Mariusz Rudy is an associate professor and head of the Department of
Agricultural Processing and Commodity Science at the University of
Rzeszów. He is the Guest Editor of Nutrients, Foods, and the International Journal
of Environmental Research and Public Health. His research interests
include food technology, meat quality, and food analysis.
