Is the Mineral Content of Muscle Tissue (Longissimus Lumborum) in Cattle Finished During the Rainy Season in the Eastern Amazon Influenced by Different Farming Systems?

The scientific literature currently lacks studies that evaluate the nutritional composition of the tissues of cattle raised in different systems, so that the nutritional effects can be known and used to enhance consumption and use in the diet. The aim was therefore to assess whether the mineral content of muscle tissue (longissimus lumborum) in cattle finished during the rainy season in the Eastern Amazon is influenced by different farming systems. The treatments consisted of four systems (three pasture production systems and one feedlot system). 1. native wetland pasture in Santa Cruz do Arari (Mesoregion of Marajó); 2. native wetland pasture in Monte Alegre (Mesoregion of Baixo Amazonas); 3. cultivated dryland pasture in São Miguel do Guamá (Mesoregion of Nordeste Paraense); and 4. Confinement in Santa Izabel do Pará (Metropolitan Region of Belém). The analyses were carried out on samples of the longissimus lumborum muscle tissue of 48 male, castrated, crossbred Nelore cattle, twelve per breeding system, from commercial farms, destined for meat production, finished during the rainiest period of the year (between January and June). In systems 1 and 2, the animals were slaughtered in licensed slaughterhouses; the animals in systems 3 and 4 were slaughtered in commercial slaughterhouses. Food sampling and chemical analysis, soil sample collection and analysis, longissimus lumborum muscle tissue collection, sample preparation and digestion, and inductively coupled plasma optical emission spectrometry were evaluated. The experimental design was completely randomized in a linear model with four rearing systems and one period (rainy). The data was compared using the Statistical Analysis Systems (SAS) program. All analyses were carried out considering a significance level of 0.05. Samples of the diets offered (pasture and concentrate) were also collected. The Amazon systems influenced the macro- and micromineral content in the muscles of cattle (p < 0.05). The interaction between pasture systems vs. confinement showed differences in the minerals calcium (Ca), magnesium (Mg), phosphorus (P), copper (Cu), zinc (Zn), iron (Fe), and manganese (Mn) (p < 0.05). However, there was no difference in the values of sodium (Na), potassium (K), and sulfur (S) between the rearing systems (p > 0.05). By contrast, the cultivated pasture system vs. extensive pasture showed differences in all the elements evaluated (p < 0.05). The rearing systems of the Eastern Amazon influenced the mineral content of beef, which continues to be an excellent source of macro- and microminerals and can compose the human diet. Full article

Impact of Food Exposome on Atherosclerotic Plaque Stability: Metabolomic Insights from Human Carotid Endarterectomy Specimen

Carotid atherosclerotic stenosis (CAS) is a leading cause of ischemic stroke. Current understanding of plaque vulnerability remains largely confined to histopathological characterization. Consequently, identifying molecular determinants of plaque stability represents a major challenge to advance prevention strategies. Untargeted metabolomic analysis was performed using mass spectrometry coupled to liquid chromatography on carotid plaques removed from patients with CAS undergoing endarterectomy. To identify factors influencing plaque stability, we compared 42 asymptomatic with 30 symptomatic CAS patients. Associations between each annotated metabolite in plaques and asymptomatic CAS status were assessed using logistic regression models. Asymptomatic patients exhibited lower plasmatic levels of C-reactive protein (CRP) and higher HDL-cholesterol. Within the plaques, caffeine and its catabolites, paraxanthine and methylxanthine, were associated with plaque stability and were correlated with HDL-cholesterol. Additional plant-based diet biomarkers including N5-acetylornithine, gentisic acid, proline betaine, and homostachydrine were also associated with plaque stability. In contrast, N-methylpyridone carboxamides, reflecting niacin excess, involved in vascular inflammatory processes, were both associated with plaque vulnerability and also correlated with higher CRP. Our findings provide molecular evidence that plant-based diets, including coffee, promote carotid plaque stability, while excessive niacin intake, linked to processed foods, may be detrimental. Metabolomics offers new insights into food exposome-related vascular risk. Full article

Obesity and metabolic disorders remain major global health concerns, traditionally attributed to excessive caloric intake and poor diet quality. Recent studies emphasize that the timing of meals plays a crucial role in determining metabolic health. This review explores chrononutrition, a growing field that examines how food intake patterns interact with endogenous circadian rhythms to influence energy balance, glucose and lipid metabolism, and cardiometabolic risk. The circadian system, which includes a central clock in the suprachiasmatic nucleus and peripheral clocks in metabolic tissues, regulates physiological functions on a 24 h cycle. While light entrains the central clock, feeding schedules act as key synchronizers for peripheral clocks. Disrupting this alignment—common in modern lifestyles involving shift work or late-night eating—can impair hormonal rhythms, reduce insulin sensitivity, and promote adiposity. Evidence from clinical and preclinical studies suggests that early time-restricted eating, where food intake is confined to the morning or early afternoon, offers significant benefits for weight control, glycemic regulation, lipid profiles, and mitochondrial efficiency, even in the absence of caloric restriction. These effects are particularly relevant for populations vulnerable to circadian disruption, such as adolescents, older adults, and night-shift workers. In conclusion, aligning food intake with circadian biology represents a promising, low-cost, and modifiable strategy to improve metabolic outcomes. Integrating chrononutrition into clinical and public health strategies may enhance dietary adherence and treatment efficacy. Future large-scale studies are needed to define optimal eating windows, assess long-term sustainability, and establish population-specific chrononutritional guidelines. Full article

The growing demand for biofuels, especially ethanol produced from corn, has driven the production of co-products such as dried distillers grains with solubles (DDGS). With a high protein content (around 30%), fiber, and minerals, DDGS presents an economical alternative for animal nutrition, replacing traditional sources like soybean meal while maintaining productive performance and reducing costs. This study evaluated the total replacement of soybean meal with DDGS in the diet of confined Holstein cattle, focusing on weight gain, feed intake, digestibility, feed efficiency, animal health, meat quality, and economic viability. The 24 animals received diets with 80% concentrate, containing either DDGS or soybean meal, and no significant differences were observed in terms of body weight (p = 0.92), feed intake (p = 0.98), or feed efficiency (p = 0.97) between the two treatments. The average daily gain was 1.25 and 1.28 kg for cattle in the DDGS and soybean meal groups, respectively (p = 0.92). Regarding metabolic and digestive parameters, no relevant changes were found in blood levels, except for higher serum cholesterol (p = 0.03) levels in animals fed DDGS. The digestibility of neutral detergent fiber (NDF) (p = 0.03) and acid detergent fiber (ADF) (p = 0.05) was lower in the DDGS group, while the digestibility of ether extract was higher (p = 0.02). Rumen fluid analysis revealed an increase in the production of short-chain fatty acids (p = 0.01), such as acetic and butyric acids (p = 0.01), in the DDG-fed animals. In terms of meat quality, animals fed DDGS produced meat with lower levels of saturated fatty acids (SFA) (p = 0.05) and higher levels of unsaturated fatty acids (UFA) (p = 0.02), especially oleic acid (p = 0.05). This resulted in a healthier lipid profile, with a higher UFA/SFA ratio (p = 0.01). In terms of economic viability, DDGS-based diets were 10.5% cheaper, reducing the cost of production per animal by 7.67%. Profitability increased by 110% with DDGS compared to soybean meal, despite the high transportation costs. Therefore, replacing soybean meal with DDGS is an efficient and economical alternative for feeding confined cattle, maintaining zootechnical performance, increasing meat lipid content and improving fatty acid profile, and promoting higher profitability. This alternative is particularly advantageous in regions with easy access to the product. Full article

The objective of this study was to evaluate whether the addition of fibrolytic enzymes to the diet of cattle in confinement improves feed digestibility weight gain; as well as evaluating the profile of fatty acids in the ruminal environment and in meat fatty acids profile. In total, 24 male dairy cattle (Holstein) aged 8 months and weighing an average of 212 kg, were divided into 2 groups: control (without additive) and treatment (0.25 g of enzymes/kg of dry matter of total diet). The experiment lasted 120 days. The first 20 days are allocated for the adaptation period. During the study, samples of blood, ruminal fluid, and feces were collected, as well as weighing the cattle and measuring their daily feed consumption. There was no effect of treatment on body weight, feed intake, feed efficiency, and nutrient digestibility (p > 0.05). Cholesterol levels were higher in the serum of cattle that consumed the enzyme; serum amylase activity was higher in cattle that received the additive only on day 120 of the experiment (p < 0.05). There was a greater amount of volatile fatty acids in the ruminal fluid, combined with a greater amount of acetic acid. The amount of fat in the meat of cattle that consumed fibrolytic enzymes was higher compared to the control group (p < 0.05). Meat from cattle in the treatment group had lower amounts of saturated fatty acids and higher amounts of unsaturated fatty acids (p < 0.05). The fibrolytic enzymes addition altered rumen fermentation in such a way that lipid metabolism was changed, which had a serious impact on cholesterol and tissue levels, that is, in the meat that had a greater amount of total lipids, an unsaturated fat. This study investigates the effects of pineapple by-products on feed preservation during storage at two different temperatures (25 °C and 4 °C) and on European sea bass (Dicentrarchus labrax) stress resistance. Four isoproteic, isolipidic, and isoenergetic diets were manufactured: CTRL—negative control, commercial diet without added antioxidants; VITE—positive control, CTRL diet with 100 mg kg−1 of vitamin E; and P2 and S2—VITE diet with 2% pineapple peel or stem flour, respectively. The fish (13.5 ± 0.8 g) were split into four replicate groups per diet and fed ad libitum for 12 weeks, after which they were subjected to a stress challenge of air exposure (1 min) followed by confinement (5 min, 100 kg m−3). Despite storage time lowering the antioxidant properties of all diets, P2 and S2 showed increased antioxidant capacity (DPPH, ABTS•+, and ORAC) before and after storage. The diets were well accepted by the fish, and the VITE-fed fish showed significantly lower lipid peroxidation values in the liver and muscle compared to all remaining diets. However, pineapple by-product inclusion did not result in increased fish stress resistance. Further optimization is required for the successful use of pineapple by-products as natural antioxidants in aquafeeds. Full article

Background/Objectives: Binge Eating Disorders are severe mental and physical health conditions, closely linked to lifestyle habits. The aims are to describe the prevalence of Binge Eating Disorders and their correlation with nutritional habits and lifestyle factors within the Spanish population. Methods: A descriptive, cross-sectional design was employed. Using non-probabilistic snowball sampling, an electronic survey was released. A total of 22,181 Spanish adults were evaluated, excluding those with any pathology or limitation at the time of survey response that could potentially affect their diet, such as hospitalization or confinement. The validated Nutritional and Social Healthy Habits (NutSo-HH) scale was used to collect data on nutrition, lifestyle, health habits, and socio-demographic variables. Descriptive and inferential statistics were used. Non-parametric tests were applied due to non-normal distribution. Results: Of the 22,181 sample subject (80.8% female), a total number of 260 individuals reported Binge Eating Disorder. The prevalence of Binge Eating Disorder was higher in women than in men (239 vs. 21 respectfully; 91.9%). Individuals with Binge Eating Disorder exhibited poorer nutritional indices (p < 0.001), higher consumption of ultra-processed and fast food (p < 0.001), sugary soft drinks (p = 0.01), and worse sleep quality (p < 0.001). Although time dedicated to physical activity was not different, individuals with Binge Eating Disorder were more sedentary and had lower health status (p = 0.11 for sport practice). Behavioral regulation plays a key role in managing BED, highlighting the need for personalized intervention strategies. Conclusions: Binge Eating Disorders are associated with lifestyle and health habits and worse quality of life. These data can help design public health programs for early detection and effective treatment. Full article

The aim of this study was to investigate the effects of including guanidinoacetic acid (GAA) in the diet of Jersey cows during their first lactation, evaluating the effects on the ruminal environment, productivity, milk composition and quality, and hematological variables. The study used 18 Jersey animals in their first lactation with 230 days of lactation. The study lasted 28 days: 14 days of adaptation, and 14 days for data and sample collection. The animals were housed in a compost barn confinement system and milking was performed by a robotic system. The cows were randomly divided into two groups of nine each, a control group and a treatment group (guanidinoacetic acid at a dose of 10 g animal/day). The animals were fed individually provided at three times, with weighing of the leftovers whenever necessary. The diet was formulated to meet the nutritional requirements of the animals, using the Nutrient Requirements of Dairy 2001 and considering an average daily production of 20 L/cow. The animals in the treatment group showed higher feed intake compared to the control group, and consequently, milk production was also higher in the treatment group. No difference was observed between the groups for milk efficiency, since the increase in production is directly related to the increase in intake of the treated animals. The cows that consumed GAA had a higher percentage of total milk solids; however, there was no significant effect on the percentage of fat, protein, lactose and fatty acid profile. Greater bacterial activity was observed in the ruminal fluid, which may have improved degradation and increased the rate of passage of the feed, resulting in greater milk production. There was no effect of the treatment on the volatile fatty acid profile in the rumen. A treatment × day interaction for beta-hydroxybutyrate concentration in the blood was observed, with lower levels observed in the animals in the treatment group. The total leukocyte count was lower in the blood of cows that consumed GAA as a result of the lower lymphocyte count. On days 21 and 28, a higher concentration of total cholesterol was observed, associated with lower activity of the enzymes creatine kinase, aspartate aminotransferase (AST), alanine aminotransferase (ALT), gamma glutamyl transferase (GGT) in the serum of cows in the treatment group compared to the control group. On day 28, lower lipid peroxidation (TBARS) associated with an increase in antioxidant enzymes (superoxide dismutase and glutathione S-transferase) was observed in cows that consumed GAA. The results allow us to conclude that the addition of GAA to the diet of dairy cows has positive effects on zootechnical performance. Full article

This study determined whether adding condensed tannins to the diet of confined lamb improves performance, metabolism, health, and meat composition and quality. We used 24 Lacaune lambs with an average initial weight of 24.5 ± 0.24 kg. The animals were divided into 12 pens with two animals each. In the treatment group, a black wattle extract was added to the lamb concentrate (2.5 g/kg dry matter), while the control group received only the basal diet (without extract). Black wattle contained 98.6 g/kg of condensed tannin. There was no difference between the performance variables, which included weight gain, feed intake, and feed efficiency. However, the group fed on condensed tannins showed higher carcass yield and a higher percentage of linked intramuscular fat. In meat, a lower proportion of saturated fatty acids combined with higher concentrations of unsaturated fatty acids was observed in lambs of the condensed tannin group. The polyunsaturated fatty acids (PUFA) were no different; however, a higher PUFA/SFA ratio was observed in animals with condensed tannin intake, and a higher proportion of ω6 and ω3 was observed in the meat of these animals. The meat’s protein and ash content did not differ between treatments, as did the meat’s water retention capacity, color, and luminosity. Furthermore, animals that fed on condensed tannins had lower cholesterol levels and higher globulin content. The values of erythrogram variables were lower in lambs that consumed condensed tannins. More significant ruminal bacterial activity was also observed in the group receiving condensed tannins. The antioxidant effect was verified with lower thiobarbituric acid reactive species (TBARS) levels and more significant antioxidant enzyme activity. We conclude that adding condensed tannins improves carcass yield and increases the percentage of fat in the carcass, improving the fatty acid profile, which may be linked to the antioxidant effect, in addition to the health benefits of the consumer of this product. The aim of the study was to determine the effects of replacing soybean meal with insect meal on the body weight and the chemical composition of selected muscle groups of common pheasant females and males, including the mineral composition and the amino acid profile of the thigh and breast muscles. The study was conducted on three feeding groups, namely one control and two experimental groups. In the control group, plant feed components were used, which are commonly used to feed pheasants in confined breeding facilities. In the experimental groups, 100 g (group II) and 200 g (group III) portions of insect meal were introduced instead of the plant-protein components. The experiment used a preparation of insect larvae (Hermetia illucens) containing approximately 52% crude protein. The pheasant diet supplementation applied contributed to an increase in the proportion of muscles in the carcasses, with the highest effectiveness obtained for a 20% addition of insect meal. Lower and significant differences were noted in the feed conversion by birds from the experimental groups, as compared to the control group. The chemical composition of the birds’ muscles also changed. The experimental groups exhibited higher protein and fat contents and a lower water content. No significant changes in the amino acid profile or the mineral composition of the muscles were noted. The few exceptions concerned the methionine levels in both muscle groups and the isoleucine levels in the breast muscles. In most cases, the mineral composition did not vary significantly (p < 0.05). When supplementing the diet of breeding pheasants for improving meatiness, a 20% addition of insect meal is recommended, which affects the production effect of this trait while reducing feed consumption and maintaining the fatty acid profile. Background/Objectives: The Mediterranean Diet (MD) is a lifestyle offering numerous health benefits. Nevertheless, the adherence to the MD is moderate even in Mediterranean countries. While sociodemographic factors influence MD adherence, additional impacts occurred due to the COVID-19 pandemic. This cross-sectional longitudinal study with three cohorts of Portuguese adults analyzes MD adherence before, during, and after the COVID-19 pandemic, and explores the effect of sociodemographic variables. Methods: Sociodemographic factors, lifestyle habits, and MD adherence were assessed in the years 2019, 2021, and 2024 with an online self-filled questionnaire. MD adherence was measured with the Mediterranean Diet Adherence Screener (MEDAS). Results: MEDAS score increased significantly (p < 0.05) from 2019 to 2021 (6.2 ± 0.7 to 7.7 ± 0.1), followed by a significant (p < 0.05) decrease in 2024 (7.2 ± 0.1) relative to 2019, which was more pronounced in participants with higher income. Accordingly, a trend in healthier food choices was observed followed by a decline in 2024. Of note is the significant increase in red meat consumption (p < 0.05) in 2024 relative to 2021. Respondents who consumed more red meat were mostly men, employed, or in a stable relationship. Most respondents practiced sport “Never or occasionally” in 2019 and 2021 (59.4 and 55.2%, respectively); in 2024, this category was significantly (p < 0.05) reduced (40.9%); men or higher-income participants were more likely to meet the recommended activity levels. Conclusions: This study reveals that the improvements in MD lifestyle during the pandemic were not sustained in 2024, as healthier habits formed during confinement were not fully integrated into long-term behavior. These findings strengthen the need for targeted public health interventions to promote the MD. Full article

This study aimed to evaluate the fatty acid (FA) profile in milk from commercial farms with varying pasture levels in the diet during spring and fall, and to investigate the physical and chemical properties of butter to assess the impact of FAs on technological and nutritional properties. Milk sampling was conducted biweekly from six farms, categorized into high (HP) and low (LP) pasture treatments based on pasture intake: >60% and <35%, respectively. Butter was made from a pasture-based system (GRZ) and a confined system (C). No differences were observed in milk fat percentage between HP and LP in either season. High pasture had 85–66% more conjugated linoleic acid (CLA, p = 0.01), 74–48% more trans-vaccenic acid (TVA, p = 0.01), and 21–15% more branched-chain FAs (BCFAs, p = 0.006) than LP in spring and fall, respectively. In fall, butter from C had lower saturated FAs (SFAs, p = 0.005), higher unsaturated FAs (UFA, p = 0.008), and a lower spreadability index (SI, p = 0.005) than GRZ, resulting in softer butter. In conclusion, HP in both seasons had higher contents of FAs considered healthy for consumers compared to LP. Contrary to expectations, in fall, C showed higher UFAs and lower SFAs in butter, leading to better technological characteristics than GRZ. Full article

This study investigated the effects of dietary energy levels during late gestation on mineral content in the plasma, colostrum, and milk of jennies postpartum. Twenty-four pregnant multiparous DeZhou jennies, aged 6.0  ±  0.1 years, with a body weight of 292  ±  33 kg, an average parity number of 2.7  ±  0.1, and similar expected dates of confinement (74  ±  4 days), were randomly allocated to three groups and fed three diets: high energy (12.54 MJ/kg, HE), medium energy (12.03 MJ/kg, ME), and low energy (11.39 MJ/kg, LE). Blood samples were collected from the jugular vein of each jenny at time points of 0 h, 24 h, 48 h, 5 d, 7 d, and 14 d after parturition. Additionally, milk samples were collected through manual milking, and an analysis of the mineral content was conducted. The results showed that compared with HE, both ME and LE significantly increased the levels of calcium (Ca), phosphorus (P), zinc (Zn), selenium (Se), molybdenum (Mo), and cobalt (Co) in the plasma and Ca, P, magnesium (Mg), copper (Cu), manganese (Mn), Zn, selenium (Se), molybdenum (Mo), and Co in the milk of jennies postpartum (p < 0.05); ME also increased the levels of potassium (K), iron (Fe), and Mn in plasma and K and Fe in milk (p < 0.05). The levels of Ca, K, Mg, P, Fe, Cu, Mn, Co, Se, Zn, and Mo in plasma and milk gradually decreased with increasing postpartum time. Their contents were the highest at 0 h postpartum, rapidly decreased after 24 h postpartum, and declined to the lowest on day 14 postpartum. The interaction between dietary energy level and postpartum time showed that although the concentrations of the minerals Ca, P, K, Mg, Fe, Cu, Mn, Zn, Co, Se, and Mo decreased in jennies’ plasma and milk in the treatment groups with different energy levels as postpartum time increased, the pattern of change was also influenced by dietary energy level. The influence of dietary energy level in late gestation on the mineral content of milk and plasma during the postpartum colostrum phase was higher than that during the milk phase. In conclusion, this study demonstrated that, under the current experimental conditions, the mineral content of the colostrum, milk, and plasma of jennies after parturition was dependent on the dietary energy level during late gestation. The aim of this study was to evaluate the effect of genetic groups and diets with different sources of nonprotein nitrogen (NPN) on the carcass and meat characteristics of beef heifers. The meat from 40 heifers (20 ½ Angus ½ Nellore (A × N) and 20 ½ Charolais ½ Nellore (L × N)), finished in feedlots, was used. The heifers were fed diets containing different sources of NPN—(1) a diet with livestock urea and protected urea (LPU) and (2) a diet with extruded urea (EU)—in a completely randomized design with a 2 × 2 factorial arrangement. Carcass, composition and meat quality evaluations were carried out. There were no significant interactions between diet and genetic group for most of the variables evaluated (p > 0.05). The A × N heifers had higher hot carcass weights (305.73 vs. 279.80 kg), loin eye areas (80.87 vs. 75.45 cm2), subcutaneous fat thicknesses (8.69 vs. 6.35 mm) and lower shear forces (6.98 vs. 7.7 kg) compared to the C × N heifers (p < 0.05). The meat from the A × N heifers had higher proportions of saturated fatty acids (49.41 vs. 47.95%), with no effects on the proportions of monounsaturated (47.57%) and polyunsaturated (4.01%) fatty acids. The A × N heifers had better carcass and meat characteristics, while the C × N heifers had meat and fat with better fatty acid profiles. Full article

Background: The COVID-19 lockdown represented an immense impact on human health, which was characterized by lifestyle and dietary changes, social distancing and isolation at home. Some evidence suggests that these consequences mainly affected women and altered relevant ongoing clinical trials. The aim of this study was to evaluate the status and changes in diet, physical activity (PA), sleep and self-reported health status (SRH) as perceived by older adult men and women with metabolic syndrome during the COVID-19 lockdown. Methods: We analyzed data from 4681 Spanish adults with metabolic syndrome. We carried out a telephone survey during May and June 2020 to collect information on demographics, dietary habits, PA, sleep, SRH and anthropometric data. Results: The mean age of participants was 64.9 years at recruitment, and 52% of participants were men. Most participants (64.1%) perceived a decrease in their PA during confinement. Regarding gender-specific differences, a higher proportion of women than men perceived a decrease in their PA (67.5% vs. 61.1%), Mediterranean diet adherence (20.9% vs. 16.8%), sleep hours (30.3% vs. 19.1%), sleep quality (31.6% vs. 18.2%) and SRH (25.9% vs. 11.9%) (all p < 0.001). Conclusions: The COVID-19 lockdown affected women more negatively, particularly their self-reported diet, PA, sleep and health status. Full article
