Interests: food quality
To protect the health of consumers, place healthy and safe food on the market, and ensure safe water for human consumption, this Special Issue will cover research in the field of contaminants in food and food supplements such as heavy metals, mycotoxins, and plant toxins, dioxins and similar PCBs, polycyclic aromatic hydrocarbons, pesticides, and acrylamide. In the area of quality, this Special Edition will publish research related to macro- and micronutrients in food, flavonoids, and similar compounds, as well as research related to food adulteration and nutritional supplements, including pharmacologically active substances.
In addition to this research, the authors can also attach data on the risk assessment of consuming contaminated food. Further, description of analytical techniques characteristic for the determination of individual contaminants in food, micro- and macronutrients, and food adulteration is of interest.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process.
