Author Biographies

Dr. Maryuri T. Nuñez de González is a Research Specialist at the Cooperative Agricultural Research Center, College of Agriculture, Food, and Natural Resources, at Prairie View A&M University. Her research interests include the development of functional and healthier foods, value-added food products, food safety, and food quality. She has received several awards and recognitions including, the Phi Kappa Phi Honor Society and the Gamma Sigma Delta Honor Society of Agriculture. She earned her B.Sc. in Agro-Industrial Engineering from Universidad Nacional Experimental de Los Llanos Occidentales "Ezequiel Zamora", her M.Sc. in Food Engineering from Universidad de Oriente, and her Ph.D. in Food Science and Technology from Texas A&M University. Prior to her current position, Dr. Nuñez was a Professor at the Food Technology Department, Universidad de Oriente, Venezuela.
