Prof. Dr. Peng Lei is an Associate Professor and Master's Supervisor at Nanjing Tech University. He received his bachelor's degree in Engineering from the Department of Biological and Chemical Engineering of the Guangxi University of Science and Technology and a doctorate degree in Engineering from the School of Biological and Pharmaceutical Engineering of Nanjing Tech University (Master–Doctor program). From June 2017 to October 2019, he served as an Assistant Researcher at the Nanjing Institute of Comprehensive Utilization of Wild Plants. In 2019, he joined the School of Food and Light Industry, Nanjing Tech University, as a lecturer. In 2020, he won the 21st China Patent Silver Award and was promoted to Associate Professor. His research pertains to the following topics: 1. Agricultural microbiology: this involves the study of the growth-promoting and stress-resistant effects of rhizosphere growth-promoting microorganisms on crops and their symbiotic mechanism with plants and the study of the molecular mechanisms of signal transduction, gene expression, etc., formed by microbial extracellular secretions in helping crops resist abiotic stress. 2. Food biotechnology: this includes exploring natural functional polysaccharides, especially microbial polysaccharides, studying the application value of natural polysaccharides in the fields of food and daily chemicals, and developing natural polysaccharide-based products.
