Dear Colleagues,
In its movement toward a healthier and longer-living population, Food Science has received wide opportunities for modern methods of instrumental analysis of new components and the creation of bioavailable delivery systems based on them. Accurate characterization of the original ingredients and the protocol for creating their new forms, evaluation of safety and efficacy, and the study of the invariability of the obtained properties in the composition of food products are what ensures the advancement of this field of knowledge and allows obtaining accurate and reproducible research results. This Special Issue focuses on the latest advances in the discovery, development, characterization, and application of new food functional ingredient delivery systems and methods for their research.
