Prof. Dr. Elena Carrasco graduated with a BSc in Food Science and Technology from the University of Cordoba in 2001. She obtained a University Expert degree in Advanced Methods of Applied Statistics from the National Distance Education University in 2006. In 2007 she obtained a doctorate in Food Microbiology from the University of Cordoba. She is currently working as a full professor in the Nutrition and Food Science area of the Department of Food Science and Technology of the University of Cordoba. She has been a researcher at the Andalusian Technological Centre for the Meat Sector (TEICA) since 2011. Her main research activities have focused on the development and application of microbial predictive models and microbial risk assessment in vegetable and meat products, shelf-life establishment, and food quality.
