Dear Colleagues,
Food processing and preservation have played a distinguished role in the development of people’s daily diet. Process technologies like refrigeration, fermentation, and canning make foods safe, transportable, and available. Meanwhile, to further achieve appreciable shelf life, aesthetic appeal and economic benefits, the application of chemical treatments (e.g., hydrogen sulfide, melatonin, glycine betaine), physical techniques (e.g., adjusting temperature and humidity, nano-packaging materials, edible coatings) and biotechnologies (e.g., microbial secondary metabolite preservatives) has made great progress in postharvest preservation, with emphasis on delaying quality deterioration. Technological innovation for the processing and preservation of fruits and vegetables can address social concerns and food security issues. Therefore, we would be thrilled if you could submit a review or research paper on the latest knowledge and novel research trends for this Special Issue.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
