Prof. Monica Dinu received her MS in Nutritional Sciences and Ph.D. in Biomedical Sciences from the University of Florence in 2014 and 2017, respectively. She is currently an Assistant Professor of Human Nutrition at the Department of Experimental and Clinical Medicine, University of Florence. She is the coordinator of the Young Working Group of the Italian Society of Human Nutrition (SINU) and a co-owner of the MEDI-LITE patent, a software for calculating adherence to the Mediterranean diet. Prof. Monica Dinu's research focuses on dietary interventions to assess the impact of different dietary patterns on health outcomes, with a particular interest in chrononutrition. Since 2023, she has been involved in the “PROMENADE” project, funded by the European Union - NextGenerationEU, involving three Italian universities. The project aims to evaluate the role of ultra-processed foods in modulating the effects of the Mediterranean diet on both human and planetary health.

Prof. Guido Invernizzi is an Associate Professor in the Department of Veterinary Medicine and Animal Sciences (DIVAS) at the University of Milan. He received his Ph.D. from the University of Milan Faculty of Veterinary Medicine in 2008 and served as a postdoctoral researcher from 2012 to 2015. He then worked as an Assistant Professor at the Universita Telematica San Raffaele in Rome and the University of Milan. Prof. Guido Invernizzi is a member of the Italian Association of Animal Production (ASPA), the European Federation of Animal Science, and the American Dairy Science Association.
Prof. Dr. Francesco Sofi is an Associate Professor of Food Science and Clinical Nutrition at the Department of Experimental and Clinical Medicine of the School of Human Health Sciences of the University of Florence. He is the Director of the Unit of Clinical Nutrition of the University Hospital of Careggi, in Florence. In 2002, he earned a degree in Medicine, and in 2006, he got his Ph.D. in Clinical Pathophysiology and Ageing at the University of Florence. He is also the President of the Master’s Degree in Food Science of the University of Florence and serves as the director of the Interdepartmental Centre for Research on Food and Nutrition of the University of Florence. He is a member of the National Committee for Health Research of the Minister of Health, a member board of the Italian Society of Human Nutrition (SINU), and a member of the Italian Society for the Study of Atherosclerosis (SISA), European Society of Cardiology (ESC), and the European Association for Cardiovascular Prevention and Rehabilitation (EACPR).
