Author Biographies

Luisa Fernanda Duque Buitrago received her doctoral degree in Science from the Instituto Politécnico Nacional, Mexico, in 2023 and is now a postdoctoral fellow in the Food Engineering School at Universidad del Valle, Colombia. Her research topics mainly include the agri-food industry, emphasizing biotechnology applied to functional foods, food biochemistry, agro-industrial by-products, and traditional foods.
