2.2. Ultrasonic treatments

Did the temperature increase during probe treatment? Did you perform some type of cooling to adjust the temperature to 25 degrees?

Why did you choose to use an ultrasound bath to perform TS treatment? Since this device is different from a probe, wouldn't it be better to perform both treatments with a probe under the same conditions with additional heat?

How did you choose those parameters for ultrasound treatment?

Did you perform experiments in parallels? How many of them?

 

Do you think that higher temperatures achieved during TS treatment influenced the results of the study?

The authors investigated the effect of substrate (whey, whole, and skim milk) and sonication method (ultrasonication  and thermosonication) on the antioxidant activity of kefir postbiotics. I have read the manuscript thoroughly. the manuscript is very interesting and well-written. The English, figure qulity, and logicality are also fine. However, some issues should be improved.

 

1. Starter kefir culture XPL-1 contains five strains: Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactisbiovar diacetylactis, Lactococcus lactis subsp. lactis, Leuconostoc, and Streptococcus thermophilus. Which strain provides the antioxidant activity of kefir postbiotics or synergistic effect of all five strain. If possible, please provide some data.

Line 111, 2.3 postbiotics obtention, Which part was collected after filtration? The upper layer or the residue?

Line 112, Please change “minutes” to “min”. Line 187.

Line 121, the ABTS ́ technique, please check.

Please renumber all the figures, do not show data in the figures, and do not use graph 1 or graph 6 in the text or in the figure title.
