Dr. Emma Sherman is a team leader of Flavoromics in the Biological Chemistry and Bioactives group of Plant and Food Research Ltd. (PFR). Her research focuses on understanding flavor using flavoromics approaches where she integrates untargeted chemistry data and sensory evaluations to generate novel hypotheses around the contribution of different compounds to food and beverage sensory properties. Dr. Sherman is based in Auckland, New Zealand, undertaking novel research into fresh fruit flavor and following up on new hypotheses generated from past research, particularly around wine flavor and quality.
