Prof. Dr. Neith Pacheco is a Doctor of macromolecular materials and biotechnology at Centro de Investigación y Asistencia en Tecnología y Diseño del Estado de Jalisco. She has degrees from Claude Bernard Lyon 1 University in France and the Metropolitan Autonomous University in Mexico. She has been recognized by the National System of Researchers (SNI), which is an organization that recognizes the work of people dedicated to research, as a National Researcher since 2012 at level II. She is responsible for the Food Safety and Traceability Laboratory at CIATEJ, Yucatán unit. She has over 12 years of experience in food safety and quality and food biotechnology research and innovation, specifically regarding biomolecule characterization, biopolymers, and phytochemicals and sensorial analysis for new food inventions. She works in developing chromatography techniques for bioactive compound identification and quantification, including sustainable innovation using byproduct materials. Currently, she works with biopolymers and bioactive compounds to produce functional and nutritional foods using underutilized regional products.

Prof. Dr. Angélica Román-Guerrero holds a Ph.D. in Biotechnology from the Universidad Autónoma Metropolitana (UAM), Iztapalapa Campus. She also received the University Merit Medal awarded by the UAM to the best averages of the generation. She also has a degree in chemical engineering and has completed postgraduate studies at the level of Specialization in Biotechnology and holds a master's degree in biotechnology from the same university. She is currently assigned to the Biotechnology Department of the Biological and Health Sciences Division in the Food area. She has belonged to the National System of Researchers since 2013 and is currently recognized at Level I. She has been recognized as a Desirable Profile (PRODEP) since 2013. Her thesis and subsequent research are related to the obtaining of bioactive compounds by conventional techniques and emerging technologies such as ultrasound, microwaves and supercritical fluids, as well as the protection of compounds susceptible to degradation through the elaboration of emulsions, nanoemulsions, and microencapsulation systems, and the physicochemical characterization of molecules with surface activity for use as emulsifying and/or stabilizing agents and their application in food systems. As a researcher, she has addressed the study of biopolymeric materials and developed research lines, among which are the obtaining and protection of bioactive compounds obtained from various plant materials.
Prof. Dr. Teresa Ayora-Talavera is a researcher at the Center for Research and Assistance in Technology and Design of the State of Jalisco AC. She has a Ph.D. in biotechnology from the Center for Research and Advanced Studies (2002). Currently, she is interested in the area of natural products, and her work is in the area of food development and the use of agro-industrial waste as a source of biomolecules for food additives for the production of functional foods, as well as and functionalized and biodegradable packages. She is a member of the National Researchers System of Mexico.

Prof. Dr. Juan C. Cuevas-Bernardino has a Ph.D. in biotechnology from the Metropolitan Autonomous University (Mexico) in 2017. Currently, he is an Investigador por México of the Secretaría de Ciencia, Humanidades, Tecnología e Innovación (Secihti) in the Southeast Unit at the Center for Research and Assistance in Technology and Design of the State of Jalisco (CIATEJ) in Yucatan, Mexico. His research interests are focused on the characterization of macromolecules by chromatography, rheology, calorimetry, FTIR spectroscopy, X-Ray diffraction, microscopy, and absorption dynamics. He also works on the analysis of emulsions and nanoemulsions and the development of novel delivery systems. He currently works on the rheology of foods and the development of sustainable edible films. He has been recognized by the National System of Researchers (SNII), which is an organization in México that recognizes the work of researchers dedicated to producing scientific knowledge and technology, as a National Researcher at level 1.
