Aikaterini Kandyliari is a member of the Laboratory Teaching
Staff of Food Chemistry and Human Nutrition of the Department of Food Science
and Human Nutrition at the Agricultural University of Athens, Greece. She
obtained her BSc in Chemistry from the National and Kapodistrian University of
Athens (2015) and her PhD in Food Chemistry from the Agricultural University of
Athens (2020). She was a visiting researcher at Yale University, School of Public Health (2019) and a Post-Doctoral Researcher at the Department of Food
Science and Nutrition, University of Aegean in 2021–2022. Her research
interests focus on the nutritional content of foods and food by-products,
bioavailability and bioactivity of food ingredients in vitro and in vivo,
nutritional value of plant and animal derived by-products, and utilization of
by-products to produce innovative functional foods.
Olga Malisova is an Assistant Professor at the Department of
Food Science and Technology, University of Patras, Agrinio, Greece. She earned
her B.Sc. in Food Science and Technology, an M.Sc. in Food Science and
Human Nutrition, and a Ph.D. in Human Nutrition, from
the Agricultural University of Athens. Her expertise lies in Nutrition,
particularly in the link between diet and health. Her research interests focus
on the Assessment of hydration and dietary behavior in the general population
and vulnerable population groups, the Bioavailability of food components, the
Mediterranean Diet, Food insecurity and Food and nutrition policies.
Antonios E. Koutelidakis earned his BS from the Department of Food Science and Technology of the Agricultural University of Athens and his PhD and MS in Human Nutrition from the same department. His scientific articles have been published in Greek and international journals and books (10 Greek and 70 international journals, 10 chapters in international scientific books, 5 university module books) and have been announced in Greek and international scientific conferences (35 oral and 55 poster presentations). Since 2007, he has participated in 10 Greek and European research programs. He has attended 12 Greek and international seminars in the area of Food Science and Nutrition. He is a member of the editorial team and reviewer of various scientific journals participates in various research projects related to nutrition and functional foods and has been the supervisor of numerous graduate studies and research projects. He is the Director of the master's program "Nutrition, Well-being and Public Health", the Departmental Head of Internship and a member of the Board of Directors of the Panhellenic Nutrition Society. He was a member of the Bioethics and Research Ethics Committee of the University of the Aegean, a member of the Board of Directors of the Geotechnical Chamber of Greece and a member of the National Sectoral Scientific Council for Agricultural Technology and Nutrition of the Ministry of Development and Investments.
