Author Biographies

Dr. Luis Fernando Méndez López is a Professor of Immunology at the School of Public Health and Nutrition, Universidad Autónoma de Nuevo León. He earned his Ph.D. in Pharmaceutical Sciences at the same institution, specializing in the discovery of natural anticancer compounds within the School of Chemistry. Dr. Méndez has held notable academic and research positions, including serving as a Research Associate at the Center for Complexity Sciences, Universidad Nacional Autónoma de México, where he developed dynamic models to investigate cancer gene regulatory networks. Additionally, he was a visiting professor at the University of Cagliari, Italy, focusing on cancer and plant metabolomics. Dr. Méndez is a Level I Member of the National System of Researchers (SNI) and a Full Member of Sigma Xi, The Scientific Research Honor Society. He holds editorial positions as Review Editor for Cancer Metabolism in Frontiers in Oncology and as Editor-in-Chief of Revista de Salud Pública y Nutrición. Dr. Méndez employs an integrative theoretical–experimental approach to investigating the links between cellular aging, inflammation, and the development of chronic diseases. His research also explores the health benefits of bioactive compounds derived from edible and medicinal plants.
Jose Luis Gonzalez Llerena is a professor and researcher at the School of Public Health and Nutrition, Universidad Autónoma de Nuevo León (UANL). He holds a Bachelor’s degree in Nutrition from UANL, a Master’s degree in Pharmaceutical Sciences from the Faculty of Chemistry, and is currently pursuing a PhD in Pharmaceutical Sciences. His research focuses on cellular reprogramming, employing cell culture and molecular biology techniques to explore compounds' pharmacological properties and mechanisms of action derived from natural products. He has extensive experience in this field and contributed to some scientific publications. In addition to his research, he teaches Organic Chemistry at the Faculty of Chemistry and Metabolic Biochemistry at the School of Public Health and Nutrition, bringing his expertise in pharmacology, biochemistry, and natural products to the classroom.
Dr. Vázquez-Rodríguez is a full professor at Universidad Autónoma de Nuevo León, Facultad de Salud Pública y Nutrición. His educational background is in Biological Sciences, in which he earned his doctorate, with an emphasis on Food Science. He has more than 10 years of experience in teaching bachelor's and master's degrees in Nutritional and Food Science. He has been a member of Asociación Mexicana de Ciencia de Alimentos (AMECA A.C.) and Sigma Xi since 2023.
