Prof. Fan Xie currently works as an Associate Professor and Master's Supervisor at the School of Health Science and Engineering, University of Shanghai for Science and Technology. He graduated from Shanghai Jiao Tong University in 2019 with a Ph.D. in Biomedical Engineering and completed a joint Ph.D. program in Food Science at Washington State University, USA. He has been engaged in research on the interaction between food nutritional components and food processing for a long time. His main research directions are interactions between food nutritional components, functional food development and food processing.
