Prof. Xiaodong Xia currently works in the School of Food Science and Technology, Dalian Polytechnic University. He is the PI of the Food Microbes and Health Research Group in the State Key Laboratory of Marine Food Processing and Safety Control and National Engineering Research Center of Seafood. His research focuses on three areas: one is to decipher the interaction among food, gut microbiota and health; another area is the health benefits and antimicrobial potential of natural compounds and related mechanisms; and the third relates to stress tolerance in foodborne pathogens and microbial control technologies. He has published more than 150 peer-reviewed articles in journals including iMeta, the Journal of Advanced Research, and Cancer Research. He serves as associate editor or an editorial board member for Foods, Frontiers in Microbiology and Food Research International.
