Background/Objectives: Higher energy density (ED; kJ/g) and higher levels of processing of foods and beverages have been associated with childhood obesity and reduced diet quality. This study described and examined the distribution of ED and levels of processing of new food and beverage products intended for Australian children (0–4 years, 5–12 years). Methods: This study used 2013–2023 data from the Mintel Global New Products Database. Products were classified by ED (low ≦ 4.184 kJ/g, medium > 4.184 kJ/g and <12.552 kJ/g, or high ≧ 12.552 kJ/g) and level of processing (using the NOVA classification system; unprocessed/minimally processed foods; processed culinary ingredients; processed foods; ultra-processed foods (UPFs)). Non-parametric statistics were used to examine ED and level of processing by age and ‘Food’ and ‘Drink’ groups. Results: Of the 1770 products analysed, 56% were classified as high-ED and 81% as UPF. Among ‘Food’ products intended for children ‘5–12 years’, 93% were classified as UPFs. The differences in ED classification between non-UPFs and UPFs were significant for ‘Food’ products intended for children aged ‘0–4 years’ (p < 0.001) but not for children aged ‘5–12 years’ (p = 0.149). Conclusions: The prevalence of high-ED and UPFs in the Australian packaged food supply demonstrates the need to tighten regulations around products intended for children. The regulation of low-ED UPFs (i.e., recognised by Australian Dietary Guidelines as ‘healthy’) may also be required. Full article

Greater engagement with alternative food supply chains is considered a key factor in reducing a range of environmental and social harms associated with the global agri-food system. However, consumer engagement with these supply chains is low, and little research has investigated this issue in the Australian context. This study aimed to identify Australian consumers’ drivers and barriers in procuring food grown locally from alternative grocery retailers. Self-reported primary or co-equal grocery shoppers (n = 325) completed measures of drivers and barriers to shopping for locally produced food (within 200 km) from alternative retailers, as well as current behavioural engagement with such. An exploratory factor analysis revealed four key drivers (Food Shopping as an Expression of Values, Food Shopping as a Socio-Emotional Experience, Avoiding “Unnatural” Food, Protesting the Duopoly) and two key barriers (It’s All Too Hard, Local Food Scepticism). Multiple regression analysis demonstrated that together, these drivers and barriers explained a significant 9% of the variance in the frequency of alternate shopping practices, of which only the barrier It’s All Too Hard accounted for a significant amount of unique variance. Findings point to ways to encourage engagement with sustainable food systems, as well as critical barriers to overcoming disengagement. Full article

Background: The aims of this study were to develop and evaluate a high/low-emulsifier diet and compare emulsifier content with preclinical studies that have associated Crohn’s disease with emulsifiers. Methods: Supermarkets were audited with a seven-day high- (HED) and low-emulsifier diet (LED) meal plan developed. The emulsifier content of food was sought from food manufacturers, compared to acceptable daily intake (ADI), and doses were provided in trials. Nutritional composition analysis was completed. Healthy adults ate these diets for seven days in a randomized single-blinded cross-over feeding study to assess palatability, tolerability, satiety, food variety, dietary adherence, blinding and the ease of following the meal plan via visual analogue scale. Results: A database of 1680 foods was created. There was no difference in nutritional content between the HED and LED, except HED had a higher ultra-processed food content (p < 0.001). The HED contained 41 emulsifiers, with 53% of the products able to be quantified for emulsifiers (2.8 g/d), which did not exceed the ADI, was similar to that in observational studies, and was exceeded by doses used in experimental studies. In ten participants, diets were rated similarly in palatability—HED mean 62 (5% CI 37–86) mm vs. LED 68 (54–82) mm—in tolerability—HED 41 (20–61) mm vs. LED 55 (37–73) mm—and in satiety HED 57 (32–81) mm vs. LED 49 (24–73) mm. The combined diets were easy to follow (82 (67–97) mm) with good variety (65 (47–81)) and excellent adherence. Conclusion: Nutritionally well-matched HED and LED were successfully developed, palatable and well tolerated. Full article

Changes in the climate have led to the occurrence of extreme events that threaten the production of major crops, namely that of bread wheat (Triticum aestivum L.). Waterlogging imposed at the tillering stage can severely affect the yield, but several genotype features may counterbalance the negative impacts on yields. The aim of this work was to evaluate the effect of waterlogging on the number of fertile spikes, kernels per plant, and single kernel weight, as well as to assess the main culm and tiller participation in yields. We also investigated if the growth stages affected by stress would influence such traits. The study was conducted in climatized growth chambers using 23 genotypes from five distinct germplasm groups (Portuguese landraces, varieties with the introduced Italian germplasm, post-Green Revolution varieties with the introduced CIMMYT germplasm, advanced lines from the Portuguese wheat breeding program, Australian varieties). Variability was observed between and within the groups. Ten genotypes performed well under waterlogged conditions, showing promising results. Among these, GR-2 showed a rise in tiller yield, AdvL-3 in both the main culm and tiller yield, and the remaining ones displayed unaltered values in both the main culm and tillers. PL-1, PL-5, GR-1, GR-3, AdvL-2, Austrl-2, and Austrl-4 were able to compensate for the decreases observed for several traits, reaching harvest yield values that were unaffected in both the main culm and tillers. Rises in the tiller yield or in the tillers and main culm, GR-2 and AdvL-3 exhibited either stability or increases in all the studied parameters. Results also suggest a negative correlation between the growth stage reached during waterlogging and the effect of this stress on the number of spikes per plant, plant and tiller yield, kernel per spike (tillers), and single kernel weight (tillers). Our findings may contribute to a better understanding of wheat responses to waterlogging and to the development of solutions that mitigate the socio-economic impacts of 20–50% wheat yield reductions, thereby preserving the daily 20% supply of energy and protein required for human nutrition and global food security. The opportunistic pathogen Vibrio parahaemolyticus poses a significant food safety risk worldwide, and understanding its growth in commercially cultivated oysters, especially at temperatures likely to be encountered post-harvest, provides essential information to provide the safe supply of oysters. The Blacklip Rock Oyster (BRO) is an emerging commercial species in tropical northern Australia and as a warm water species, it is potentially exposed to Vibrio spp. In order to determine the growth characteristics of Vibrio parahaemolyticus in BRO post-harvest, four V. parahaemolyticus strains isolated from oysters were injected into BROs and the level of V. parahaemolyticus was measured at different time points in oysters stored at four temperatures. Estimated growth rates were −0.001, 0.003, 0.032, and 0.047 log10 CFU/h at 4 °C, 13 °C, 18 °C, and 25 °C, respectively. The highest maximum population density of 5.31 log10 CFU/g was achieved at 18 °C after 116 h. There was no growth of V. parahaemolyticus at 4 °C, slow growth at 13 °C, but notably, growth occurred at 18 °C and 25 °C. Vibrio parahaemolyticus growth at 18 °C and 25 °C was not significantly different from each other but were significantly higher than at 13 °C (polynomial GLM model, interaction terms between time and temperature groups p < 0.05). Results support the safe storage of BROs at both 4 °C and 13 °C. This V. parahaemolyticus growth data will inform regulators and assist the Australian oyster industry to develop guidelines for BRO storage and transport to maximise product quality and safety. Fruit and vegetables (FV) are the major source of bioactive compounds for human beings. FV supply chains are complex and sensitive due to various features, including the seasonality of products, variations in demand, and short shelf-lives. The amount of waste in FV supply chains is significant compared with other supply chains as 44% of fresh FV produced globally are wasted in the food chain. This large amount of waste has a significant impact on the economy, food security, available natural resources, and the environment. To reduce food losses in the fresh food supply chain (FFSC), the root causes of waste must be first identified. While a number of researchers have investigated food losses in Australia, most only consider a specific stage in the supply chain and multiple stages in the FFSC are often overlooked. Additionally, the impact of advanced storage technologies, packing, handling, and transport on food losses should be investigated. Furthermore, supply chain practices are changing in response to uncertainties, such as the pandemic and climate changes, which also need to be captured. This research aims to identify the key factors contributing to fresh fruit and vegetable losses through a comprehensive empirical study. Primary data were collected through a well-designed questionnaire-based survey targeting major stakeholders in the FFSC, including farmers, distributors, and retailers in Australia. The survey investigates current postharvest practices and the effects of these practices on food losses. The main factors influencing food losses were identified and the options to reduce these losses were outlined. The results showed that losses mostly occurred at the farm level, and picking practices and preharvest conditions largely contributed to FV losses. The results highlight the need for proper training and education for workers involved in harvesting and handling fresh produce. Full article

Despite the positive relationship between anthocyanin-rich foods and cognitive health, a dietary deficit exists in older adults. Effective interventions require an understanding of people’s dietary behaviors situated in social and cultural contexts. Therefore, the aim of this study was to explore older adults’ perceptions about increasing their consumption of anthocyanin-rich foods for cognitive health. Following an educational session and the provision of a recipe and information book, an online survey and focus groups with Australian adults aged 65 years or older (n = 20) explored the barriers and enablers towards eating more anthocyanin-rich foods and potential strategies to achieve dietary change. An iterative, qualitative analysis identified the themes and classified the barriers, enablers and strategies onto the Social-Ecological model levels of influence (individual, interpersonal, community, society). Enabling factors included a desire to eat healthily, taste preference and familiarity of anthocyanin-rich foods (individual), social support (community), and the availability of some anthocyanin-rich foods (society). The barriers included budget, dietary preferences and motivation (individual), household influences (interpersonal), limited availability and access to some anthocyanin-rich foods (community) and the cost and the seasonal variability (society). The strategies included increasing individual-level knowledge, skills, and confidence in utilizing anthocyanin-rich foods, educational initiatives about the potential cognitive benefits, and advocating to increase access to anthocyanin-rich foods in the food supply. This study provides for the first time, insight into the various levels of influence impacting older adults’ ability to consume an anthocyanin-rich diet for cognitive health. Future interventions should be tailored to reflect the barriers and enablers and to provide targeted education about anthocyanin-rich foods. Full article

Front-of-package nutrition labelling (FOPNL) is known as an effective tool that can encourage healthier food choices and food reformulation. A very interesting type of FOPNL is grading schemes. Our objective was to compare two market-implemented grading schemes—European Nutri-Score (NS) and Australian Health Star Rating (HSR), using large Slovenian branded foods database. NS and HSR were used for profiling 17,226 pre-packed foods and drinks, available in Slovenian food supply dataset (2020). Alignment between models was evaluated with agreement (% of agreement and Cohen’s Kappa) and correlation (Spearman rho). The 12-month nationwide sales-data were used for sale-weighing, to address market-share differences. Study results indicated that both models have good discriminatory ability between products based on their nutritional composition. NS and HSR ranked 22% and 33% of Slovenian food supply as healthy, respectively. Agreement between NS and HSR was strong (70%, κ = 0.62) with a very strong correlation (rho = 0.87). Observed profiling models were most aligned within food categories Beverages and Bread and bakery products, while less aligned for Dairy and imitates and Edible oils and emulsions. Notable disagreements were particularly observed in subcategories of Cheese and processed cheeses (8%, κ = 0.01, rho = 0.38) and Cooking oils (27%, κ = 0.11, rho = 0.40). Further analysis showed that the main differences in Cooking oils were due to olive oil and walnut oil, which are favoured by NS and grapeseed, flaxseed and sunflower oil that are favoured by HSR. For Cheeses and cheese products, we observed that HSR graded products across the whole scale, with majority (63%) being classified as healthy (≥3.5 *), while NS mostly graded lower scores. Sale-weighting analyses showed that offer in the food supply does not always reflect the sales. Sale-weighting increased overall agreement between profiles from 70% to 81%, with notable differences between food categories. In conclusion, NS and HSR were shown as highly compliant FOPNLs with few divergences in some subcategories. Even these models do not always grade products equally high, very similar ranking trends were observed. However, the observed differences highlight the challenges of FOPNL ranking schemes, which are tailored to address somewhat different public health priorities in different countries. International harmonization can support further development of grading type nutrient profiling models for the use in FOPNL, and make those acceptable for more stake-holders, which will be crucial for their successful regulatory implementation. The consumption of sugar and non-nutritive sweeteners has been associated with poor health outcomes. The aim of this paper was to provide a comparison of the range of sweetened or flavoured beverages between two high-income countries in the Asia-Pacific region: Australia and Singapore. Following the FoodTrackTM methodology, nutrition, labelling, and price data were collected from major Australian and Singaporean supermarket chains and convenience stores. The nutrient profiles of products were tested for differences using Kruskal–Wallis and Mann–Whitney U tests. The greatest number of products collected in Australia were from the ‘carbonated beverages’ category (n = 215, 40%), and in Singapore the greatest number of products were from the ‘tea and coffee ready-to-drink’ category (n = 182, 35%). There were more calorically sweetened beverages in Singapore compared with Australia (n = 462/517 vs. n = 374/531, p < 0.001). For calorically sweetened products, the median energy of Singaporean products was significantly higher than Australian products (134 kJ vs. 120 kJ per 100 mL, p = 0.009). In Australia, 52% of sweetened or flavoured beverages displayed a front-of-pack nutrient signposting logo, compared with 34% of sweetened or flavoured beverages in Singapore. These findings also indicate that the consumption of just one serving of calorically sweetened carbonated beverages or energy drinks would exceed the WHO maximum daily free sugar recommendations. The horticulture sector in northern Australia, covering north of Western Australia (WA), Northern Territory (NT), and north Queensland (QLD), contributes $1.6 billion/year to the Australian economy by supplying diverse food commodities to meet domestic and international demand. To date, the Australian Government has funded several studies on developing the north’s agriculture sector, but these primarily focused on land and water resources and omitted an integrated, on-ground feasibility analysis for including farmers’/growers’ perspectives. This study is the first of its kind in the north for offering a detailed integrated assessment, highlighting farmers’ perspectives on the current state of the north’s horticulture sector, and related challenges and opportunities. For this, we applied a bottom-up approach to inform future agriculture development in the region, involving a detailed literature review and conducting several focus group workshops with growers and experts from government organisations, growers’ associations, and regional development agencies. We identified several key local issues pertaining to crop production, availability of, and secure access to, land and water resources, and workforce and marketing arrangements (i.e., transport or processing facilities, export opportunities, biosecurity protocols, and the role of the retailers/supermarkets) that affect the economic viability and future expansion of the sector across the region. For example, the availability of the workforce (skilled and general) has been a challenge across the north since the start of the COVID-19 pandemic in 2020. Similarly, long-distance travel for farm produce due to a lack of processing and export facilities in the north restricts future farm developments. Any major investment should be aligned with growers’ interests. This research highlights the importance of understanding and incorporating local growers’ and researchers’ perspectives, applying a bottom-up approach, when planning policies and programs for future development, especially for the horticulture sector in northern Australia and other similar regions across the globe where policy makers’ perspectives may differ from farmers. There is well-established evidence for low-carbohydrate, high-fat (LCHF) diets in the management of chronic health conditions in adults. The natural next step is to understand the potential risks and benefits of LCHF diets for children, where they may have useful applications for general health and a variety of chronic health conditions. It is vital that any diet delivers sufficient micronutrients and energy to ensure health, wellbeing, and growth. This descriptive study assesses the nutrient and energy status of LCHF sample meal plans for children. We designed four meal plans for hypothetical weight-stable male and female children (11 years) and adolescents (16 years). Carbohydrates were limited to ≤80 g, protein was set at 15–25% of the total energy, and fat supplied the remaining calories. Using FoodWorks dietary analysis software, data were assessed against the national Australian/New Zealand nutrient reference value (NRV) thresholds for children and adolescents. All meal plans exceeded the minimum NRV thresholds for all micronutrients; protein slightly exceeded the AMDR recommendations by up to three percentage points. This study demonstrates that LCHF meal plans can be energy-, protein-, and micronutrient-replete for children and adolescents. As with any dietary approach, well-formulated meals and careful planning are key to achieving the optimal nutrient status. Full article

Food Supply Impacts and Solutions Associated with the COVID-19 Pandemic: A Regional Australian Case Study

This study aimed to explore how food supply chains were impacted by COVID-19 and identify how the region could be better prepared for future crises. An online survey was completed by 107 consumers. In-depth interviews were conducted with 27 food supply stakeholders working in food production, distribution, retail, hospitality, institutions (i.e., childcare), logistics/freight and local government. Pre-COVID-19, farmer-direct distribution options and hospitality businesses comprised a substantial proportion of local food producer businesses. During the COVID-19 pandemic, consumers favoured local food supply options, farmers collaborated, and produce usually destined for export was redirected into local markets. Critical food supply actions included keeping borders open to food freight, enhancing social capital through real-time business communication, and business flexibility. Solutions included business adaptation, for example, farmers selling produce boxes and hospitality businesses selling excess stock, COVID-safe delivery, and collaboration through digital networks. To better prepare the region for future crises, actions to support communities could include a community approach to agriculture, increasing food supply diversity, facilitating transport to aid food distribution and purchasing, and more effective messaging to discourage panic buying. Actions to support retailers could include increasing access to wholesalers through online platforms. As a consequence of disasters such as pandemics and severe weather events, Australian communities often face ‘food shortages’ resulting from the reduced availability of food and reduced access to available food. These food shortages can be acutely felt by vulnerable populations, comprising people in communities who are already dealing with social or economic disadvantages. Despite growing calls to ensure food access for everyone during and following disasters, efforts are still largely ad hoc, champion based and highly variable in their reliability and quality of supply. There is also a disconnect between disaster-related food relief and improving business continuity towards local economic resilience. This study sought to tackle these challenges by exploring how ‘local food access’ could be integrated within disaster management mechanisms, to support the most vulnerable and also contribute to local economic resilience. This paper discusses the findings of a study undertaken in Cairns, a north-eastern Australian regional authority, and involves a review of disaster management planning and policy artifacts, an online survey, and semi-structured interviews with stakeholders providing care and advocacy for vulnerable populations. Synthesizing the findings, we present a disaster-management-focused ‘Local Food Access Model’ that connects shorter food supply chains to improved disaster response, resilience and contingency-planning agendas. Applying this model to Cairns, we conclude the multiple benefits and immediate stakeholder readiness for a virtual (online) food resilience and contingency hub, to enable the connection of local food availability and access information within existing disaster management processes. The research method used, the model, and the case-specific findings provide government decision makers with a useful process, a local food-access schematic and a case study example to support immediate improvements in disaster resilience for vulnerable populations. Reducing food loss and waste (FLW) is one strategy to limit the environmental impact of the food supply chain. Australian data suggest that primary production accounts for 31% of national FLW, but there are no comparable data in New Zealand. This study aimed to measure food loss and explore food loss drivers for one of New Zealand’s largest tomato growers by weighing and visually assessing tomato losses at the glasshouse, packhouse and sales warehouse. Qualitative interviews were also held with the grower (n = 3), employees (n = 10), and key industry stakeholders (n = 8). Total food loss for this greenhouse tomato grower was 16.9% of marketed yield, consisting of 13.9% unharvested tomatoes, 2.8% rejected at the glasshouse and 0.3% rejected at the packhouse. The grower’s tomato loss predominantly resulted from commercial factors such as market price, competitor activity and supply and demand. Similar issues were recognized throughout the New Zealand horticulture sector. Commercial factors, in particular, are challenging to address, and collaboration throughout the supply chain will be required to help growers reduce food losses. Full article

Short videos have become the most-liked medium for Chinese consumers to learn about a brand’s products or services. This paper assesses how short video storytelling shapes Chinese consumers’ perceptions towards blockchain-credentialed Australian beef and their willingness to pay (WTP). A controlled experiment with a one-minute short video was implemented in an online survey. Respondents in the treatment group watched the video before filling out the survey, whereas respondents in the control group did not. The paper analyses and compares the empirical results from local (n = 76) and foreign (n = 27) consumers. Results illustrate that the short video, as part of our food communications, positively shapes consumer perception towards meat quality, labelling and traceability trust of Australian beef but has only slight or even negative effects on WTP. This could be due to the short video offering consumers a sense of supply chain visibility but not delivering the right messages to meet their expectation of blockchain credentials. Furthermore, short video storytelling effects vary among consumers with different socio-economic characteristics. Our results posit that short video storytelling can be a useful tool in communicating blockchain-credentialed food products but require the design of a tailor-made storytelling experience for diverse consumers.
