Giacomo
Di Matteo received his M.Sc. from D’Annunzio University of Chieti–Pescara in
2019 and his Ph.D. from Sapienza University of Rome in 2022. He is now a
Post Doctoral Researcher at the Department of Chemistry and Technology of Drugs, Faculty of Pharmacy and Medicine, Sapienza University of Rome.
His research activity is focused on the study of food matrices and edible
plants carried out using Nuclear Magnetic Resonance (NMR) methodologies and
High-Performance Liquid Chromatography (HPLC) analysis.
Luisa Mannina is currently working as a Full Professor at the Department of Chemistry and Technology of Drugs, Sapienza University of Rome, Rome, Italy. Her primary area of study is the metabolomic approach through the High-Field NMR Spectroscopy applied to foodstuffs with a focus on olive oils. However she also worked on the chemical characterization of many plants and on the structural identification of compounds by NMR.
