Special Issue Information
Dear Colleagues,
Sparkling wines have great economic importance in all wine-producing areas of the world and have attracted the interest of researchers in this category of wines in the last few years.
Several aspects have been considered, including innovative yeasts, advanced oenological techniques, new varieties, and their effects on aromatic and sensory profiles. Moreover, the issue of “light-struck taste”, which can affect sparkling wines, has been deeply studied to prevent it. Consumer preferences were also surveyed.
The aim of this Special Issue is to collect recent studies on sparkling wines on all the topics concerning this wine category.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Beverages is an international peer-reviewed open access quarterly journal published by MDPI.
