Prof. Gregorio Peron is currently Associate Professor of Food Chemistry at the Department of Molecular and Translational Medicine of the University of Brescia (Italy). He earned a Master's Degree in Medicinal Chemistry at the University of Padova in 2014 and a Ph.D. in Pharmaceutical Sciences at the same University in 2018. His research focuses on metabolomics applications in nutritional and nutraceutical studies, with a particular interest in characterizing lesser-known medicinal and edible plants to identify new natural sources of bioactive compounds. He also investigates innovative approaches for the reuse and valorization of agri-food byproducts through microbial fermentation.
