The production and consumption of organic products have been increasing in Portugal, as well as in the European Union as a whole. The main objective of this work is to understand the consumption habits of organic medicinal and aromatic plants (OMAPs) among Portuguese adults. An online questionnaire was distributed using social networks, resulting in the collection and statistical analysis of 300 responses. Of the participants who reported consuming OMAPs, 44.3% showed a daily consumption pattern. The most frequently mentioned OMAPs for fresh consumption were parsley (Petrosselinum crispum L., 92%), garlic (Allium sativum L., 84.1%), and coriander (Coriandrum sativum L., 78.1%). The most commonly mentioned OMAP for consumption as dried plants were oregano (Origanum vulgare L., 74.6%), lemon balm (Melissa officinalis L., 49.2%), and lemon verbena (Aloysia citrodora L., 46.8%). The main reasons cited for using OMAPs were their benefits to health (58.7% of participants), benefits to the environment (33.2%), and reduced salt consumption (29.5%). Among these, the main health benefits mentioned included anti-inflammatory properties (45.0%), prevention of cardiovascular diseases (41.6%), and prevention of high cholesterol (39.9%). Furthermore, 82.5% of respondents considered themselves sufficiently, well, or excellently informed about the nutritional properties of OMAPs. This research initiates a discussion about whether profiling OMAP consumption habits can serve as a valuable tool for promoting organic farming in Portugal, increasing OMAP production and consumption, and strengthening the connection between these products and potential positive human health effects. This study aimed to investigate the antifungal and antimycotoxicogenic effect of binary and tertiary mixtures of Thymus vulgaris, Origanum sativum, and Coriandrum sativum essential oils (EOs), as well as emulsions based on EO mixtures, on fungi developed on wheat grains destined for the bakery industry. The chemical composition of the EO mixtures, the physical characteristics of the emulsions, and the influence of treatments on the proximate composition of wheat seeds were also studied. The methods used included the microbiological analysis of fungi developed on wheat seeds, the ELISA technique for determining the deoxynivalenol content (DON), gas chromatography coupled with mass spectrometry (GC-MS) to detect the chemical composition of the EOs, Zetasizer to analyse the particle sizes and their electric charge at the surface, and NIR analysis of the proximate composition of wheat. The chemical composition analysis revealed that thymol and o-cymene were the major components in the binary mixture of the EOs with thyme, linalool in the binary mixtures of the EOs with coriander and carvacrol, and o-cymene in the binary mixtures of the EOs with oregano. The results showed that, based on the zeta potential, the tertiary mixture ensured maximum emulsion stability, while the emulsion based on thyme and oregano was the less stable system. Regarding the antifungal and antimycotoxicogenic effect, the results showed that the highest inhibition potential on fungi was observed with the binary mixtures of the EOs based on thyme and oregano, and on deoxynivalenol (DON) when the binary emulsion based on the same EOs was applied to wheat seeds. The proximate composition of wheat seeds contaminated with DON showed an increase in protein content and mineral substances, and there were changes in the colour of the wheat seeds after treatment with the EOs. In conclusion, the results obtained in this study showed the possibility of using binary/tertiary mixtures of EOs and emulsions as healthy and environmentally friendly alternatives in the bakery industry. This study aims to highlight the antifungal, antimicotoxigenic potential and phytotoxic effect of three essential oils (EOs) of Origanum vulgare (OEO), Thymus vulgaris (TEO), and Coriandrum sativum (CEO) on wheat storage, but also the impact of EOs treatment on the sensory properties of bakery products obtained from the wheat seeds. The chemical composition of EOs was determined using GC-MS analysis; the fungal load was evaluated using the direct plating technique, while mycotoxin analyses were conducted using enzyme-linked immunosorbent assay (ELISA). A selective antifungal effect has been highlighted in terms of the action of EOs vapours. OEO and TEO are inhibited Alternaria, Fusarium and Drechslera, while Saccharomyces and Cladosporium have proven to be the most tolerant fungi. Drechslera is the most sensitive, the effect of all EOs being a fungicidal one. However, the fungicidal effect proved present in all EOs applied as vapours with values ranging between 0.2–0.4%. Regarding the phytotoxic effect of EOs vapours on the germination of the seeds, TEO and OEO had an inhibitory effect, especially at 0.4%. The effect is cumulative over time. The EOs inhibited deoxynivalenol (DON) occurrence; the maximum percentage of inhibition was obtained after 21 days of vapours exposure, being more effective in the case of 0.2%. EOs vapours treatment does not affect the quality of bread obtained from treated wheat seeds from a sensory point of view. Full article

In the present study, the essential oils (EOs) of some officinal plants from Abruzzo territory (Italy) were evaluated for their antimicrobial and antioxidant activities and their volatile fraction chemical characterization. The EOs were extracted from Rosmarinus officinalis, Origanum vulgare, Salvia officinalis, Mentha piperita, Allium sativum, Foeniculum vulgare, Satureja montana, Thymus vulgaris and Coriandrum sativum seeds. The antimicrobial activity was screened against thirteen Gram-positive and Gram-negative strains to determine the Minimal Inhibitory Concentration (MIC). The total phenolic content (TPC) and the antioxidant capacity (AOC) were assessed by means of Folin-Ciocâlteu method, and Trolox Equivalent Antioxidant Capacity with 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid (TEAC/ABTS), Ferric Reducing Antioxidant Power (FRAP) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) assays respectively. Among the nine EOs tested, T. vulgaris, S. montana, O. vulgare and C. sativum EOs showed MIC values ranging from 0.625 to 5 μL/mL. The AOC and TPC results for these species were also interesting. The major components for these EOs were thymol for T. vulgaris (44%) and O. vulgare (40%), linalool (77%) for C. sativum, and carvacrol for S. montana (54%). The results allowed the study to establish that these EOs are good candidates for potential application as biopreservatives in foods and/or food manufacture environments. Full article
