Social transformation has caused traditional rural food preparation techniques and cultural heritage to disappear gradually. Traditional rural women are in charge of rural traditional food preparation techniques, which they inherit through the family. Therefore, this study primarily aimed to employ the theory of planned behavior (TPB) to analyze the effects of attitudes toward rural food preparation techniques, subjective norms, and perceived behavioral control on behavioral intention to ultimately understand the behavioral intention of rural women in the sustainable extension of rural food preparation techniques. The TPB was utilized as a basis for conducting a quantitative study using questionnaire surveys. Purposive sampling and snowball sampling were employed, and 800 questionnaires were distributed. In total, 649 valid questionnaires were collected, and the recovery rate was 81.1%. The study tools used included the attitude scale, subjective norms scale, perceived behavioral control scale, and behavioral intention scale. The data were analyzed using confirmatory factor analysis, descriptive statistics, Pearson product difference correlation analysis, and multiple regression analysis. The results showed that attitudes toward rural food preparation techniques, subjective norms, and perceived behavioral control in rural women significantly affected the behavioral intention of sustainable extension. These results can provide agricultural organizations and relevant units with a reference for the sustainable extension of traditional food preparation techniques. Full article

This article aims to contribute to the limited literature on traditional gastronomic knowledge concerning acorn-based bread by ethnographically documenting the ingredients, preparation techniques and consumption practices of baked goods made from acorn seeds and flour that are still used today or at least still present in living memory. A qualitative comparative case method was adopted, and ethnographic data were gathered from 67 people in six selected Mediterranean, Central Asian and Middle Eastern countries. The analysis highlighted distinct trajectories in the development of acorn-based bread, showing some differences in terms of ingredients, preparation techniques and baking methods in the two cultural and geographical macro-regions. By exploring the evolution of the alimentary role of acorn bread in the past century, our findings also support the hypothesis that the product, at least during the last two centuries, has mostly been used as a famine food. By acknowledging the cultural importance of acorn fruits and acorn-based products, this study suggests that the rediscovery of acorn-based products and associated traditional knowledge may foster the sustainable development of rural and marginal regions in the Mediterranean, Middle East and Central Asia. This could help to reinforce the resilience of local communities and thus increase food security. Furthermore, reassessing acorns as a foodstuff may aid in developing innovative products in line with emerging trends in the food sector, which is looking for new non-cereal-based bakery products and other novel culinary applications. Food waste is a burden on society in terms of the money wasted. There is limited information on the determinants of food waste and the amount lost to food waste by households as most previous studies were on post-harvest losses. Hence, determinants of food waste among households in Kogi West Senatorial District, Kogi State Nigeria were investigated. A three-stage sampling technique was used to select the respondents, while a structured questionnaire was used for data collection. Data were analyzed using Tobit regression and an equality test. The study revealed that food waste was higher in male headed households. The average monthly food waste proportion among urban households was significantly higher than that of rural households. The estimated amounts lost to food waste per month were ₦2103 and ₦5530 for the rural and urban households, respectively. These represented 7.2% and 13.1% of the total expenditure on food per month for rural and urban households, respectively. Among rural households, leftovers of food and lack of proper storage were the main reasons for food waste, while leftovers of food and preparation of food more than needed were the reasons for food waste among urban households. The sex of respondents, work experience, and monthly income influenced the proportion of food waste among rural households, while the dependency ratio, monthly income, and monthly food expenditure were the determinants of proportion of food waste among the urban households. Non-Governmental Organization efforts through sensitization campaigns focused on the need to reduce food waste, especially among urban households, would help to reduce the financial burden of food waste on households. The spread of COVID-19 has affected not only public health but also agriculture, raising global concerns regarding the food system. As an immediate impact of COVID-19, farmers around the globe have had difficulties with sales, resulting in large amounts of overstocked agricultural products and food loss. This further threatens the livelihood of rural, poor farmers and impacts sustainable production. To provide a better understanding of the overstocking situation after the outbreak of the pandemic, this study depicts the distribution characteristics of overstocked agricultural products in China. After analyzing a nationwide data set collected from 3482 individuals/organizations by the Chinese Agri-products Marketing Association after the outbreak of the pandemic, we found that some of the initial prevention and control measures disrupted sales channels, and in turn, caused the farmers to suffer losses. The impact was more severe in perishable products and their production areas, as well as in poverty-stricken regions. Then, we identified China’s quick and effective actions to match the supply and demand. These findings suggest that emergency responses should coordinate the relationship between emergency actions and the necessary logistics of agricultural production. To prepare for the possibility of such shock in the future, the government should take actions to clear logistics obstacles for necessary transportation, keep enhancing the fundamental infrastructure and effective mechanism of the food supply chain, and actively include innovative techniques to build a more resilient food system. Fasting period and fasting status affect the feeding practices and nutritional status of Ethiopian Orthodox mothers. Even if children are exempted from fasting, some mothers do not prepare their food from animal sources as it could contaminate utensils for cooking family foods. Therefore, the objective of this study was to assess feeding practices and undernutrition in 6–23-months old children whose mothers are Ethiopian Orthodox religion followers during lent fasting and non-fasting periods in rural Tigray, Northern Ethiopia, and to identify associated factors. A community-based longitudinal study was carried out in Ethiopian Orthodox lent fasting and non-fasting periods. Using a multi-stage systematic random sampling technique, 567 and 522 children aged 6–23 months old participated in the fasting and non-fasting assessments, respectively. Statistical analyses were done using logistic regression, an independent sample t-test, Wilcoxon signed-rank (WSRT) and McNemar’s tests. The prevalences of stunting, underweight and wasting were 31.6–33.7%, 11.7–15.7% and 4.4–4.8%, respectively. The weight-for-height (WHZ) and height-for-age (HAZ) values for children of fasting mothers were significantly lower (p < 0.05) compared to those of non-fasting mothers. Likewise, the median weight-for-age (WAZ) and diet diversity score (DDS) of children of fasting mothers were also significantly higher in non-fasting than in fasting periods. A small proportion of children (2.3–6.7%) met the minimum acceptable diet (MAD) in the study population, but these measures were significantly increased (p < 0.001) in the children of non-fasting mothers. Mother’s fasting during lactation period of the indexed child was amongst the independent factors common in child stunting, underweight and wasting. Nutritional status and feeding practices of 6–23-month-old children are affected by maternal fasting during the fasting period. Therefore, without involvement of religious institutions in the existing nutritional activities, reduction of undernutrition would not be successful and sustainable. Full article

Progress of national Universal Salt Iodization (USI) strategies is typically assessed by household coverage of adequately iodized salt and median urinary iodine concentration (UIC) in spot urine collections. However, household coverage does not inform on the iodized salt used in preparation of processed foods outside homes, nor does the total UIC reflect the portion of population iodine intake attributable to the USI strategy. This study used data from three population-representative surveys of women of reproductive age (WRA) in Kenya, Senegal and India to develop and illustrate a new approach to apportion the population UIC levels by the principal dietary sources of iodine intake, namely native iodine, iodine in processed food salt and iodine in household salt. The technique requires measurement of urinary sodium concentrations (UNaC) in the same spot urine samples collected for iodine status assessment. Taking into account the different complex survey designs of each survey, generalized linear regression (GLR) analyses were performed in which the UIC data of WRA was set as the outcome variable that depends on their UNaC and household salt iodine (SI) data as explanatory variables. Estimates of the UIC portions that correspond to iodine intake sources were calculated with use of the intercept and regression coefficients for the UNaC and SI variables in each country’s regression equation. GLR coefficients for UNaC and SI were significant in all country-specific models. Rural location did not show a significant association in any country when controlled for other explanatory variables. The estimated UIC portion from native dietary iodine intake in each country fell below the minimum threshold for iodine sufficiency. The UIC portion arising from processed food salt in Kenya was substantially higher than in Senegal and India, while the UIC portions from household salt use varied in accordance with the mean level of household SI content in the country surveys. The UIC portions and all-salt-derived iodine intakes found in this study were illustrative of existing differences in national USI legislative frameworks and national salt supply situations between countries. The approach of apportioning the population UIC from spot urine collections may be useful for future monitoring of change in iodine nutrition from reduced salt use in processed foods and in households.
