This is a very interesting article, which is of value for the scientific community as well as the industry. some of the discussion parts are  a little superficial and not focussed. The research is closely related to the work  published by Cantabella et al. 2021. A paragraph on the actual cost/energy/carbon footprint should be added in comparison to the current processes. 

Is there any  secondary metabolites in the juice which could be  negative to the growth of the microorganisms?

I think, this is an quite good manuscript. The results of this study provide new knowledge for scientists and for practitioners. These results bring some knowledge of the given topic. Major corrections should be made and it should be re-reviewed:

  1. Introduction part is very poor. It should be added why this topic is important. What does the presented research bring to science? What is different from previously published?
  2. The Results and Discussion section requires expansion. Mention should be made of other options for the treatment or use of waste of various origins. There are many studies involving microorganisms, for example:

Impact of calcium oxide on hygienization and self-heating prevention of biologically contaminated polymer materials.

Energy-related and microbiological evaluation of the effects of bulking agents on the brewery hot trub biodrying.

Biological activity of composts obtained from hop waste generated during the brewing.

Bio-based synthesis of silver nanoparticles from waste agricultural biomass and its antimicrobial activity.

The application potential of hop sediments from beer production for composting.

and should be cited in the text.
