To understand the significance that cultural heritage has today and, above all, the role of citizens in decision-making for its valorisation, transmission, and management, it is necessary to approach it from a very early age, specifically through childhood education. Hence, this action research study is proposed for 56 infant teachers in initial training at the University of A Coruña (Galicia, Spain). This is a descriptive case study that aims to investigate the perceptions of early childhood education teachers in initial training about cultural heritage (definition: economic, cultural, and educational uses; agents involved in its transmission, management, etc.). In addition, the paper analyses the changes and continuities that occur in student teachers’ perceptions after carrying out a didactic proposal through relevant social problems linked to the Ribeira Sacra cultural landscape. This action research study has allowed students to give more importance to intangible cultural heritage and to gain a better understanding of controversial issues related to cultural heritage, such as the balance between economic and cultural use, as well as citizens’ roles in a decision-making process related to cultural heritage. Despite engaging in didactic activities, a substantial portion of students still retain a conservative outlook on heritage education. Full article

Non-Saccharomyces yeasts represent a great source of biodiversity for the production of new beer styles, since they can be used in different industrial areas, as pure culture starters, in co-fermentation with Saccharomyces, and in spontaneous fermentation (lambic and gueuze production, with the main contribution of Brettanomyces yeast). The fermentation process of lambic beer is characterized by different phases with a characteristic predominance of different microorganisms in each of them. As it is a spontaneous process, fermentation usually lasts from 10 months to 3 years. In this work, an attempt was made to perform a fermentation similar to the one that occurred in this process with lactic bacteria, Saccharomyces yeast and Brettanomyces yeast, but controlling their inoculation and therefore decreasing the time necessary for their action. For this purpose, after the first screening in 100 mL where eight Brettanomyces yeast strains from D.O. “Ribeira Sacra” (Galicia) were tested, one Brettanomyces bruxellensis strain was finally selected (B6) for fermentation in 1 L together with commercial strains of Saccharomyces cerevisiae S-04 yeast and Lactobacillus brevis lactic acid bacteria in different sequences. The combinations that showed the best fermentative capacity were tested in 14 L. Volatile compounds, lactic acid, acetic acid, colour, bitterness, residual sugars, ethanol, melatonin and antioxidant capacity were analysed at different maturation times of 1, 2, 6 and 12 months. Beers inoculated with Brettanomyces yeast independently of the other microorganisms showed pronounced aromas characteristic of the Brettanomyces yeast. Maturation after 12 months showed balanced beers with “Brett” aromas, as well as an increase in the antioxidant capacity of the beers. Full article

Wine tourism has become an exciting avenue of development for rural wine-producing regions. The channels through which these millenary traditions are transmitted are diverse, and the wineries that practice heroic viticulture can sustainably influence the economic recovery process, especially after the COVID-19 crisis. This paper analyzes the possibilities offered by social media to promote rural territory and wine production in a sustainable way through wine tourism. For this purpose, we have used the case study of the wineries of the Ribeira Sacra appellation of origin and the Canary Islands context in the Lanzarote AO. The methodology used has counted, on the one hand, the existence of web pages of the geographical demarcations mentioned. On the other hand, a study of these wineries’ presence on the three main social networking sites, Facebook, Twitter and Instagram, has been carried out. The main focus has been on a content analysis of the social network Instagram, taking into account the terroir’s emotional values and tourist attractions. The results show that their presence on the Internet could be higher, as only 55% of the wineries of these appellations of origin have a website. In the case of Instagram, the percentages decrease in Ribeira Sacra and increase in Lanzarote. Finally, it has been possible to trace a model of rural development supported by sustainable tourism, wherein emotional values and transmitted attractions stand out, alongside elements related to the landscape and nature and the wine landscape, tradition and gastronomy. In the present study, we analyzed the main parameters related with the potential fertilization ability of two grapevine varieties, Godello and Mencía, during the years 2017 and 2018. The research was carried out in two vineyards of the Galician winegrowing Designation of Origin areas of Ribeiro and Ribeira Sacra. Ten vines of each variety were selected for bunch and flower counting, pollen calculations, pollen viability studies by means of aceto-carmine (AC) stain and 2, 3, 5-triphenyl tetrazolium chloride (TTC) methods, and the determination of their germination rate. In all vineyards the 50% fruitset was reached, except for Godello in Cenlle during 2017. The mean coulure value was higher for Godello (40.5%) than for Mencía (31%). Analyzing the pollen production per plant and airborne pollen levels, we observed important discordances between them, which can be due to the influence of weather conditions and be related with self-pollination processes. We found important differences on pollen viability depending on the applied method and variety, with higher values for the AC method than the TTC for both varieties in all study plots, and higher values for Mencía variety than Godello. Regarding germination rates, we observed a marked reduction in 2017 with respect to 2018, in all study sites and for both varieties. The analyzed parameters were useful to explain the different productive abilities of Godello and Mencía varieties in the two studied bioclimatic regions of Ribeiro and Ribeira Sacra. Full article

This article presents VineSens, a hardware and software platform for supporting the decision-making of the vine grower. VineSens is based on a wireless sensor network system composed by autonomous and self-powered nodes that are deployed throughout a vineyard. Such nodes include sensors that allow us to obtain detailed knowledge on different viticulture processes. Thanks to the use of epidemiological models, VineSens is able to propose a custom control plan to prevent diseases like one of the most feared by vine growers: downy mildew. VineSens generates alerts that warn farmers about the measures that have to be taken and stores the historical weather data collected from different spots of the vineyard. Such data can then be accessed through a user-friendly web-based interface that can be accessed through the Internet by using desktop or mobile devices. VineSens was deployed at the beginning in 2016 in a vineyard in the Ribeira Sacra area (Galicia, Spain) and, since then, its hardware and software have been tested to prevent the development of downy mildew, showing during its first season that the system can led to substantial savings, to decrease the amount of phytosanitary products applied, and, as a consequence, to obtain a more ecologically sustainable and healthy wine.
