Author Biographies

Ossama Dimassi is an Associate Professor responsible for educational quality assurance at the American University of Europe. He holds a Master’s degree in Animal Nutrition and Physiology from the American University of Beirut and a Doctorate in Agricultural Sciences with a minor in Breeding from the University of Hohenheim. With extensive experience in teaching food science and technology, he covers a range of courses, including Food Chemistry, Food Analysis, Food Microbiology, Food Preservation, Food Sanitation, and Food Biotechnology. Ossama Dimassi has extensive academic experience, having served as a faculty member in various institutions before joining his current university. He also brings valuable hands-on experience in the food industry and food service as both a manager and a consultant.

Shady Hamadeh is a Professor of Animal Sciences and a Co-Founder and Director of the Environment and Sustainable Development Unit (ESDU) at the American University of Beirut (AUB). He earned his Bachelor of Sciences in Agriculture and Ingénieur Agricole Diploma and Master of Sciences in Animal Sciences from the American University of Beirut. He then completed his Ph.D. studies in Animal Physiology at New Mexico State University, USA. Shady Hamadeh’s research interests include optimization strategies for small ruminant production in semi-arid areas, sustainable farming systems, rural livelihoods and food security in semi-arid areas, livestock/environment interactions with emphasis on water and heat stress, and urban agriculture.
