Dr. Ana Malintzin González-Martin is a lecturer at the Departamento de Promoción, Preservación y Desarrollo de la Salud at the Centro Universitario del Sur of the Universidad de Guadalajara, where she has worked since 2019. She earned a BSc in Nutrition from the Universidad del Valle de México, campus Mexicali, in 2015. She then completed a MSc in Ciencia del Comportamiento con Orientación en Alimentación y Nutrición at the Universidad de Guadalajara, receiving her degree in 2019. Most recently, she obtained her Doctorate in Ciencia del Comportamiento con Orientación en Alimentación y Nutrición at the same university, successfully defending her  dissertation in 2025. Professional Experience: Quality Supervisor, Comedores de Hospitalidad Saludables S.A. de C.V. (2016 –2017). Public Health Nutritionist, Comedores de Hospitalidad Saludables S.A. de C.V. (2016), Clinical Nutritionist, Clínica Médica del Deporte (2015-2016). Research Interests: Human nutrition, particularly in the promotion of healthy behaviors and the development of disordered eating patterns. She is also interested in physical activity, anthropometry, and body composition, with a current focus on aging. Luis Alexis Hernández Palma is a Research Professor at the Centro Universitario del Sur of the Universidad de Guadalajara.He earned a Bachelor's degree in Nutrition from the Universidad Autónoma de Ciudad Juárez in 2013, and both a Master's and a PhD in Molecular Biology in Medicine from the Universidad de Guadalajara in 2017 and 2019, respectively.He has worked as a private practice nutritionist for 12 years, a university professor for 10 years, and a researcher for 6 years.His current and past research interests include food security, diet therapy and immunonutrition across the life course, physical activity and nutrition, and eating behavior.He is a member of the Sociedad Latinoamericana de Nutrición, Colegio Mexicano de Nutriólogos, and Colegio de Nutriólogos de Jalisco. In 2021, he received the Chihuahua Youth Award (Premio de la Juventud Chihuahua) for Academic Distinction.

Nicoletta Righini is a full-time research professor at the Instituto de Investigaciones en Comportamiento Alimentario y Nutrición (IICAN) of the Universidad de Guadalajara. She currently serves as Secretary of IICAN. Her research interests include eating behavior, nutritional ecology, the effects of diet on gut microbiota, and comprehensive health across different stages of life, in both humans and animals. She has been a member of the Sistema Nacional de Investigadoras e Investigadores (SNII Level 1) since 2018.She earned her Bachelor’s degree in Natural Sciences from the University of Florence, Italy; a Master’s degree in Ecology from the Instituto de Ecología, A.C. (INECOL) in Xalapa, Veracruz, Mexico; and a PhD in Biological Anthropology from the University of Illinois at Urbana Champaign. She held two postdoctoral research appointments in Mexico. She is the author of various publications in indexed international journals, book chapters published by recognized publishers, and science outreach articles. Her work has been widely cited (over 2,000 citations collectively). She teaches undergraduate and graduate courses. She serves as Associate Editor for several scientific journals, including PLOS ONE, Journal of Applied Animal Research, Eduscientia – Divulgación de la ciencia educativa, and Acta Zoológica Lilloana. She is also the founder and Editor-in-Chief of the Journal of Behavior and Feeding, an open-access scientific journal from the Universidad de Guadalajara.
