Dr Anastasia Fountouli is a Lecturer at the Department of Food Science and Nutrition, University of Thessaly (Volos, Greece). She holds a BSc (Hons) in Agriculture, Crop Production and Rural Environment from the University of Thessaly, an MSc in Organic Food and Food Production Systems from Newcastle University (England, UK), and she earned her PhD in Biological Sciences from the Department of Plant & Soil at the University of Aberdeen (Scotland, UK). At the University of Thessaly, she is lecturing in: i) Apiculture, ii) Phytopathology and Postharvest Management of Fruits and Vegetables. Additionally, she is a visiting lecturer for the English-taught MSc programme, Global Innovation and Sustainability in the Food Industry and Nutrition at the Food Science and Nutrition Department of the University of the Aegean (Mytilene, Greece). Dr. Fountouli is currently conducting postdoctoral research at Democritus University (Orestiada, Greece), focusing on consumer behaviour regarding entomophagy for both human and animal consumption, as well as the integration of edible insects into the Greek food industry.
