Prof. Dr. Valentina Canuti is a researcher at the Department of Agricultural, Food, Environmental and Forestry Sciences and Technologies (DAGRI), University of Florence. Her research topics focus on the influence of vinification practices on wine composition and quality. This includes studies to determine the influences of different winemaking techniques, the use of coadjutants for color, and the tartaric stabilization of wines. She has been involved in sustainability research, regarding the impact of different winemaking protocols in organic, biodynamic, and conventional wineries on the grape and wine quality from a chemical and sensory point of view. Most of the research is conducted on the Sangiovese grape and wine.
