Prof. Dr. Jorge Luis Chávez-Servín is a Profesor Investigador in Nutrition and Food Science at the Autonomous University of Queretaro. He completed his BS.c. studies in Nutrition and Food Sciences at the Ibero-American University (1998), Diploma of Advanced Studies in Nutrition and Food Science at the University of Barcelona (2003), and Ph.D. studies in Nutrition and Food Science at the University of Barcelona (2007). He is the leader of the Consolidated Academic Body (UAQ-CA-140) “Biomedical Research and Functional Foods”. His areas of interest include Food Science & Technology, Nutrition & Dietetics, Chemistry, Plant Sciences and Agriculture.
Prof. Dr. Karina de la Torre-Carbotis a Professor and a Researcher in Nutrition and Food Science at the Autonomous University of Queretaro. She completed her BS.c. studies in Nutrition and Food Science at the Iberoamerican University (1999), MS.c. studies in Nutrition and Food Science at the University of Barcelona (2003), and Ph.D. studies in Medicines, Food, and Health at the University of Barcelona (2007). She recently led the Founding Research Member of the Network for the Treatment and Prevention of Obesity approved by the National Council of Science and Technology (Conacyt). Her areas of interest include Breastfeeding and Milk Composition, Nutrition and Cardiovascular Risk, and Preventive Nutrition.

Prof. Dr. Roberto Augusto Ferriz-Martínez is a Professor and a Researcher in Nutrition and Food Science at the Autonomous University of Queretaro. He completed his BS.c. studies in Chemist at the Technological Institute of Sonora (ITSON) (1998), MS.c. studies in Food Science and Technology at the Autonomous University of Querétaro (UAQ) (2004), and Ph.D. studies in Biological Sciences at the Autonomous University of Querétaro (UAQ) (2014). He recently led the Research Project derived from FONDEC (Evaluation of the prebiotic effect of Sargassum fluitans polysaccharides on fermentation and microbial diversity from an in vitro model), FONDEC research project (Determination of the prebiotic activity of sargassum polysaccharides in an in vitro fermentation model) and PRODEP research project (Characterization and antiproliferative effect of a lyophilized extract of barley grass (Hordeum vulgare) in in vitro cancer models). His areas of interest include LGAC focuses on basic scientific research, the Study of the processes involved in the etiopathogenesis of various diseases and health problems, the Study of compounds of natural and food origin with bioactive potential, the Development of new products, and Food preservation.
