Dr. June I. Matthews is a Professor in the Brescia School of Food and Nutritional Sciences, Western University, London, ON, Canada. She is also a Registered Dietitian and a Professional Home Economist. Dr. Matthews obtained her MSc and PhD in Family Relations & Applied Nutrition from the University of Guelph, Guelph, ON, Canada. She teaches courses related to community nutrition as well as agriculture and food systems. Her current research interests include an investigation of food, nutrition, and hydration issues in long-term care and agriculture education for university students.
Dr. Jamie Seabrook is a Professor in the Department of Epidemiology and Biostatistics at Western University, with cross-appointments in the Department of Paediatrics and the Brescia School of Food and Nutritional Sciences. Dr. Seabrook is also a Scientist with the Children's Health Research Institute, the Lawson Research Institute, and the London Health Sciences Centre Research Institute. He received the Award for Excellence in Research at Brescia University College at Western University in 2019. Dr. Seabrook’s research focuses on the social and environmental determinants of child health disparities, the developmental origins of health and disease, and youth substance use.
