To evaluate animal performance and meat quality, stoned olive cake and linseed were used in an experimental test conducted on thirty-six young Podolian bulls, divided into four groups: the control group (CON), OC group (with olive cake containing a 30% as-fed basis of stoned olive cake), EL group (with linseed containing a 15% as-fed basis of extruded linseed), and OCEL group (with olive cake + linseed containing 20% stoned olive cake and 10% extruded linseed). The results show that olive cake supplementation did not influence performance in vita or the post-slaughter animal measurements (final body weight, DMI, FCR, ADG, carcass weight, dressing percentage, and pH) (p > 0.05); this was not true of the TBARS and color measurements, for which the meat samples showed excellent values (p < 0.001), especially in diets supplemented with olive cake. In conclusion, incorporating olive cake and linseed into the diet of fattening cattle may be a way to utilize a by-product of the olive industry and naturally increase the nutritional value of meat and meat-based products in Mediterranean regions. This would reduce environmental impacts and promote the valorization of this local feed source in alignment with the principles of the circular economy. Full article

The Hungarian Grey (HG) cattle breed was almost extinct after WW2; only 200 cows and six bulls survived. Despite the historical significance of the HG, no comprehensive genomic analysis has been conducted to clarify its genetic diversity and evolutionary history. Previous studies have relied on random or limited pedigree sampling, lacking a fully representative dataset determining genetic and conservation status. Here, the founder sampling of 110 individuals and the analysis of their mitochondrial DNA (mtDNA) sequence variation aim to investigate the phylogenetic placement of the breed using, for the first time, a fully representative sample. All identified haplogroups belong to the taurine T macro-haplogroup, with a predominance of T3 (89.1%), followed by T2 (4.5%), T1 (3.6%), and T1′2′3 (2.7%). The phylogenetic analysis confirms the absence of ancient haplogroups derived from European aurochs, suggesting a purely taurine origin for the HG breed. The high haplotype diversity (Hd = 0.94) and the genetic similarity to other Podolian breeds, particularly Maremmana cattle, indicate a preserved genetic background despite centuries of selective breeding. The lack of intensive crossbreeding practices has maintained the original beef production purpose of the breed, distinguishing it from the crossbred Podolian cattle used for dual-purpose or dairy production. Animal feeding has a great impact on the management of beef farms, also affecting the nutritional properties of the meat. Therefore, in this study, the following two forage-to-concentrate ratios were tested on twenty farmed Podolian young bulls: high forage-to-concentrate (HF:C) ratio of 65:35 vs. low forage-to-concentrate (LF:C) ratio of 45:55. The fatty acid profile, bioactive compounds, α-tocopherol content, and oxidative stability were evaluated on Longissimus thoracis muscle vacuum-packaged and aged at 2 °C for 11 and 18 days, respectively. Feeding the highest forage-to-concentrate ratio improved the fatty acid profile by decreasing the saturated fatty acids (p < 0.01) and increasing the monounsaturated (p < 0.05) and n-3 polyunsaturated fatty acids (p < 0.001). In particular, the percentages of linolenic acid (C18:3n-3), eicosapentaenoic acid (EPA-C20:5n-3), DPA (C22:5n-3), and docosahexaenoic acid (DHA-C22:6n3) were significantly higher (p < 0.01) in the HF:C group than the LF:C group. The highest forage-to-concentrate ratio also increased the contents of bioactive compounds, such as creatine (p < 0.001), carnosine (p < 0.01), and anserine (p < 0.05). This study suggests that a diet composed of 65% forage may be a feasible strategy to enrich meat with healthy bioactive compounds. Full article

Ecosystem services (ESs) are gaining increasing interest among researchers, local communities, and policymakers. The farming of Podolian cattle in the remote and marginal areas of southern Italy plays an important socio-economic role. This study aimed to assess the perception of ESs provided by Podolian cattle farming in the Basilicata region among the local actors and stakeholders. Using a questionnaire administered to 198 respondents, the level of agreement and disagreement was assessed on a 1–5 scale for the four main ESs: cultural, regulating, supporting, and provisioning. On average, the perception of ESs related to Podolian cattle farming was positive. However, the role of promoting tourism in the region was somewhat controversial, and the results in terms of regulation were divisive. The perception of provisioning services had a highly positive result. Further research is needed to better understand the role of Podolian cattle farming in the Basilicata region, providing more explicit guidance for local communities and policymakers. Full article

In the context of the general phenomenon of diminishing genetic diversity, especially in cattle, the conservation of endangered species plays a primary role. The disappearance of some animal populations can irreparably affect the biodiversity of genetic resources. Among the most ancient European cattle are breeds that belong to the Podolian group, the history of which is still not well established. The common origin of these breeds is the wild ox (Bos taurus primigenius), which has been declared extinct since the 17th century. The purpose of this paper is to highlight and compare the latest studies on the origin, evolution, genetic diversity, and phylogenetic relationships of Podolian cattle, with special emphasis on the endangered Romanian Grey Steppe. The importance of studying these cattle derives from the special biological properties by which they have distinguished themselves over time (adaptability and resistance to diseases, severe climate and habitat conditions, hardiness, and longevity). The bibliographic references reviewed in this study confirm that these breeds are carriers of valuable genes that must be preserved for improvement of other cattle and protection of biodiversity. The information presented represents a valuable tool for efforts to conserve endangered cattle. Full article

Traditional agri-food products (TAPs) are closely linked to the peculiarities of the territory of origin and are strategic tools for preserving culture and traditions; nutritional and organoleptic peculiarities also differentiate these products on the market. One such product is Caciocavallo Podolico Lucano (CPL), a stretched curd cheese made exclusively from raw milk from Podolian cows, reared under extensive conditions. The objective of this study was to characterise CPL and evaluate the effects of ripening (6 vs. 12 months) on the quality and organoleptic properties, using the technological “artificial senses” platform, of CPL produced and sold in the region of Basilicata, Italy. Additionally, this study represents the first analysis of cheese-related digital communication and trends online. The study found no significant differences between 6-month- and 12-month-ripened cheese, except for a slight increase in cholesterol levels in the latter. CPL aged for 6 and 12 months is naturally lactose-free, rich in bioactive components, and high in vitamin A and antioxidants and has a low PUFA-n6/n3 ratio. The “artificial sensory profile” was able to discriminate the organoleptic fingerprints of 6-month- and 12-month-ripened cheese. The application of a socio-semiotic methodology enabled us to identify the best drivers to create effective communication for this product. The researchers recommend focusing on creating a certification mark linked to the territory for future protection. Full article

In this study, we have included the water footprint (WF) in the process of optimizing animal feed rations. The global footprint of cattle production accounts for the largest share (33%) of the global water footprint of livestock production. Using two homogeneous groups of Limousine × Podolian young bulls, two different diets were compared: corn silage feeding (CSF), with a corn silage-based diet; and triticale silage feeding (TSF), with a triticale silage-based diet. Silage constituted about 41% and 46% of the feed composition (for CSF and TSF, respectively). Diets were characterised by the same energy and protein content. Despite the lower WF in the TSF group than in the CSF group (7726 vs. 8571 L/day/calf respectively), no significant differences were found in animal performances (i.e., daily weight gain and final weight), feed conversion or income over feed costs. These results show that simple production decisions can have a significant impact on water resource. Therefore, the use of triticale silage should be further promoted, especially in world regions with limited water resources where low WF feed formulation is more strategic than elsewhere. Local and typical agri-food products (TAP) are receiving increasing interest from consumers, since they are perceived as genuine, healthy and tasty because they are produced under environmentally friendly farming systems. This has aroused a renewed interest among breeders from the inner regions of Italy and Greece toward autochthonous animal populations, such as Greek Katerini and Italian Podolian cattle. Twenty animals were used, divided into two homogeneous groups of ten subjects per each genotype. Animals were fed only on natural pasture and were slaughtered at 18 months of age. Meat from the Katerini young bulls showed a lower a* value, higher moisture and was leaner, and its fat was richer in n-3 fatty acids and had a better n-6/n-3 ratio. Meat from Podolian young bulls was more tender and showed a higher redness value and a significantly greater MUFA concentration. This preliminary study provides a contribution to the local actors and relevant authorities to develop a conservation program for the endangered Katerini breed based on the nutritional and sensorial characterization of its products. Since 2000, the Food and Agriculture Organization of the United Nations (FAO) has been drawing attention to the increasing numerical decline of Podolian cattle, which include the Romanian Grey Steppe. Currently, this breed is endangered, numbering under 100 heads across the territory of the entire country. Due to its qualities of rusticity, adaptability, and increased resistance to diseases and severe climate conditions, the Grey Steppe is considered a valuable genetic reserve for improving livestock production. This study aimed to quantify the genetic diversity of a population of 32 cattle from the area of N-E Moldova through the analysis of two mitochondrial markers, cytochrome b and the d-loop, which have been proven to be relevant to studies of genetic diversity and phylogeny. The results obtained based on the statistical analysis of the data using nucleotide sequence analysis software (DnaSP, SeaView, MegaX, PopArt, etc.) demonstrated that the breed belonged to the ancestral P′QT haplogroup, with direct descent from Bos taurus primigenius. Within this haplogroup, five cattle were identified, which could be used in the selection of crosses, with the aim of preserving valuable genetic resources for the improvement of other cattle breeds and the protection of biodiversity. The TTZ-South seismic profile follows the Teisseyre-Tornquist zone (TTZ) at the SW margin of the East European craton (EEC). Investigation results reveal the upper lithospheric structure as representing the NW-vergent, NE-SW striking overthrust-type, Paleoproterozoic (~1.84–1.8 Ga) Fennoscandia-Sarmatia suture. The Sarmatian segment of the EEC comprises two crustal-scale tectonic thrust slices: the Moldavo-Podolian and Lublino-Volhynian basement units, overriding the northerly located Lysogoro-Radomian unit of Fennoscandian affinity. The combined results of the TTZ-South and other nearby deep seismic profiles are consistent with a continuation of the EEC cratonic basement across the TTZ to the SW and its plunging into the deep substratum of the adjacent Paleozoic platform. Extensional deformation responsible for the formation of the mid to late Proterozoic (~1.4–0.6 Ga), SW-NE trending Orsha-Volhynia rift basin is probably also recorded. The thick Ediacaran succession deposited in the rift was later tectonically thickened due to Variscan deformation. The Moho depth varies between 37 and 49 km, resulting in the thinnest crust in the SE, sharp depth changes across the TTZ, and slow shallowing from 49 to 43 km to the NW. The abrupt Moho depth increase from 43 to 49 km is considered to reflect the overlying lower crust tectonic duplication within the suture zone. Full article

The field of chemical and physical transformations induced by ultrasonic waves has shown steady progress during the past decades. There is a solid core of established results and some topics that are not thoroughly developed. The effect of varying ultrasonic frequency is among the most beneficial issues that require advances. In this work, the effect of sonication of Si wafers in tetrahydrofuran on the photovoltage performance was studied, with the specific goal of studying the influence of the varying frequency. The applied ultrasonic transducer design approach enables the construction of the transducer operating at about 400 kHz with a sufficient sonochemical efficiency. The measurements of the surface photovoltage (SPV) transients were performed on p-type Cz-Si(111) wafers. Sonication was done in tetrahydrofuran, methanol, and in their 3:1 mixture. When using tetrahydrofuran, the enhanced SPV signal (up to ≈80%) was observed due to increasing sonication frequency to 400 kHz. In turn, the signal was decreased down to ≈75% of the initial value when the frequency is lowered to 28 kHz. The addition of methanol suppressed this significant difference. It was implied that different decay processes with hydrogen decomposed from tetrahydrofuran could be attempted to explain the mechanism behind the observed frequency-dependent behavior. Full article

We aimed to assess whether the environmental impacts in terms of global warming potential (GWP), acidification potential (AP), eutrophication potential (EP), and land occupation (LO) of beef can be decreased when ecosystem and cultural/provisioning services are included in the evaluation. We used four Italian production systems: Fat, with beef imported calves kept in confinement; CoCaI, with beef cows and calves kept in confinement; SpEx, with beef cows and calves kept on pasture and finishing conducted in confinement; and Pod, with Podolian cows and calves kept on pasture and finishing conducted in confinement. After the economic allocation, the GWP of system Pod decreased considerably and showed values lower than those computed for systems CoCaI and SpEx (P < 0.05 and P < 0.001, respectively). System Pod showed the lowest AP and EP as compared with all the other systems (P < 0.01). Systems Fat and CoCaI showed the smallest LO, with values lower than systems Pod (P < 0.05) and SpEx (P < 0.001). We conclude that the environmental impacts of extensive and local beef production systems in terms of GWP, AP, and EP was markedly reduced when the provision of accessory services was included in the calculation. Conversely, LO did not markedly change due to the high absolute values needed to allow pasture-based feeding. The estimation of additional positive aspects linked to the use of natural pastures, such as removal of carbon dioxide, increased biodiversity, and exploitation of feeds nonedible by humans, may allow a further reduction of LO.
