Ana María Chaux-Gutiérrez graduated from the Universidad de Antioquia in the field of Food Engineering in 2011. Afterward, she completed her Masters (2013–2015) and Ph.D. (2015–2019) degrees in Food Engineering and Food Science at the Universidade Estadual Paulista Júlio de Mesquita Filho. From 2020 to 2022, she worked as a Postdoctoral Fellow at the Universidad de Antioquia. Ana María Chaux-Gutiérrez is currently a postdoctoral researcher at the Department of Material Science, São Paulo State University. Her career has been focused on the research and development of food products, with a special emphasis on the encapsulation of bioactive compounds and the analysis of their physicochemical and rheological properties.
