Special Issue Information

Dear Colleagues,

Nutritional impact and food safety are two of the most critical topics in food science today. In recent years, various analytical methodologies have been developed to evaluate the content of nutraceutical compounds, including in innovative food products. At the same time, increasing attention is being paid to food safety, particularly with the introduction of novel foods, raising the need to assess potential side effects on human health.

This Special Issue brings together cutting-edge research exploring how molecular techniques are expanding our understanding of food composition, functionality, and safety.

Contributions will focus on the identification of bioactive compounds, nutrient bioavailability, molecular changes during processing and storage, and the detection of contaminants and adulterants. Emphasis will be placed on how these molecular insights can enhance nutritional quality, support regulatory standards, and protect consumer health.

Dr. Rosalia Zianni (Istituto Zooprofilattico Sperimentale della Puglia e della Basilicata) will assist Dr. Mariachiara Bianco in managing this Special Issue.
