Cover Story: The use of edible biopolymers and natural additives obtained from food processing byproducts is a sustainable strategy for food packaging applications. This cover illustrates the use of tomato byproducts as a source of antioxidant peptides through their hydrolysis with the commercial enzyme Alcalase. Gelatin is then used as a carrier for the generated antioxidant peptides to be applied as a coating of meat and modulate its physicochemical properties under storage conditions. Coating prevented lipid oxidation of meat, and the enriched-coated meat presented high antioxidant activity after cooking. These results suggest the positive role of enriched gelatin coating in extending the shelf-life of meat during storage. View this paper.
