Special Issue Information

Dear Colleagues,

The identification and quantification of bioactive ingredients in foods that provide functional properties are useful for the development of new functional foods, and for consumers. The analytical methods of chemical analyses have seen remarkable development in recent years due to the improvement of the analytical instruments and new data analysis techniques. Research on the development and validation of new chemical analysis methods supports the right analytical tools for further studies in food science, such as functional food formulation, assessing food quality throughout the processing lines, profiling food products, and determining the shelf life of food products based on the active ingredients.

This Special Issue on the “Chemical Analysis of Bioactive Ingredients in Food” is planned to cover a wide range of topics on the analytical methods applied to determine the bioactive compounds in food samples. Papers dealing with method development and the validation of new analytical techniques including sample preparation, detection and quantification approaches, and chemometrics are welcome. Additionally, papers discussing the analytical methods developed to assist the quality control of raw materials, semi-finished goods, and finished goods in food industries will be also included.
