The objective was to determine whether dairy cows may activate traditional and alternative inflammatory pathways by consuming a combination of a phytogenic diet (essential oil and pepper resin). Twenty pregnant Jersey cows in the final (third) lactation phase (260 days in milk) were divided into two groups: control, with no additive consumption, and test, with the addition of the phytogenic to the concentrate portion of the diet (150 mg/day/kg dry matter). Blood samples were collected on experimental days 1, 7, 14, 21, 28, 35, and 42 by coccygeal vein puncture to assess the complete blood count, serum biochemistry of levels of total protein, albumin, and globulin, as well as carbohydrate metabolism (glucose), lipid metabolism (cholesterol and triglycerides), protein metabolism (urea), activities of hepatic enzymes (gamma-glutamyl transferase (GGT) and aspartate aminotransferase (AST)), cytokine levels (interleukins IL-1β, IL-6, and IL-10), antioxidant response [thiobarbituric acid reactive substances (TBARS), reactive oxygen species (ROS), total thiol (PSH), and non-protein thiol (NPSH), and glutathione S(GST)], cholinergic system [total cholinesterase (ChE) and acetylcholinesterase (AChE)], purinergic signaling [NTPDase, 5′ectonucleotidase and adenosine deaminase (ADA)], and energetic metabolism enzymes [creatine kinase (CK), pyruvate kinase (PK), and adenylate kinase (AK)]. Productive performance was assessed through feed intake and milk production. The results revealed that the use of phytogenic compounds significantly influenced the cholinergic system and purinergic signaling associated with immunology. The reduction in cholinesterase (ChE) activity and the increase in acetylcholinesterase (AChE) activity in lymphocytes suggest the modulation of the cholinergic system, enhancing the immune response. Furthermore, the elevated activity of adenosine deaminase (ADA) in lymphocytes and platelets, together with increased ATP and ADP hydrolysis in platelets, indicates the beneficial regulation of purinergic signaling, potentially contributing to inflammatory modulation. These effects were accompanied by a lower production of pro-inflammatory cytokines (IL-1β and IL-6) and a higher production of IL-10, reinforcing an anti-inflammatory profile. The reduced leukocyte and lymphocyte counts may reflect a lower inflammatory demand, while the increased levels of NPSH and GST antioxidants suggest cellular protection. Despite these physiological changes, productive performance and milk quality remained unaffected. In summary and practical terms, including this additive in the cows’ diet benefits the cow’s health in the final third of gestation when the animal already has a reduced immune response due to advanced gestation. Urea present in cattle urine contributes large amounts of nitrogen (N) to grazed pastures, which can be the equivalent to approximately 1000 kg N ha−1. However, there are no studies in volcanic soils of southern Chile on the effect of different concentrations of urinary N deposited in the soil, nor of the effect different wetting and drying conditions mimicking the variation in weather conditions on the nitrification process from urea to NH4+ and total oxidized nitrogen (TON) over time. In addition, the inhibition of nitrification driven by the accumulation of NH3 at high rates of N applied to Andisol has not been evaluated. Fresh cattle urine was applied at three different rates of N equivalent to 247 kg N ha−1 (Low N), 461 kg N ha−1 (Medium N), and 921 kg N ha−1 (High N), as well as deionized water as a control. Further, three moisture conditions were imposed: constant moisture (CM), drying–rewetting (DRW) cycles at 7-day intervals, and soil drying (SD). Destructive soil core samples were evaluated for top and bottom halves individually every 7 days over a 36-day period to measure changes on inorganic N and pH. There were no interaction effects for N rates and soil moisture. The main effect of the different rates of N on mineralization was significant throughout the incubation period, while the effect of the different moisture conditions was variable over time. High N was associated with elevated NH3 concentrations and could explain why total N mineralization was partially inhibited. These results suggest that the presence of different nitrifying microorganisms in soil under different chemical and physical conditions determines nitrification, and thus, the oxidation of ammonia should be studied in more detail as the first step of nitrification, specifically in volcanic soils. With the increasing demand for food worldwide, the use of fertilizers in the agricultural industry has grown. Natural fertilizers derived from the use of animal manure slurry, especially cattle and cow, are responsible for 40% of the agricultural ammonia emission. The EU defined the goal to reduce NH3 emission drastically until 2030, yet until today an overall increase has been observed, making it more difficult to reach the target. In this study, we used two by-products from the dairy industry, namely flushing milk and acidic whey, to lower the pH of cattle manure slurry and therefore mitigate the loss of nitrogen in the form of ammonia into the atmosphere, making it available in the soil. Measurements of pH, ammonium nitrogen, total Kjeldahl nitrogen, and lactic acid bacteria colonies were conducted in a lab-scale experiment to test the hypothesis. Afterwards, pH measurements were conducted on bigger samples. We found that whey effectively reduced the pH of manure below 5, therefore moving the ammonia/ammonium equilibrium strongly towards ammonium. Flushing milk on the other hand lowered the pH to a smaller extent, yet allowed for faster hydrolysis of urea into ammonium. The findings in this study present a suitable and environmentally friendly approach to help reach the climate goals set by the EU by using by-products from the same industry branch, therefore being a suitable example of circular economy.
