and MDA contents were lower, which demonstrated that YY-IJHR had a higher palatability and storability than those of N84 in fresh rice and rice stored for 12 months. In conclusion, this study suggested that YY-IJHR had better rice quality and storability than N84. PCA indicated that the grain quality and storability of YY12 and YY15 were similar and performed better than YY1540, while the aroma components and starch functional properties of YY-IJHR cultivars all had significant differences.
