It was also a very demanding job because it was done in extraordinary and challenging conditions due to the pandemic: inaccessible research labs, communication difficulties, and low morale. I worked for years to enhance by-products and waste deriving from agro-industrial activities, and I thought I had to write something. This Special Issue allowed me to do it and compare myself with others who have had similar experiences. I got to know a publishing house and appreciate its efficiency and seriousness.
