Dr. Silvia Luna-Suárez is a Researcher Professor at the Instituto Politécnico Nacional, CIBA-IPN, México. She received her master’s degree from the CINVESTAV-México and her Ph.D. in Biotechnology from the CINVESTAV-Irapuato. She is a biochemistry engineer at the Instituto Tecnológico de Jiquilpan, Jiquilpan, Michoacán, and a member of the Protein Society and Biotechnology and Biochemistry Mexican Society. She works on food technology and biotechnology, functional foods, proteins and bioactive peptides. Her research interests are in protein engineering, bioactive peptides, comestible films and expression of therapeutic interest proteins.
