The topic is of great interest. Therefore, there are many review and papers in literature that have analyzed the various added-value resources present in the by-products, such as bioactive compounds, their extraction and their characterization. For these reasons, this part seems to be repetitive, without any surprising or new information. I would have organized the discussion on the application of agri-food by-products better, because it is confusing in some parts.
