Research on Sustainable Food Literacy Education Talent Cultivation

This research aims to develop a model for cultivating talents in sustainable food literacy education in Taiwan. The project adopts the professional and theoretical axes of the food industry, sustainable development, and food literacy. The research employs a mixed-method approach, combining qualitative and quantitative techniques, to construct sustainable food literacy assessment indicators for Taiwan. In the first year, through literature analysis and qualitative research, the core content of “sustainable food literacy” in Taiwan was extracted, resulting in four major dimensions with 24 indicator items. Then, using the Fuzzy Delphi method, the indicators were constructed, defining the core content and dimension indicators of sustainable food literacy, which include “sustainable agriculture and production”, “healthy diet and culture”, “green environmental protection and consumption”, and “food social responsibility and ethics”, encompassing a total of 20 indicators. In the second year, based on the dimensions identified in the first year, a sustainable food literacy curriculum was developed. A 10-week quasi-experimental teaching curriculum was conducted for students enrolled in the “Vegetable and Fruit Carving” elective course in two classes of the Department of Food and Beverage Management at Jingwen University of Science and Technology. By comparing the pre-test and post-test scores of students’ sustainable food literacy and their sustainable food works, as well as analyzing student learning portfolios and teacher reflections, it was shown that the curriculum developed in this research significantly enhanced students’ sustainable food literacy and their performance. The results of this two-year study can be used for the assessment of sustainable food literacy talents in Taiwan, contributing both academically and practically. Full article

Background/Objectives: The social importance of health literacy (HL) is widely understood, and its measurement is the subject of various studies. Due to the recent pandemic, several instruments for measuring HL about COVID-19 have been proposed in different countries, including the HLS-COVID-Q22 questionnaire. The diversity of cultures and languages necessitates the cross-cultural adaptation of this instrument. Thus, the present study translates, adapts, and validates the psychometric properties of the HLS-COVID-Q22 questionnaire to provide its cross-cultural adaptation from English to Spanish (Peru). Methods: As part of ensuring that the final questionnaire accommodates the cultural nuances and idiosyncrasies of the target language, the following activities were carried out: (a) a survey of 40 respondents; and (b) a focus group with 10 participants, followed by expert approval. In addition, the validity and reliability of the health instrument have been ascertained through a further pilot test administered to 490 people in the city of Tacna in southern Peru. Results: The resulting questionnaire helps measure HL in Peru, aiding better-informed decision-making for individual health choices. Conclusions: The presence of such a tool is advantageous in case of similar global health emergencies, when the questionnaire can be made readily available to support a promotion of strategies towards better self-care. Moreover, it encourages other Latin American stakeholders to adjust the instrument to their own cultural, language, and socio-economic contexts, thus invigorating the regional and global expansion of the HL study network. In the era of generative artificial intelligence, writing has evolved into a programmable practice capable of generating sustainable narratives and preserving cultural heritage through poetic prompts. This study proposes “Writing Is Coding ” as a paradigm for sustainability education, exploring how students engage with AI-mediated multimodal creation to address environmental challenges. Using grounded theory methodology with 57 twelfth-grade students from technology-integrated high schools, we analyzed their experiences creating environmental stories and digital cultural artifacts using MidJourney, Kling, and Sora. Data collection involved classroom observations, semi-structured interviews, and reflective journals, analyzed through systematic coding procedures (κ = 0.82). Five central themes emerged: writing as algorithmic design for sustainability (89.5%), emotional scaffolding for environmental awareness (78.9%), aesthetics of imperfection in cultural preservation (71.9%), collaborative dynamics in sustainable creativity (84.2%), and pedagogical value of prompt literacy (91.2%). Findings indicate that AI deepens environmental consciousness and reframes writing as a computational process for addressing global issues. This research contributes a theoretical framework integrating expressive writing with algorithmic thinking in AI-assisted sustainability education, aligned with SDGs 4, 11, and 13. Full article

Grounded in health behavior theory, this study examined patterns of preventive health behavior in a culturally diverse, multilingual region of northern Italy using data from a representative population survey (n = 2090). Preventive behaviors were assessed using the 16-item Good Health Practices (GHP-16) scale. Latent profile analysis (LPA) identified five behavioral profiles, ranging from ‘Globally Low Engagers’ to ‘Comprehensive High Engagers’. Binary logistic regression compared ‘Globally Low Engagers’ to ‘Broadly Moderate Preventers’, examining predictors including gender, age, education, language, chronic disease status, health literacy (HLS-EU-Q16), patient activation (PAM-10), mistrust of health information, living situation, and healthcare employment. The results showed that men, younger adults, individuals with low patient activation, those living alone, and respondents with high mistrust of health information had higher odds of belonging to the low engagement group. Health literacy and language group membership were not significantly associated with the profile membership. Item-level comparisons revealed gender differences in information-seeking, oral hygiene, and dietary behaviors, with men reporting lower engagement. These findings support a segmentation-based understanding of preventive health behavior and highlight the need to address personal capacities and contextual barriers in interventions while challenging assumptions of uniformly higher female health vigilance. Sustainable education requires addressing the challenges posed by digital transformation, including technostress among university students. This study evaluates technostress levels in higher education through the validation of the TS4US scale and its implications for sustainable learning environments. A cross-sectional study was conducted with 328 university students from four districts in Lima, Peru, using an online survey to measure technostress. Confirmatory factor analysis (CFA) was performed to assess the psychometric properties of the TS4US scale, resulting in a refined model with two latent factors and thirteen validated items. Findings indicate that 28% of students experience high technostress levels, while 5% report very high levels, though no significant associations were found between technostress and sociodemographic variables such as campus location, employment status, gender, and academic level. The TS4US instrument had been previously validated in Chile; this study confirms its structure in a new sociocultural context, reinforcing its cross-cultural applicability. These results highlight the need for sustainable strategies to mitigate technostress in higher education, including institutional support, digital literacy programs, and policies fostering a balanced technological environment. Addressing technostress is essential for promoting sustainable education (SDG4) and enhancing student well-being (SDG3). This study directly contributes to the achievement of Sustainable Development Goals 3 (Good Health and Well-being) and 4 (Quality Education) by providing validated tools and evidence-based recommendations to promote mental health and equitable access to digital education in Latin America. Future research should explore cross-country comparisons and targeted interventions, including digital well-being initiatives and adaptive learning strategies, to ensure a resilient and sustainable academic ecosystem. This study explores digital inequality as a socio-spatial phenomenon within the context of smart inclusion, focusing on the Regional Unit of Xanthi, Greece—a region marked by ethno-cultural diversity and pronounced urban–rural contrasts. Using a mixed-methods design, this research integrates secondary quantitative data with qualitative insights from semi-structured interviews, aiming to uncover how spatial, demographic, and cultural variables shape digital engagement. Geographic Information System (GIS) tools are employed to map disparities in internet access and ICT infrastructure, revealing significant gaps linked to geography, education, and economic status. The findings demonstrate that digital inequality is particularly acute in rural, minority, and economically marginalized communities, where limited infrastructure intersects with low digital literacy and socio-economic disadvantage. Interview data further illuminate how residents navigate exclusion, emphasizing generational divides, perceptions of technology, and place-based constraints. By bridging spatial analysis with lived experience, this study advances the conceptualization of digitally inclusive smart regions. It offers policy-relevant insights into how territorial inequality undermines the goals of smart development and proposes context-sensitive interventions to promote equitable digital participation. The case of Xanthi underscores the importance of integrating spatial justice into smart city and regional planning agendas. Full article

Urban wetlands are increasingly recognized for their ecological and cultural benefits, yet remain underutilized due to limited public awareness and environmental literacy. This study investigates how visitors’ perceptions of wetland ecosystem services influence their motivations to engage with a constructed wetland in Putrajaya, Malaysia. By integrating the ecosystem services framework with push-pull motivation theory, the research aims to bridge knowledge gaps and inform sustainable wetland tourism planning. A structured questionnaire was administered to 420 visitors, with 385 valid responses (response rate: 91.7%). Data were analyzed using non-parametric tests (Kruskal–Wallis, Spearman correlation) and multiple regression analysis. Results show that cultural and regulating services are perceived most positively, while emotional restoration and aesthetic appreciation emerged as key motivational drivers. Regression findings reveal that push factors are stronger predictors of ecosystem service engagement than pull factors. These insights highlight the importance of emotional and psychological connections to nature, offering practical implications for urban wetland management, visitor education and environmental communication strategies. Accepting a certain degree of investment loss risk is essential for long-term portfolio management. However, overconfidence bias within financial literacy can prompt excessively risky behavior and amplify susceptibility to other cognitive biases. These tendencies can undermine investment loss tolerance beyond the baseline level shaped by sociodemographic, economic, psychological, and cultural factors. This study empirically examines the association between overconfidence and investment loss tolerance, which is measured by the point at which respondents indicate they would sell their investments in a hypothetical loss scenario. Using a large-scale dataset of 161,765 active investors from one of Japan’s largest online securities firms, we conduct ordered probit and ordered logit regression analyses, controlling for a range of sociodemographic, economic, and psychological variables. Our findings reveal that overconfidence is statistically significantly and negatively associated with investment loss tolerance, indicating that overconfident investors are more prone to prematurely liquidating assets during market downturns. This behavior reflects an impulse to avoid even modest losses. The findings suggest several possible practical strategies to mitigate the detrimental effects of overconfidence on long-term investment behavior. Full article

This study investigates the impact of family engagement on student reading achievement in the United Arab Emirates (UAE) using counterfactual explainable artificial intelligence (CXAI) analysis. Drawing data from 24,600 students in the UAE PISA dataset, the analysis employed Gradient Boosting, SHAP (SHapley Additive exPlanations), and counterfactual simulations to model and interpret the influence of ten parental involvement variables. The results identified time spent talking with parents, frequency of family meals, and encouragement to achieve good marks as the strongest predictors of reading performance. Counterfactual analysis revealed that increasing the time spent talking with parents and frequency of family meals from their minimum (1) to maximum (5) levels, while holding other variables constant at their medians, could increase the predicted reading score from the baseline of 358.93 to as high as 448.68, marking an improvement of nearly 90 points. These findings emphasize the educational value of culturally compatible parental behaviors. The study also contributes to methodological advancement by integrating interpretable machine learning with prescriptive insights, demonstrating the potential of XAI for educational policy and intervention design. Implications for educators, policymakers, and families highlight the importance of promoting high-impact family practices to support literacy development. The approach offers a replicable model for leveraging AI to understand and enhance student learning outcomes across diverse contexts. Full article

This study explores English language teachers’ beliefs and practices regarding assessment and associated training needs in two diverse European educational contexts: Norway and Cyprus. Using a quantitative approach, the research employed survey questionnaires completed by 134 Norwegian and 396 Cypriot teachers. Analysis, including chi-square and Mann–Whitney tests, revealed important foundational beliefs and practices of language assessment literacy (LAL), alongside distinct practices influenced by contrasting educational systems and socio-cultural landscapes. Context emerged as a critical factor shaping teachers’ confidence, knowledge, and professional development needs in assessment. Findings highlight the importance of integrating culturally responsive frameworks into LAL development programs to better address diverse educator needs. Recommendations are also provided for designing localized, context-sensitive teacher training initiatives and fostering collaborative practices to bridge gaps in LAL. The study concludes by highlighting future research directions to expand understanding of LAL in multicultural settings. Full article

The use of AI-generated content in education is significantly increasing, but its reliability for teaching natural sciences and, more specifically, biodiversity-related contents still remains understudied. The need to address this question is substantial, considering the relevance that biodiversity conservation has on human sustainability, and the recurrent presence of these topics in the educational curriculum, at least in Spain. The present article tests the existence of biases in some of the most widely used AI tools (ChatGPT-4.5, DeepSeek-V3, Gemini) when asked a relevant and objective research question related to biodiversity. The results revealed both taxonomic and geographic biases in all the lists of endangered species provided by these tools when compared to IUCN Red List data. These imbalances may contribute to the perpetuation of plant blindness, zoocentrism, and Western centrism in classrooms, especially at levels where educators lack specialized training. In summary, the present study highlights the potential harmful impact that AI’s cultural and social biases may have on biodiversity education and Sustainable Development Goals-aligned learning and appeals to an urgent need for model refinement (using scientific datasets) and teacher AI literacy to mitigate misinformation. Background: The number of people with heart failure (HF) is rapidly increasing globally. Self-care plays a key role in improving HF outcomes. The readiness to engage in heart failure self-care (HFSC) behaviors encompasses a commitment to change and the capacity to make the change. Commitment is a personal investment and value toward enacting self-care and health-related behaviors. Capacity includes an individual’s skills, knowledge, beliefs, previous experience, and resources. Aim: The aim of this study was to describe patient-identified commitment and capacity factors influencing their readiness to carry out HFSC behaviors. Methods: A qualitative study using thematic analysis was conducted using data from 21 interviews to develop readiness for HFSC themes. Results: The commitment themes identified were cultural values and beliefs, social roles, will to live, attitude, self-efficacy, HF perceptions, and general emotional state. Capacity themes included HF literacy, functional capacity, environmental resources, comorbidities, time, cognitive functioning, and social support. Conclusions: Novel themes related to an individual’s commitment to HFSC activities included their will to live and social roles, while time emerged as a consideration in the capacity to engage in self-care. To optimize HF outcomes, people with HF must be ready to engage in HFSC. Evaluating an individual’s readiness for HFSC can focus healthcare team efforts on targeting specific self-care activities that require intervention. Enhancing readiness by intervening with specific commitment and capacity factors is a step toward optimizing HFSC and improving patient outcomes. Full article

Reproductive health literacy (RHL) is essential to women’s ability to make informed reproductive health (RH) decisions and is a key determinant of RH outcomes. Resettled refugee women often experience poorer RH outcomes, yet there is limited research on their RHL and its influence on RH decision-making. This scoping review aims to (1) to evaluate existing methods for measuring RHL among resettled refugee women and (2) to characterize the relationship between RHL, RH decision-making, behavior, and outcomes among refugee women residing in high-income countries. A search of peer-reviewed literature published in English found limited direct measurement of RHL. Measurement methods were primarily qualitative or based on unvalidated survey instruments, limiting comparability and generalizability. The current methodologies do not adequately capture RH knowledge or RHL proficiency. A range of additional factors were found to influence RH decision-making and behavior, supporting the need for a means to accurately measure RHL. Further quantitative research is needed to clarify the extent to which RHL and knowledge influence RH behavior and outcomes. The development of a culturally relevant, validated RHL instrument that integrates knowledge and contextual influences would support healthcare providers and public health agents in serving and designing effective interventions for refugee women post-resettlement. This conceptual paper explores how artificial intelligence—particularly machine learning-based algorithmic systems—is reshaping cultural transmission and symbolic power in the digital age. It argues that algorithms operate as cultural agents, acquiring a form of operative agency that enables them to intervene in the production, circulation, and legitimation of meaning. Drawing on critical pedagogy, sociotechnical theory, and epistemological perspectives, the paper introduces an original framework: Critical Algorithmic Mediation (CAM). CAM conceptualizes algorithmic agency through three interrelated dimensions—structural, operational, and symbolic—providing a lens to analyze how algorithmic systems structure knowledge hierarchies and cultural experience. The article examines the historical role of media in cultural transmission, the epistemic effects of algorithmic infrastructures, and the emergence of algorithmic hegemony as a regime of symbolic power. In response, it advocates for a model of critical digital literacy that promotes algorithmic awareness, epistemic justice, and democratic engagement. By reframing education as a space for symbolic resistance and cultural reappropriation, this work contributes to rethinking digital literacy in societies increasingly governed by algorithmic infrastructures. Digital Youth Activism on Instagram: Racial Justice, Black Feminism, and Literary Mobilization in the Case of Marley Dias

This paper examines how Marley Dias’ activism on Instagram promotes racial justice, Black feminist thought, and youth mobilization through digital storytelling, representation, and audience engagement. Using a mixed-methods analysis of 744 posts published between 2016 and 2025, the study combined critical thematic coding, temporal mapping, and engagement metrics to analyze the discursive and emotional strategies behind Dias’ activism. Five key themes were identified as central to her activist work: diversity in literature, lack girl empowerment, racial justice, Black representation, and educational advocacy. The findings reveal that Dias strategically tailors her messages to suit Instagram’s unique features, using carousels and videos to enhance visibility, foster intimacy, and provide depth in education. Posts that focused on identity, aesthetics, and empowerment garnered the highest levels of engagement, while posts that concentrated on structural issues received lower, yet still significant, interaction. The paper argues that Dias’ Instagram account serves as a dynamic platform for youth-led Black feminist resistance, where cultural production, civic education, and emotional impact converge. This case underscores the political potential of digital literacies and encourages a reconsideration of how youth-driven digital activism is reshaping contemporary public discourse, agency, and knowledge production in the social media age.
