Asst. Prof. Dr. Bootsrapa Leelawat is currently a lecturer
at the Department of Food Science and Technology, Faculty of Science and
Technology, Thammasat University, Thailand, where she has served since 1994.
She earned her Ph.D. in Agricultural Engineering from Texas A&M University,
USA (2000), after obtaining an M.Sc. (1993) and a B.Sc. (1990) in Food Technology from
Chulalongkorn University, Bangkok. Her research interests focus on food
rheology, food process engineering, and cereal product technology, with recent
emphasis on plant-based chicken meat development, innovative starch
applications, and functional food innovations. Dr. Leelawat has received
several international awards, including a silver medal at ITEX 2019, gold
medals at ITEX 2023 for gluten-free and soy-free plant-based chicken meat and
for healthy quinoa roti with condensed milk gel, and a gold medal at ITEX 2024
for imitating cocoa powder from fermented jackfruit seeds. She has secured
multiple research grants from the National Research Council of Thailand,
Thailand Science Research and Innovation, NSTDA, and ARDA. With numerous
international publications and conference contributions, she actively advances
sustainable food innovation and remains engaged in professional research
communities.
