The objective of this study was to assess the effects of stocking density in the pen and lairage time before slaughter on blood stress indicators, skin lesions, and pork meat quality traits. A total of 1920 immunocastrated male pigs were shipped to a slaughterhouse. In order to maintain the proposed stocking densities, 72 pigs out of the 1920 animals were removed across loads from the experiment. The remaining 1848 pigs were randomly assigned to two different stocking densities in the lairage pen (0.42 m2/100 kg and 0.66 m2/100 kg) and two lairage times (2 h and 6 h). A total of 360 pigs were selected for the analysis of exsanguination blood glucose, creatine kinase, lactate dehydrogenase, cortisol concentration, hematocrit percentage, and carcass skin lesion scores, whereas meat quality was assessed in 240 loin muscles. Except for blood hematocrit percentage, the interaction stocking density × lairage pen had no effect on any parameter (p > 0.10). When compared to a lower stocking density (0.66 m2/100 kg), pigs kept at a higher stocking density (0.42 m2/100 kg) tended to present lower blood LDH concentrations (p = 0.06) and higher blood cortisol concentrations (p = 0.08) at slaughter and had greater carcass skin lesion scores (p < 0.001) and drier (lower drip loss) loin muscles (p = 0.04). Increased blood hematocrit percentage was found in pigs kept in lairage at a higher stocking density for 6 h when compared with the other lairage conditions (p < 0.01). Overall, stocking density, in particular when it was high, influenced more pigs’ stress conditions at slaughter and carcass and meat quality than the time spent in lairage. Full article

The growth of boars may be inhibited because of aggressive and/or sexual activity. Dietary Br, Mg and tryptophan (Trp) as well as immunocastration may reduce these behaviours. In Experiment 1, 200 boars and 40 barrows were allocated to six groups of four pens of 10 pigs per treatment. Control and immunocastrate (Improvac-vaccinated at 13 and 17 weeks, Imp) boars and barrows were fed a finisher ration while the others were fed diets supplemented with Mg (5 g Mg proteinate/kg), Br (140 mg NaBr/kg) and Trp (5 g Trp/kg). In experiment 2, 300 boars were stratified by weight and within three weight classes allocated to two pens of ten pigs per treatment. Control and Imp boars were fed a finisher ration while the other diets were supplemented with Br, Trp or both Br and Trp. In Experiment 1, average daily gain (ADG) was not affected by diet but the Imp boars had higher ADG than controls. Feed intake (FI) tended to be higher in all treatments compared to controls except for the Trp group. In Experiment 2, Imp boars had higher ADG and FI than other treatments while Br+Trp boars had higher ADG and FI than controls. These data suggest that immunocastration and dietary Trp and Br show promise for improving performance in group-housed boars. Full article

The Italian pig sector requires heavy pigs (raised for at least nine months and slaughtered at >160 kg). In order to avoid boar taint and lower the impact on welfare, immunocastration provides an alternative to surgical castration. This study investigated the effects of immunocastration compared to surgical castration on the chemical composition and fatty acid profile of loins (longissimus dorsi muscle) and adipose tissue in Italian heavy pigs raised for dry-cured ham. Twenty-four male pigs were subjected to surgical castration (n = 12) or immunocastration (n = 12). Carcass parameters were monitored at slaughter, and samples of longissimus dorsi muscle and subcutaneous fat were analysed. This study showed no significant differences in carcass characteristics and proximate composition of fresh meat. However, variations were observed in the fatty acid profiles of meat and adipose tissue between groups. Notably, saturated fatty acids, particularly stearic acid (18:0), were higher in the intramuscular fat (IMF) of the immunocastrated pigs compared to the surgically castrated pigs. Conversely, monounsaturated fatty acids, predominantly oleic acid (18:1n-9), were higher in the IMF from the surgically castrated pigs compared to the immunocastrated pigs. While immunocastration may offer benefits in terms of animal growth and carcass composition, it could lead to unfavourable lipid changes in fresh loin meat for Italian heavy pigs. Full article

Two of the main issues related to cured meat products are castration to avoid boar taint and the hefty reliance on soybean meal to feed pigs. However, data on the effects of immunocastration in pigs and alternative crop protein feeds on the sensory traits and consumers’ acceptance of dry-cured loin are still limited. A preliminary study was conducted on the effect of sex type (surgical castrated male pigs and immunocastrated male and female pigs, at approximately 140 kg in weight and 7 months of age) and animal diet (pea vs. soya) on dry-cured loins. The study involved a sensory evaluation of six treatments, with a 3 × 2 factorial design, conducted by trained panellists and untrained consumers in Spain (n = 126) and Portugal (n = 80). The consumers were also checked for their skatole sensitivity using a pure substance. The results showed that the pea-based diet was significantly different (p < 0.001) from the soy-based diet, as determined by a trained panel of surgically castrated male pigs, although the immunocastration treatments were not split. Dry-cured loin from immunocastrated male pigs fed with peas was considered tenderer and juicier (p < 0.05) than those fed soya-based diets. The untrained consumer panel scored higher on the sensory traits (flavour, juiciness, and overall liking) from the loin samples of surgically castrated male pigs fed a pea diet. All consumers scored similarly in boar taint detection. This study demonstrates the applicability of the pea-based diet for the feeding of pigs destined for cured meat and highlights immunocastration as a tool that does not compromise the skatole detection score. Peas are an alternative to soybeans to supply protein in livestock feeds. Immunocastration avoids surgical castration of male pigs and increases fat deposition in female pigs. This work aimed to assess the effects of pea inclusion on the amount of fat and fatty acid profile of loins and on weight losses of dry-cured hams in different sexes of pigs; in addition, growth performance and feeding behavior in immunocastrated female pigs were evaluated. Two experiments were conducted with crossbred immunocastrated female (IF) and immunocastrated (IM) or surgically castrated (CM) male pigs from Duroc dams sired by Berkshire, which were assigned to one of two diets (soybean vs. pea-based). The effect of castration type on the afore-mentioned variables was evaluated in male pigs, and the growth performance, and feeding behavior in female pigs. The pea-based diet in IF had no effect on average daily gain nor on carcass traits; although, it increased feeding time (p < 0.001) and reduced n-3 polyunsaturated fatty acid (PUFA) content (p < 0.05). In male pigs, the pea-based diet did not change carcass fatness either but reduced the n-3 PUFA levels (p < 0.05). Likewise, IM had lower (p < 0.001) monounsaturated fatty acid (MUFA) and higher (p < 0.05) n-6 PUFA than CM. Diet did not affect dry-cured ham weight losses during the process, while IM showed greater (p < 0.001) losses than CM. Pigs fed a pea-based diet complied with the requirements of cured ham production, while immunocastration in male pigs increased weight losses, partly explained by lower fat content and higher fatty acid unsaturation. The purpose of the current study was to further characterize the performance and nitrogen retention differences previously observed between immunocastrated (IC) and surgically castrated (SC) pure Iberian pigs. Fifty-four pigs were used (three sexes: IC males, IC females and SC males), fed three isoenergetic diets (160, 140 and 120 g CP/kg DM; six pigs/treatment combination) from 40 kg BW until slaughter (105 kg BW). Plasmatic post-absorptive metabolites and hormones, and backfat tissue composition were determined. The IC males showed a trend towards higher plasmatic creatinine (p = 0.06) and IGF-1 concentrations than SC males and IC females (p < 0.001). SC males showed a higher predisposition to carcass fatness and insulin resistance compared to IC males. Plasmatic isoleucine concentration was higher in IC and SC males compared to IC females (p < 0.01), and valine was greater in IC males compared to the rest of the pigs (p < 0.001). Total branched-chain amino acids (AA) were greater in IC males than in IC females (p < 0.01). Total plasmatic essential AA concentrations tended to be greater in IC males (p = 0.09). The present results support the increased performance and nitrogen retention capacity previously observed in IC male Iberian pigs compared to SC males and IC females, which can be attributed to increased anabolic capacity related with lean growth in Iberian IC males. Immunocastration and rearing of entire males (EMs) are sustainable alternatives to surgical castration. However, these animal carcasses have variable risk of boar taint and should be identified at the slaughter line. We aimed to identify a simple and reliable indicator of androstenone-related boar taint by evaluating pelvic urogenital tract weight as a marker of boar-taint animals at the slaughter line. The pelvic urogenital tract, testes, and accessory sex glands of EMs and immunocastrates (ICs) were collected, dissected, and weighed, before colorimetric measurements of testicular tissue. Additionally, GnRH antibody titers and testosterone, androstenone, and skatole levels were determined. Our results showed that 81.8% of EMs had androstenone levels above the risk threshold (>0.5 µg/g fat; EM/Ahigh subgroup), whereas in ICs, the C/Ahigh subgroup with androstenone >0.5 µg/g fat accounted for only 4.3%. Androstenone levels correlated negatively with GnRH antibody titers and positively with testosterone levels and reproductive organ weights. Identification of ICs with androstenone levels above the threshold (IC/Ahigh subgroup) may be achieved via testes or pelvic urogenital tract weight measurements. However, in EMs, the latter is a more reliable parameter. A principal component analysis based on these variables and hierarchical clustering also distinguished the Ahigh from the Alow subgroup, irrespective of IC/EM. The findings highlight the possible use of pelvic urogenital tract weight along with testes weight as a simple, reliable, and efficient morphometric indicator for identifying androstenone-positive carcasses of different sex categories. This study aimed to explore dietary replacement soybean meal (SBM) with local pea seeds (PS-L) and the effects of surgically castrated (CM) or immunocastration (IM) in heavy male pigs, on growth performance, feeding behaviour, and tail and ear lesions. Four treatments were arranged factorially (2 × 2), with two sexes and two dietary treatments (96 pigs in eight pens). The inclusion of PS-L was 25%, 30%, and 40% during three phases (40–80 kg, 80–110 kg, and 110–140 kg, respectively). No difference in average daily feed intake (ADFI) and body-weight (BW) between PS-L and SBM could be demonstrated (p > 0.05), but PS-L diet decreased the average daily gain (ADG) at 110–140 kg of BW (p < 0.001) and increased feed conversion rate (FCR) (p < 0.05). The ADG was higher (p < 0.01) in IM than CM in all fattening periods, and the FCR in IM was lower (p < 0.05) than in barrows. IM pigs had lower dressing percentage than CM (p < 0.01). Pigs fed a PS-L diet ate faster but increased their passive behaviour compared with those fed SBM. In conclusion, the PS-L diet did not reduce BW and improved passive behaviour, and IM grew more efficiently, regardless of diet. Full article

A trial was carried out to study the effect of type of castration and diet on pigs destined for Teruel ham production, which is a Spanish protected designation of origin for dry-cured ham. A total of 144 Duroc × (Landrace × Large White) male pigs were used. Half of them were surgically castrated and the other half were immunocastrated with three doses at approximately 25, 58 and 79 kg of body weight. Furthermore, three diets (control vs. high energy vs. low crude protein-CP- and amino acids-AA) were tested from 80 to 137 kg of body weight. Growth performance, serum sex hormones and metabolites, and carcass quality were evaluated. Immunocastrated males grew faster and had better feed conversion ratio than surgically castrated males, but presented lower carcass fatness. Pigs fed the high-energy diet and the low-CP and -AA diet were more efficient at transforming feed into gain than those fed the control diet, but no effect was detected on carcass quality. In conclusion, surgically castrated males are preferable than immunocastrated males for Teruel dry-cured ham elaboration. Besides, a high-energy diet or a low-CP and -AA diet might improve productive performances, but does not provide any benefit in terms of carcass quality. Full article

A common practice in Iberian pigs is the castration of both males and females, and it can be carried out surgically or by immunization against gonadotropin-releasing factor (GnRF). The aim of this work was to determine consumers’ overall liking and expectations towards Iberian pork from five different sex types (castrated females, entire females, GnRF-vaccinated females, castrated males and GnRF-vaccinated males), as well as to know the attitudes and beliefs of consumers towards castration and immunocastration. Loins from 83 Iberian pigs were collected and evaluated by 252 consumers in Barcelona and Madrid. Consumers evaluated the five types of meat in three situations: blind condition (tasting the product), expectations (without tasting) and informed condition. Finally, attitudes and beliefs towards castration and immunocastration were also determined. Results distinguished three segments of consumers labeled as “Indifferent”, “Against castration and immunocastration” and “Against immunocastration”. Meat from castrated males had higher overall liking scores in the blind condition. Expectations towards pork depending on its sex type affect consumer-informed acceptability; thus, it is important to consider marketing strategies to avoid or direct the effect of the information provided on the acceptability of the pork. Two experiments were carried out; one with female pigs and the other with male pigs destined for Teruel dry-cured ham production, to evaluate the effect of immunocastration (entire gilts-EG vs. immunocastrated gilts-IG and surgically castrated males vs. immunocastrated males-IM) and diet (control vs. high energy vs. low crude protein and amino acids) on meat quality and fat composition. Fifteen meat samples and eight fat samples of each treatment were analyzed in both experiments. In the case of males, six fat samples per treatment were analyzed to determine boar taint. Immunocastration is a good strategy in gilts intended for dry-cured ham production because improves meat composition; however, in males, immunocastration impairs the results of pork chemical composition compared with surgical castration. The IG presented a lower polyunsaturated/saturated fatty acids ratio than EG, improving fat technological quality. Diets had little effect on pork or fat quality in gilts, but a high-energy level using oilseeds and a low-crude-protein and -amino-acids diet from 80 to 137 kg of body weight could be interesting in IM to maintain or increase fat consistency, respectively. Moreover, in general, immunocastration is effective in avoiding boar taint in males. Full article

Consumer studies on acceptability of pork from immunocastrates (IC) and entire males (EM) are of primary importance, if these alternatives are to replace surgical castration (SC) of piglets. Data on the sensory traits and consumers acceptance of IC and EM meat products are still limited. Therefore, the purpose of the study was to (1) describe the sensory profile by quantitative descriptive analysis and (2) test the perception and consumer liking of salami (dry-fermented sausage) and pancetta (dry-cured belly) from EM, IC and SC animals. The consumer tests included the scaling method and check-all-that-apply. Profiling showed that EM products were scored lower in the overall sensory quality compared to IC or SC. EM products differed mainly from IC and SC in the intensity of the manure, sweat odor and flavor, persistent impression and texture (hardness, gumminess and easy to fragment). Salami samples did not differ in liking. In pancetta, the differences were significant for odor liking and visual quality (expected liking). Consumers did not perceive EM products as inferior in terms of liking, while sensory profiling indicated differences for boar taint presence and texture. Using meat originating from IC did not result in any differences in consumers acceptance as compared to products from SC. Full article

An experiment was conducted to determine the appropriate dietary concentration of albus lupins that would lower feed intake and decrease backfat while optimizing the effect on the growth rate of immunocastrated male pigs. The pigs were fed albus lupins (varying from 0 to 200 g/kg) from 2 weeks after the last immunization against GnRF for 14 d prior to slaughter (where d 0 is the day of the last immunization against GnRF). Increasing the dietary albus lupin concentration decreased daily gain for d 15 to 28 (p = 0.004). Daily feed intake also decreased as the concentration of the albus lupins increased for d 15 to 28 (p < 0.001). Carcass weight and backfat decreased as the concentration of dietary albus lupins increased (p = 0.011 and p = 0.024, respectively). The albus lupin concentration to maximize growth rate, minimize feed intake, maximize carcass weight and minimize backfat depth was 120, 142, 62.7 and 138 g/kg, respectively. Full article

This study aimed at evaluating the local tissue reaction of an anti-GnRF product, which is used for the so called “immunocastration” in male pigs. A total of 34 pigs were injected two times (including a booster injection) with an anti-GnRF product. Injection was performed using the prescribed safety vaccinator. Injection sites were evaluated three times post injection using magnetic resonance imaging. Two examinations were performed after the first injection and one after the booster. The local tissue reaction was evaluated three-dimensionally by semi-automatic analyses, by linear measurements of injection depth and length, and by scoring the kind of tissue affected. Results showed a long-lasting reaction in affected muscle tissue. Therefore, needle length should be discussed, and an evaluation of the injection site after slaughter should be performed include behavioural scorings post injection to evaluate the impact on animal well-being and carcass quality. This study aimed to find a suitable immunocastration protocol for male Bísaro pigs (BP) due to the breed and production system particularities. Twenty-five male BP were treated with Improvac® according to three protocols: using two (GrpE2 and L2) or three vaccinations (GrpL3) and starting at 9 (GrpE2) or 13 weeks old (GrpL2 and L3). Eleven animals were kept as intact males (GrpC). Scrotal measurements and the morphometry of the testes and epididymides collected at slaughter were used to survey the effectiveness of the immunocastration compared with the age-matched intact controls. Animals in groups E2 and L3 were kept until 57 weeks, after a second vaccination cycle at 49 and 53 weeks of age. Scrotal dimensions decreased to almost initial values in treated animals until 17 (GrpE2) and 21 weeks (GrpL2 and L3), thereafter increasing to post-pubertal values until around 29 or 37 weeks of age for groups E2 and L2, respectively, but only at 41 weeks in group L3. Between 41 and 49 weeks, scrotal dimensions were similar in treated and control animals, decreasing to the predicted pre-puberty size after the second cycle of vaccination. This study suggests the most suited protocol for males slaughtered at older ages includes three administrations of Improvac® starting at 3 months of age, followed by a second vaccination cycle.
