Prof. Dr. Hengyi Xu received his B.Sc. degree in bioengineering from Hebei University of Science and Technology in 2004, his M.Sc. degree in microbiology from Nanchang University in 2007, and his Ph.D. in food Science and engineering from Nanchang University in 2010. He is currently a full professor at State Key Laboratory of Food Science and Resources, Nanchang University. His research interests mainly focus on microbiology, food biotechnology, food safety, nutrition, and food hygiene.
