Prof. Dr. Hongcheng Zhang graduated from South China University of Technology with a doctorate in food science in July 1998. He worked at Harbin Grain Research Institute, Beijing Customs, and the Institute of Apicultural Research of the Chinese Academy of Agricultural Sciences, engaged in food science research on bee products, grain food development, and risk management. Currently, he is a researcher at the Institute of Apicultural Research of the Chinese Academy of Agricultural Sciences and is mainly engaged in the processing and preservation of bee products and the research and development of functional foods, with research directions in functional foods, bioactive substances, and food biotechnology. He has published 16 papers as the first or corresponding author in Evidence-Based Complementary and Alternative Medicine, Journal of Agricultural and Food Chemistry, Journal of the Science of Food and Agriculture, Journal of Apicultural Research, Journal of Food Composition and Analysis, Food Research International, and Food Chemistry.
